Oven-Baked Cod With Dill and Lemon image

Healthy, light and delicious, this oven-baked cod with dill and lemon is on the table in under 25 minutes! Combined with vibrant, tasty vegetables, it's a simple cod recipe that you and your family will love, perfect for a busy weeknight dinner!

Cooking spray (to grease sheet pan)
1.5 tablespoons olive oil (divided)
1 teaspoon salt (divided)
1 teaspoon freshly ground black pepper (divided)
1 pound skinless and boneless cod fillets (4 cod fillets (each around 4 to 5 ounces))
1/2 teaspoon dried dill (dill weed)
2 bell peppers (cut into bite-sized pieces)
1/2 pound broccoli florets
1 lemon (juiced (plus slices or wedges of lemon to serve with your meal, optional))
Tartar sauce (for serving (optional))

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Spray a large sheet pan with cooking spray or grease with a little cooking oil and set aside.
  • Pat cod fillets dry of any excess moisture with paper towels, then place the cod fillets onto the prepared sheet pan.
  • Sprinkle each fillet with salt, pepper (use 1/2 teaspoon each of salt and black pepper between all four fillets) and dill. Drizzle with 1/2 tablespoon of olive oil. Place lemon slices on top of cod.
  • In a bowl (or you can do directly on the sheet pan), toss bell peppers and broccoli florets with remaining 1/2 teaspoon of salt, remaining 1/2 teaspoon of black pepper, and remaining 1 tablespoon of olive oil. Spread out onto sheet pan around cod.
  • Bake for 16 to 18 minutes or until cod is cooked through, is opaque and flakes easily with a fork (insert the tines of a fork into the thickest part of the fish at an angle and twist gently; it should flake easily).Note: Cook time of the cod may vary, depending on the thickness of your fillets.
  • Serve the cod and veggies, then squeeze fresh lemon juice (to taste) over the cod. This meal is also delicious served with tartar sauce and extra lemon slices or wedges. Enjoy!

4 cod fillets
3/4 pound baby gold potatoes (cut in quarters)
1 zucchini (sliced)
2 tablespoons olive oil
2 tablespoons lemon juice (freshly squeezed)
1 lemon (sliced)
1 teaspoon minced garlic
1/8 teaspoon salt
1/8 teaspoon pepper
3 tablespoons dill (chopped)

Steps:

  • Preheat oven to 400 F.
  • Coat a 9 x 13 inch baking dish with cooking spray.
  • In a small mixing bowl, combine olive oil, lemon juice, garlic, salt, pepper, and dill.
  • Place quartered potatoes in baking dish; cover with half of the olive oil lemon mixture. Microwave on high for 5 minutes. Remove from microwave.
  • Place the cod and sliced zucchini in the baking dish with the potatoes. Coat with the remaining olive oil lemon mixture. Top with lemon slices.
  • Bake for 12 to 14 minutes, until fish is fully cooked and flakes easily with a fork. Garnish with additional fresh dill and serve.

¼ cup lemon juice
1 tablespoon olive oil
4 teaspoons Dijon mustard
1-½ tablespoons Spice Islands® Dill Weed
1 teaspoon Spice Islands® Garlic Powder
½ teaspoon Spice Islands® Lemon Pepper Seasoning
¼ teaspoon sugar
4 pieces (6 ounces, each) cod fillets

Steps:

  • Combine all ingredients except cod in a large resealable plastic bag and mix. Add cod. Seal and marinate in refrigerator for 20 minutes. Remove fish from bag: discard marinade. Place fish on a broiler pan or grill pan coated with cooking spray. Broil or grill for 4 minutes on each side or until fish flakes easily when tested with a fork.

This is a VERY simple dish with no pans to clean...gotta love it! It's also a very healthy choice, and if you happen to be on the Medifast plan, it fits perfectly into that. The recipe as written makes a lot of sauce, which would be great to serve over rice (if not on Medifast). I served it with garlic wilted spinach, using a garlic-infused olive oil. If you don't have that, feel free to add a finely chopped clove of garlic to the oil while it's gently warming, making certain not to brown the garlic. Browned garlic = bitter garlic!

9 ounces cod fish fillets
1 tablespoon fresh dill, separated
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
3 lemon slices
1 tablespoon Dijon mustard
2 tablespoons reduced-sodium fat-free chicken broth
1/8 teaspoon cornstarch
1 teaspoon fresh lemon juice
1 teaspoon garlic-infused olive oil
5 ounces Baby Spinach
1/4 teaspoon lemon zest
1/4 teaspoon kosher salt
1 Peppadew pepper, sliced (optional)

Steps:

  • For the cod: Preheat oven to 400.
  • Place the cod on a large piece of foil. Lightly season with salt and pepper, sprinkle with 1/4 tablespoon dill, and place lemon slices on top. Mix the mustard, broth, cornstarch, remaining dill and lemon juice in a small bowl (don't make it thick, just a light sauce), pour around the edges of the cod. Bring up the sides of the foil, seal the package well and place in the oven for 8 minutes. Open carefully, remove the fish, plate it and drizzle with the sauce from the foil pouch.
  • For the spinach: In a large pot, heat garlic oil over medium heat. Add spinach and lemon zest, toss to coat.
  • Turn off heat and put a lid on the pot. Set aside for 3 minutes.
  • Remove lid and once again toss the spinach. It should be bright green and just wilted. Season with salt and pepper. Plate with the cod and sprinkle with the chopped peppadew, if desired.

24 Ritz crackers, broken into crumbs about the size of peas
2 tablespoons herbs, fresh, minced (parsley, dill or basil, or a combination, divided use)
3 tablespoons mayonnaise
2 garlic cloves, minced
1 teaspoon lemon zest, finely grated
1 tablespoon lemon juice, fresh
2 lbs skinless cod fish fillets, 1/2 inch thick, pin bones removed, patted dry
salt & freshly ground black pepper
lemon wedge, for serving

Steps:

  • Adjust an oven rack to the middle position and preheat the oven to 450°F
  • Lightly grease a rimmed baking sheet with nonstick cooking spray; set aside.
  • In a medium bowl, combine the cracker crumbs and 1 tablespoon of the parsley, dill or basil; Set aside.
  • In a separate small bowl, combine the remaining 1 tablespoon parsley, dill or basil with the mayonnaise, garlic, and lemon zest and juice; Set aside.
  • Season the fish fillets with salt and pepper to taste.
  • Place on the baking sheet, spacing the pieces about ½ inch apart.
  • Brush the tops and sides of the fish with the mayonnaise mixture, then press the cracker crumbs into the mayonnaise.
  • Bake for 8 to 15 minutes, or until the crumbs are golden brown and the fish flakes apart when gently prodded with a paring knife.
  • If the cracker crumbs brown before the fish is cooked, cover the fish with aluminum foil.
  • Serve hot with the lemon wedges.

1/4 cup butter or 1/4 cup margarine, melted
2 tablespoons lemon juice
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon white pepper
paprika

Steps:

  • If fish fillets are large, cut into serving pieces.
  • Mix butter and lemon juice.
  • In another bowl, mix flour, salt and white pepper.
  • Dip fish into butter mixture; coat fish with flour mixture.
  • Place fish in ungreased square baking dish, 8x8x2 inches.
  • Pour remaining butter mixture over fish; sprinkle with paprika.
