4 teaspoons Dijon mustard
2 teaspoons grated lemon zest
1 garlic clove, minced
1/2 teaspoon salt
2 tablespoons canola oil
1-1/2 pounds sweet potatoes (about 3 medium), cut into 1/2-inch cubes
1 pound fresh Brussels sprouts (about 4 cups), quartered
4 boneless pork loin chops (6 ounces each)
Coarsely ground pepper, optional

Steps:

  • Preheat oven to 425°. In a large bowl, mix first 4 ingredients; gradually whisk in oil. Reserve 1 tablespoon mixture. Add vegetables to remaining mixture; toss to coat., Place pork chops and vegetables in a 15x10x1-in. pan coated with cooking spray. Brush chops with reserved mustard mixture. Roast 10 minutes., Turn chops and stir vegetables; roast until a thermometer inserted in pork reads 145° and vegetables are tender, 10-15 minutes longer. If desired, sprinkle with pepper. Let stand 5 minutes before serving.

 1 Lemon, zest grated
 3/4 Cup freshly squeezed lemon juice (4-6 lemons - but it only took 3 extra-large
lemons for me)
 Good Olive Oil
 2 Tablespoons minced Garlic (6 cloves)
 1 1/2 Tablespoons minced fresh Rosemary leaves
 1 Tablespoon chopped fresh Thyme leaves
 2 Teaspoons Dijon mustard
 2 Teaspoons Sea Salt
 3 Pork Tenderloins (about 1 pound each)
 Freshly ground black pepper

Steps:

  •  Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.  Preheat oven to 400.  Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper (maybe a bit less on the salt here!).  Heat 3 tablespoons olive oil in a large oven-proof sauté pan over medium-high heat.  Sear the pork tenderloins on all sides until golden brown. (About 2 minutes per side).  Place the sauté pan in the oven and roast the tenderloins for 10-15 minutes or until the meat registers 137 degrees at the thickest part. (It only took ours 10 minutes!)  Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. (We skipped this part entirely.)  Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done.  Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.  Cut up the red bell pepper and zucchini add olive oil, pepper and sea salt. Cook together with the pork.

1 (4-pound) pork loin
3 tablespoons grapeseed oil
1/4 cup Dijon mustard
1/2 cup Irvine Spices Roasted Garlic Pepper Seasoning
1/4 cup white wine
16 ounces prepared brown sauce or gravy
Salt and freshly ground black pepper
1 teaspoon very finely chopped rosemary leaves

Steps:

  • Early in the day, rinse pork loin to remove any unwanted smells and pat dry with paper toweling. In a large saute pan, heat the oil and sear the pork loin on all sides. Remove pork to a utility platter and coat liberally with mustard, then roll in Roasted Garlic Pepper Seasoning. Leave refrigerated for 2 hours.
  • Preheat oven to 350 degrees F.
  • Transfer pork to a covered roasting pan or a large saute pan with an oven safe handle, and roast covered in oven until fork tender, at least 45 minutes. (Remember to use oven mitts when removing the pan from oven.) Transfer pork to a utility platter and let rest in a warm place before slicing. Add white wine to the roasting pan and swirl to combine flavors with the juices in the pan. Place roasting pan over medium heat (or transfer to a small saucepan) on the stovetop and let reduce slightly. Add the prepared brown sauce to the roasting pan juices and wine. Cook the gravy for a few minutes to integrate flavors and to thicken. Season with salt and pepper and strain the sauce. Lay slices of pork loin on serving dish and spoon brown sauce over. Garnish with chopped rosemary.

3 tablespoons dijon mustard
2 teaspoons fresh thyme, finely chopped
2 teaspoons fresh rosemary, finely chopped
½ teaspoon kosher salt, plus more to taste
½ teaspoon ground black pepper, plus more to taste
1 ½ lb pork tenderloin
3 tablespoons olive oil, divided
2 bunches broccolini, woody stems removed
8 medium carrots, cute into ½-inch (1-cm) coins
2 tablespoons honey
1 lemon, cut into 4 wedges
fresh parsley, chopped, for garnish

Steps:

  • Preheat the oven to 375°F (190˚C).
  • In a small bowl, stir together the mustard, thyme, rosemary, salt, and pepper.
  • Dry the pork tenderloin thoroughly with paper towels, then season with salt and pepper.
  • Heat 2 tablespoons of olive oil in a square pan over medium-high heat. Add the tenderloin and cook, rotating 90˚ every 3-4 minutes, until golden brown all over (the tenderloin will not be cooked through at this point), about 12 minutes total. Remove the pan from the heat and use tongs to transfer the tenderloin to a cutting board.
  • Brush the mustard mixture evenly over the top and sides of the tenderloin.
  • Add the broccolini to the pan, and toss with the oil until coated evenly. Push the broccolini to the sides of the pan, just enough to make room for the tenderloin, then return the pork to the pan.
  • Transfer the pan to the oven and roast, tossing the broccolini halfway through cooking, until an instant-read thermometer inserted in the thickest part of the pork reads 160°F (70˚C) and the broccolini is tender, 23-25 minutes.
  • While the pork cooks, heat the remaining tablespoon of olive oil in a medium skillet over medium-high heat. Add the carrots, season with salt and pepper, and cook, tossing, until barely tender, about 6 minutes.
  • Drizzle with the honey and continue cooking, tossing often, until the honey is reduced to a thick glaze and the carrots are tender, 2 to 4 minutes more. Remove the skillet from the heat.
  • Transfer the square pan to a rack and let the pork and broccolini rest for 10 minutes. Place the tenderloin on a cutting board and cut into ½-inch (1-cm) thick slices.
  • Divide the pork and vegetables among 4 serving plates. Serve each with a lemon wedge and sprinkle with parsley.
