BUTTERED COD FISH RECIPE (VIDEO)
The BEST cod fish recipe! Cod seasoned and cooked in butter until flakey and so tender. The cod is ready in just 10 minutes!

Steps:
- Combine the ingredients for the seasoning in a small bowl.
- Cut cod into smaller pieces, if desired. Season all sides of the cod with the seasoning.
- Heat 2 Tbsp butter in a large skillet over medium-high heat. Once butter melts, add cod to skillet. Cook 2 minutes.
- Turn the heat down to medium. Gently flip the cod. Top with remaining butter and cook another 3-4 minutes.
- Butter will completely melt and the fish will cook. (Don't overcook the cod, it will become mushy and completely fall apart.)
- Drizzle cod with fresh lemon juice and herbs. Serve immediately.

COD WITH BROWN BUTTER LEMON SAUCE

- Cut the peels from the lemons, revealing the flesh. Cut the segments free from the membranes, then dice and place in a bowl. Squeeze any remaining juice from the membranes into the bowl. Set aside.
- Heat a large nonstick pan over medium-high heat. Add 4 tablespoons butter and begin to cook, stirring, until the butter begins to brown. Add the brioche, then reduce the heat to medium-low and cook, continually tossing and swirling the brioche until evenly toasted, about 4 minutes. Remove the croutons to a plate and let cool. Wipe out the pan.
- Sprinkle the fish with salt and pepper. Heat the same pan over medium-high heat. Add 4 tablespoons butter and the oil and begin to cook over the heat, stirring. Add the fish and cook, 2 to 3 minutes. Flip the fish and continue to cook, basting occasionally with the butter from the pan, another 2 to 3 minutes. Remove the fish to a plate. Wipe out the pan.
- Turn the pan to medium heat and add the remaining 4 tablespoons butter. Let melt, then add the capers and cook for 1 to 2 minutes. Continue to cook until the butter browns, then add the wine, lemon juice and segments and parsley. Swirl together. Spoon the sauce over the fish and garnish with the croutons.
LEMON DIJON COD SAUTE
Lemon Dijon Cod Saute is an easy recipe for fish in a creamy mustard sauce studded with olives and shallots and topped with tangy caramelized lemon slices!

Steps:
- Slice each lemon into 6 thin slices.
- Heat oil in large non-stick skillet over medium-high heat.
- Cook lemon slices until golden around edges, turning once; set aside.
- In same skillet cook shallots and green olives until shallots are just tender, about 3 minutes.
- Stir in wine and Dijon and cook 1 minute.
- Season cod with thyme, kosher salt and pepper and add to skillet. Arrange lemon slices on top of cod.
- Cook, covered, until fish is cooked through and flakes with a fork, about 5 minutes.
- Transfer cod to a serving dish and drizzle with sauce.

SALMON WITH LEMON-DIJON CAPER SAUCE
Steps:
- Heat oil in large skillet on medium-high heat. Add fish; cook 4 to 5 min. on each side or until fish flakes easily with fork. Remove fish from skillet. Discard any grease from skillet.
- Whisk flour, mustard and chicken stock until blended.
- Add capers and 1 Tbsp. garlic to skillet; cook and stir on medium heat 30 sec. Stir in lemon juice; cook 1 min., stirring frequently. Add chicken stock mixture; mix well. Bring to boil, stirring frequently. Continue to cook and stir 1 to 2 min. or until thickened. Remove from heat. Stir in parsley.
- Heat remaining oil in medium skillet on medium-high heat. Add remaining garlic; cook and stir 1 min. Add spinach; cook and stir 2 to 3 min. or just until wilted.
- Serve spinach topped with salmon and caper sauce.

- Combine the flour, salt and pepper. Coat the fish in the seasoned flour, shaking off the excess flour. Heat half the butter to foaming over medium high heat in a heavy based pan.
- Cook the fish to your liking and remove to serving plates.
- Add the remaining butter, juice, zest, capers and parsley. Heat for a minute then serve over the fish sharing the capers between the plates.

This comes from a Costco Cod package from Copper River Seafoods in Alaska. We like to bake our fish, so this is one of our favorites. Most ingredients are on hand like; mayonnaise, Dijon, lemon juice, parmesan, etc. and so low in fat!

- Preheat oven to 350°F and lightly grease a baking sheet.
- In a small bowl, mix mayonnaise, mustard, horseradish and lemon juice; stir in parmesan cheese. and bread crumbs.

- Preheat an oven to 350 degrees F (175 degrees C).
- Squeeze 3 tablespoons juice from lemons; reserve squeezed lemon halves. Combine the lemon juice, parsley, mustard, garlic, oil, rosemary, pepper, and salt in a small bowl; blend well.
