LEMONY RHUBARB PUDDING

Rhubarb season is around the corner! This recipe is a great combo of sweet and tangy! I usually double the sauce ingredients and I ALWAYS omit the gross raisins! :o)! BTW, 1/64 tsp=a pinch! :o))!

1 cup all-purpose flour
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups diced rhubarb
1/4 cup raisins
1/2 cup milk
1 egg
1/2 teaspoon vanilla
1 cup boiling water
1/4 cup packed brown sugar
1/4 cup butter
1 tablespoon lemon juice
1 teaspoon grated fresh lemon rind
1/16 teaspoon nutmeg

Steps:

  • For pudding, mix together flour, sugar, baking powder, baking soda and salt in a large bowl.
  • Stir in rhubarb and raisins.
  • In separate bowl, beat together milk, egg and vanilla just until combined.
  • Stir into flour mixture.
  • Place batter into a greased 8 inch square baking dish.
  • For sauce, stir sugar and butter into boiling water until dissolved and melted.
  • Add lemon juice, lemon rind and nutmeg.
  • Pour gently over batter.
  • Bake in preheated 350F degree (180C) oven for 30-35 minutes or until pudding is golden brown and firm to the touch.

I found this recipe from a website ages ago, but it is all faded I can't see the link anymore. Been making this pudding for years with great success....which explains the faded website link. If you are a fan of lemons, I think you will like this unique sweet.

4 eggs, separated
1 cup caster sugar
50 g butter, softened
3 lemons, zest of
1/3 cup self-raising flour, sifted
3 lemons juice
1 1/2 cups milk

Steps:

  • Preheat the oven to 160°C.
  • Wash the lemons well, remove the zest from two and then juice all three.
  • Separate eggs.
  • Whisk the egg whites until soft peaks form.
  • Add half the caster sugar, a little at a time, until it is fully incorporated and the mixture is glossy.
  • Cream the butter with the rest of the caster sugar and the lemon zest.
  • Add the egg yolks, then the flour, lemon juice and milk.
  • Mix thoroughly.
  • Add a little of the meringue mix, then gently fold in the remainder.
  • Tip into a pudding basin.
  • Stand the basin in a baking dish, then half fill the baking dish with luke-warm water.
  • This will stop the base of the pudding from burning.
  • Bake for 45 minutes to 1 hour, or until the top has set and is lightly browned.

This is an old favourite which most Aussie kids have grown up with. While cooking, the mixture separates into a light-as-air lemony sponge on top with a lemon custard sauce below. The secret is not to overwork the mixture - use a light hand! If you have any left over - which is unlikely - it will keep for a couple of days in the refrigerator and can be warmed briefly in the microwave.

175 g white sugar (preferably caster sugar)
1/4 cup all-purpose flour
1 large fresh lemon rind, of finely grated
1/2 cup lemon juice
50 g butter, melted
3 eggs, separated
1 1/4 cups milk

Steps:

  • Set oven to 180°C (350°F) Put the flour, lemon rind and juice, melted butter, egg yolks and half of the measured sugar into a mixing bowl.
  • Beat until mixed.
  • Heat milk just until it reaches room temperature.
  • Add milk to egg mixture and beat briefly until combined.
  • With clean, dry beaters, whisk egg whites, gradually adding remaining sugar, until the mixture forms stiff peaks.
  • Lightly fold about 1 cup of the lemon mixture into the beaten egg whites, then add the egg white mixture to the rest of the lemon mixture.
  • Be very gentle with the mixture- a few lumps of white won't hurt.
  • Gentle handling at this stage will result in a feather-light sponge.
  • Empty the mixture gently into an ungreased, round, ovenproof dish (I use a 6 cup capacity pyrex casserole dish).
  • Place a baking tin in the oven.
  • Place the dish in the baking tin.
  • Now, using a jug or a kettle, add water to the baking tin so that it comes halfway up the sides of the dish.
  • Bake for about 40 minutes until the sponge top is light brown and well set.
  • Serve while still warm with cream or ice cream.

I begin many of my rhubarb recipes by briefly poaching thick slices in a sugar syrup with the seeds and pod of a vanilla bean. (Don't be alarmed by the amount of sugar; it's mostly drained off.) It's a method I learned from the pastry chef Jacquy Pfeiffer. Once poached, the rhubarb has many uses, both sweet and savory. And the pink vanilla-specked syrup is delicious over ice cream or strawberries, or stirred into yogurt.

1 cup/200 grams sugar
1 vanilla bean, split and scraped
2 cups diced rhubarb (1/2-inch dice)

Steps:

  • Combine 1 1/4 cups water and the sugar in medium saucepan. Add vanilla seeds and pod. Bring to a boil over medium heat, stir until sugar dissolves and add rhubarb.
  • Reduce heat to low and gently simmer rhubarb for 5 minutes, or until it can be easily pierced with the tip of a knife but remains intact. Do not overcook, or else rhubarb will fall apart.
  • Strain rhubarb over a bowl. Store syrup and poached rhubarb separately.
