ARIZONA COWBOY BEANS - FROM SCRATCH

ARIZONA COWBOY BEANS - from scratch image

Actually this recipe was from my son in Tuscon,AR. He called them his "KA-BOY TOTTERS" He had a great sence of humor. And he was a pretty good cook...I am so glad I have a few of his recipes. I haven't made this in awhile...But it is pegged to make again very soon. A friend of his worked at a restaurant in Ariz.and passed this...

Provided by Nancy J. Patrykus

Categories     Other Snacks

Time 4h

Number Of Ingredients 7

1 pkg (16 oz) dry pinto beans
1 small smoked ham hock...about 8oz.
1/2 small onion, chopped
1 can(s) chopped mild green chilies.. (4 to 4.5 oz.)
2 tsp dried oregano
1/2 tsp salt
about 5 -1/2 cups water

Steps:

  • 1. Rinse beans under cold rinning water and discard any stones or shriveled beans. **Hint: Take the pork hock and inclose it in a clean piece of cheese cloth. Tie it into a bag. This will keep the skin bones, and meat together, and not running wild in the beans. In a 4 quart saucepan, combine beans, hock in bag, onion, chiles with their liquid, oregano and salt. Add water 1 inch above beans. Heat to a boiling over high heat. reduce heat to low, cover and simmer 1-1/2 hours. Stirring occasionally, adding more water as needed. Add 1-1/2 cups of more water to saucepan, cover and simmer 2 hours longer, or until beans are tender and liquid has thickened.Stirring occasionally, and adding more water as necessary to prevent sticking. With a slotted spoon, transfer ham hock to a cutting board. Cut and pull meat from the hock and finely chop (ONLY THE MEAT)...discard bones, fat and skin. Stir meat into beans and serve. Corn bread goes well with this dish. And hot sauce on the side...as needed. ** I think next time I will try to adjust this recipe for crockpot cooking.

COWBOY BEANS

Provided by Marcela Valladolid

Time 2h22m

Yield 6 servings

Number Of Ingredients 10

2 cups pinto beans, cleaned, soaked overnight in a non-reactive bowl and drained; liquid discarded
1 ham hock
1 bay leaf
3 cloves garlic, peeled
1 whole jalapeno chile
5 cups water
2/3 cup finely chopped white onion,
2 slices thick-cut bacon, finely chopped
4 ounces pork chorizo, casing removed
Salt and freshly ground black pepper

Steps:

  • In a large saucepan, bring the soaked beans, ham hock, bay leaf, garlic, jalapeno, and 5 cups of water to a boil over high heat. Cover the pan, reduce the heat to medium and simmer for 2 hours or until beans are tender. If the beans absorb too much water, add 1 cup of water after 1 hour and continue cooking (Beans mixture should remain soupy while cooking). Turn off the heat.
  • Cook the bacon in a large saute pan over medium-high heat until almost crisp, about 10 minutes. Add onion and cook for about 3 minutes or until translucent. Transfer bacon and onion mixture to the pot with the beans. Wipe pan clean. In same pan cook chorizo over medium heat until crisp, about 1 minutes. Using a slotted spoon, remove the chorizo and drain on paper towels. Add to the beans. Season lightly with salt, if necessary. Stir the beans over medium-high heat until heated through. Remove the bay leaf and ham hock and discard. Ladle into bowls and serve.
  • Cook's Note: In place of soaking the beans, you can use 3 (15-ounce) cans rinsed and drained pinto beans. Proceed as above but reduce the cooking time to 1 hour.

EASY COWBOY BEANS

Easy Cowboy Beans image

My family eats this as a main dish, usually with cornbread, but it's a wonderful side dish for picnics, potlucks, and camping. We like it sweet, so we add another 1/4 cup of brown sugar, but you could also spice it up by adding jalapenos or another kind of chilies. It's even good cold! It freezes very well, too.

Categories     Pork

Time 1h20m

Yield 8-12 serving(s)

Number Of Ingredients 11

1/2 lb bacon
1/2 lb ground beef
1 onion
1/2 cup sugar
1/2 cup brown sugar
1/2 cup ketchup
2 tablespoons apple cider vinegar
1 (15 ounce) can kidney beans
1 (15 ounce) can pinto beans
1 (15 ounce) can lima beans
1 (15 ounce) can pork and beans

Steps:

  • Cook bacon until crispy. Drain and crumble. Put in large pot.
  • Brown ground beef and onions together. Drain. Add to pot. (Bacon can be cooked with the ground beef and onions if cut into chunks. I use kitchen shears to just cut through all the slices--into about 1-1/2" chunks.).
  • Add the rest of the ingredients to the pot. DO NOT drain the beans! Stir everything together.
  • Bring to a boil, then turn down heat and simmer for about an hour. If you're going to let it simmer, don't add the lima beans right away, as they tend to fall apart.
  • These are generally better the next day, but are might fine the same day!

COWBOY BEANS

Cowboy Beans image

From my heros at America's Test Kitchen (Cooks Illustrated Summer 2008). I'm always looking for dried bean recipies; even though it takes pre-planning at least the night before making the dish, the beans have more flavor and nutrition than the processed beans from the can. There are directions included in case your beans were not soaked the night before. Cook time does not include overnight soak and has assumed that the quick soak method was used. Adjust the heat, smoke, or salt by stirring in more hot sauce or barbecue sauce at serving time.

HOMESTEAD COWBOY BEANS

Homestead Cowboy Beans image

I have an enormous family and all of the men go trail riding several times a year and these beans are one of the things they look forward to. My aunts and I put together their favorite combination several years ago, and have it ready at their camp, and they are some happy cowboys! You can mix different beans to your liking (lima, kidney, etc.), but the boys in our family like this mixture the best.
