This recipe has no added sugar so it is great for Diabetics. It is a favorite in our house. I first tried this recipe as a regular dessert and later tried it without sugar and found it to be just as good.

1 ¾ cups graham cracker crumbs
½ cup butter
½ teaspoon ground cinnamon
1 (.6 ounce) package sugar free lemon flavored Jell-O®
1 cup boiling water
1 (8 ounce) package reduced fat cream cheese
2 teaspoons vanilla extract
1 cup frozen light whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, butter and cinnamon. Mix well and press into the bottom of a 9 inch square pan. Bake in preheated oven for 8 to 10 minutes. Remove from oven and allow to cool.
  • Dissolve lemon gelatin in boiling water. Let cool until thickened, but not set. In a large bowl, beat cream cheese and vanilla until smooth. Blend in lemon gelatin. Fold in whipped topping.
  • Pour filling into crust. Sprinkle top with graham cracker crumbs. Refrigerate over night.

8 oz cream cheese (softened & at room temperature)
3 oz lemon gelatin
1 cup HOT water
6 oz sweetened condensed milk
1 tsp vanilla extract
2 tbsp lemon juice
1 store bought graham cracker crust

Steps:

  • Place the cream cheese in a large bowl, and whip it up until it's nice & fluffy.
  • Next add in the sweetened condensed milk, and mix until well combined.
  • Sprinkle in the lemon gelatin, then pour in the hot water.
  • Add in the lemon juice, and the vanilla extract.
  • Mix everything until it's nice and creamy, then pour the no bake lemon cheesecake filling into the graham cracker crust.
  • Cover the cheesecake, and refrigerate for a minimum of 4 hours.
  • Serve & enjoy!

CRUST
3/4 c unsweetened coconut toasted
1/2 c coconut flour
4 Tbsp splenda or other o calorie sweetener
5 Tbsp melted butter
CHEESE CAKE
1/2 c boiling water
1 0.30 ounce pkg sugar free lime jello
4 pkg 8 ounce pkgs 1/3 less fat cream cheese
1 1/4 c splenda
2 Tbsp lemon juice
the zest of 1 lemon
4 eggs
SOUR CREAM TOPPING
1 1/2 c lowfat sourcream ( 1 pound)
4 Tbsp splenda
the zest, of 1 lemon grated
GARNISH
1 container cool whip free topping
2 Tbsp toasted coconut optional

Steps:

  • 1. Place coconut in a food processor. Process until about one minute. You want the pieces to be a little bit smaller. Toast the coconut in 350° oven for about five minutes. Keep an eye on it. It will brown up quickly. Remove from oven when it just turns lightly golden.
  • 2. Add coconut to a bowl with the coconut flour and Splenda. Mix well.
  • 3. Add the melted butter to The coconut mixture. Mix well.
  • 4. Press into the bottom of a parchment lined spring form pan. with the inside greased. Bake until sides are getting light golden brown. While pie is baking make the Jell-O. Remove from oven.
  • 5. Heat water in microwave to boiling. Add the Jell-O. Mix well. Set aside to cool.
  • 6. In a bowl beat the cream cheese and splenda together. Beat in the Jell-O mixture.
  • 7. Add in the eggs . Beat well. Add the lemon juice lemon and zest. Beat until smooth.
  • 8. Pour mixture over the crust. Place in the oven and bake at 325° for approximately one hour to one hour and 10 minutes. The cake will still be jiggly. Don't worry about it .As the Jell-O in the cake cools. It will help set the cake.
  • 9. Remove from oven. Increase temperature to 350°. Mix the sour cream with the Splenda. Gently Spread the sourcream evenly over the top of the cake. Grate the lemon over the top of the sour cream mixture.
  • 10. Place back in the oven and bake for 1o-15 minutes. Remove from oven to cool. Cool 15 minutes. Run a dull knife around the iedge of cheesecake to loosen while still hot. This will prevent cracking.
  • 11. When cooled. Remove outside springform. You may want to run a knife around it again. Place in fridge for eight hours or overnight. Slice and serve with Cool Whip free topping, or whipped cream sweetened with Splenda. You may also garnish the whip cream with toasted coconut if desired.

1 ½ cups graham cracker crumbs
3 tablespoons sugar
7 tablespoons butter (melted)
1 package lemon Jell-O (3 ounces)
16 ounces cream cheese (softened)
1 cup powdered sugar
1 teaspoon vanilla extract
2 tablespoons sour cream
1 ½ cups heavy cream*
1 tablespoon lemon zest (freshly grated)

Steps:

  • Combine graham cracker crumbs and sugars in a medium-sized bowl. Add melted butter and use a fork to combine ingredients well.
  • Pour mixture into a 9″ or 10″ springform pan. Use the (clean!) bottom of a measuring cup to firmly pack crumbs into the bottom of the pan and gently press up the sides. Use your fingers to pack crumbs tightly into the sides of the pan.
  • Place in refrigerator or freezer while you prepare cheesecake filling.
  • Pour Lemon Jello gelatin mix into 1 cup very hot water and stir well. Set aside to cool.
  • Meanwhile, stir cream cheese and powdered sugar together until smooth and well-combined.
  • Add sour cream and stir well.
  • Mix in vanilla extract.
  • Only once jello mixture is no longer hot to the touch, gradually pour into cream cheese mixture. Stir slowly at first (to avoid splashing) and then increase speed until mixture is completely combined (pause to scrape down sides of the bowl periodically). Stir very well.
  • In a separate bowl, pour your heavy cream and use an electric mixer with whisk attachment to beat to stiff peaks.
  • Fold whipped cream into cheesecake mixture until well-combined.
  • Fold in lemon zest, if using.
  • Pour over graham cracker crust and transfer to refrigerator for at least 6 hours or overnight to chill.
  • If desired, top with whipped cream before cutting and serving.

150 g / 1 1/2 cup almond flour (or ground almonds)
70 g / 3/4 cup desiccated coconut (unsweetened)
1 egg (large)
300 g / 10.5 oz cream cheese
300 g / 10.5 oz sour cream
1 lemon, zest and juice
2 tbsp powdered sweetener ((or more, to taste))
12 g / 1 pack gelatine

Steps:

  • Preheat your oven to 180 Celsius / 356 Fahrenheit. Line the bottom of a tart/pie dish with baking paper and grease the sides.
  • In a blender or with a hand mixer (use a tall jug), blend the ingredients for the tart base until they resemble sticky crumbles and the coconut is starting to release its oils.
  • Press the dough into a tart or pie dish with your fingers. My dish measured 22 cm at the bottom and 26 cm at the top.
  • Bake for around 20 minutes until the tart crust is lightly browned.
  • Remove from the oven and let it cool down. Then remove tart base from the pan.
  • Mix the cream cheese, sour cream, sweetener, lemon juice and zest in a bowl until smooth.
  • Dissolve your gelatine according to your manufacturer's instructions (I dissolved mine in a few tablespoons of hot water) and add to the filling mix. Blend and fill into the tart base.
  • Cool the tart in the fridge until set, a minimum of 2 hours or overnight. Decorate with more lemon zest or to your liking.

1/2 cup boiling water
1 (1/3 ounce) packet sugar-free lemon gelatin
8 ounces cream cheese, softened
1 (1 g) packet sugar substitute, preferrably Splenda
3 eggs
3/4 cup heavy cream
1/2 tablespoon sugar-free coconut syrup
1 teaspoon pure vanilla extract

Steps:

  • Mix and dissolve gelatin in the boiling water, set aside to cool.
  • In a mixer, beat the cream cheese and sugar substitute until smooth.
  • Beat in the eggs, then stir in cream.
  • Place mixture in saucepan to cook, then simmer for 5 minutes.
  • Remove from heat and pour into a medium bowl.
  • Stir in Jell-O mixture.
  • Pour mixture into either a 8x8 brownie pan or a 9" pie plate.
  • Cover with plastic and place in refrigerator to chill for at least 4 hours or overnight.
