LEMON CHICKEN RICE SOUP

I got this recipe from a friend, who served it to me one chilly night. It is very much a "comfort food" for me and quite easy to make with leftover chicken. When you are adding the eggs, be careful to add them very slowly and make sure the soup is not too hot, otherwise your eggs will split. I find it helps to take the soup off the burner for a few minutes before adding the eggs. You should end up with a smooth cream-like base to your soup, not broken eggy bits like in egg drop soup.

6 cups chicken broth
1 chicken bouillon cube
1/3 cup rice, uncooked
1/3 cup carrot, diced
1/3 cup celery, chopped
1/4 cup onion, finely chopped
1 cup chicken, cubed and cooked
2 tablespoons butter
2 tablespoons flour
3 eggs
3 tablespoons lemon juice
salt and pepper
lemon slice (optional)
sliced green onions or parsley (optional)

Steps:

  • In a large saucepan, combine chicken broth, bouillon cube, rice, carrots, celery and onion.
  • Bring to a boil.
  • Reduce heat, cover and simmer 20 minutes or until rice and vegetables are tender.
  • Stir in chicken.
  • Remove from heat.
  • Then, in a small saucepan, melt butter and stir in flour until smooth.
  • Gradually add 2 cups of broth mixture, cook until slightly thickened, stirring constantly.
  • In a small bowl, beat the eggs until frothy.
  • Gradually beat lemon juice and 2 cups thickened broth into the large pot of soup.
  • Very slowly add egg mixture into the soup, stirring constantly. Do not do this if your soup is boiling or very hot or your eggs will split. You may want to take the soup off the burner for a few minutes before you add the eggs.
  • Heat gently until soup thickens enough to coat a spoon-- do not boil!
  • Add salt and pepper to taste, garnish with lemon.

1/4 teaspoon dried thyme
1/4 cup butter, cubed

1/2 cup dry white wine or additional chicken broth
3 cups cooked wild rice
2 cups cubed cooked chicken

Steps:

  • In a large saucepan, combine the first 9 ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., In Dutch oven, melt butter; stir in flour until smooth. Gradually whisk in broth mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Whisk in soup and wine. Add rice and chicken; heat through.

2 pounds boneless skinless chicken breasts, cut into 1/2-inch pieces

1 small onion, chopped
1 medium lemon, halved and thinly sliced
1/4 cup lemon juice

  • In a large skillet, heat 1 tablespoon oil over medium-high heat. Add half the chicken; cook and stir until browned. Transfer to a 6-qt. slow cooker. ½ cup butter
1 finely chopped onion
½ cup chopped celery
½ cup sliced carrots
½ pound fresh sliced mushrooms
¾ cup all-purpose flour
6 cups chicken broth
2 cups cooked wild rice
1 pound boneless skinless chicken breasts, cooked and cubed
½ teaspoon salt
½ teaspoon curry powder

1 cup slivered almonds
3 tablespoons dry sherry

Steps:

  • Melt butter in a large saucepan over medium heat. Stir in the onion, celery and carrots and saute for 5 minutes. Add the mushrooms and saute for 2 more minutes. Then add the flour and stir well. Gradually pour in the chicken broth, stirring constantly, until all has been added. Bring just to a boil, reduce heat to low and let simmer.
  • Next, add the rice, chicken, salt, curry powder, mustard powder, parsley, ground black pepper, almonds and sherry. Allow to heat through, then pour in the half-and-half. Let simmer for 1 to 2 hours. (Note: Do not boil or your roux will break.)

1 lb boneless skinless chicken breast, lightly pounded (3 to 4 ounces meat per person)
kosher salt
fresh ground black pepper
8 garlic cloves, smashed
1 cup wild rice
1/4 cup fresh squeezed lemon juice
2 1/4 cups water
10 sprigs fresh parsley

Steps:

  • Season the chicken breasts generously with salt and pepper.
  • Place the chicken breasts in the bottom of a slow cooker.
  • Add the garlic and rice.
  • Add the lemon juice to the water and stir.
  • Pour this mixture over the rice and chicken.
  • Stir once to coat.
  • Place the lid on the slow cooker and set on low for 8 hours.

I made a few changes by adding celery, and adding 3 more cups of broth (because we don't like soup that thick). The original recipe called for 5 cups of water. I used part water and part chicken broth.

6 garlic cloves, minced
1 onion, chopped
3 carrots, cut in half length wise and then i to 1/4 inch chunks
3 stalks celery, cut in half lengthwise and then into 1/4 chunks
2 quarts chicken stock
1 teaspoon thyme
2 bay leaves
1/2 teaspoon ginger (grated)
2 green onions (sliced)
2 egg yolks, lightly beaten
1 lemon (Juiced and zested)
8 ounces mushrooms, sliced
1 cup wild rice (uncooked)
2 cups cooked chicken (shredded or chunks)
2 cups kale (chopped)
1 teaspoon kosher salt (adjust to taste)

Steps:

  • In a large pot or Dutch oven melt 2 Tbs of butter and sauté the garlic about 1 minute. Add onions and continue cooking until translucent.
  • Add carrots, celery and remaining butter to the pot and continue sautéing for 2 to 3 minutes.
  • Add chicken stock, bay leaves, ginger, thyme salt and pepper and bring to a boil. Simmer uncovered for 10 minutes. Then cover and simmer for 30 minutes.
  • In a bowl add lemon juice and egg yokes and wisk together. Then temper the eggs and lemon juice mixture by slowly adding 2 to 3 ladles of the hot soup in to the bowl stirring constantly. .
  • Slowly add the egg and lemon juice mixture to the pot stirring constantly. Add the chicken, kale, lemon zest and green onion. Continue cooking for another 10 minutes.
  • Ladle in to bowls and top with a sprinkle of parmesan cheese to taste .
