Steps:
- Position rack about 4 inches (10 cm) from broiler. Preheat broiler to high.
- Arrange tortilla chips in a single layer on a rimmed half-sheet pan. Scatter turkey evenly over all. Dollop mashed potatoes here and there. Scatter stuffing evenly over top, then drizzle the whole shebang with gravy. Dollop cranberry sauce evenly over nachos, then sprinkle cheese evenly over all. Scatter jalapeno slices on top, if using.
- Broil until cheese is melted and bubbly, 2 to 5 minutes. Scatter cilantro on top and serve immediately. Get out your cameras and record for posterity.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
- Melt butter in a skillet over medium heat; cook and stir shallots in the hot butter until softened, about 2 minutes. Stir jalapeno peppers into shallots and cook until fragrant, about 2 more minutes. Stir cranberry jelly into the shallots and peppers until melted.
- Mix shredded turkey with jalapeno-cranberry jelly mixture in a bowl until thoroughly combined. Arrange tortilla chips on the prepared baking sheet and fill each chip with 1 tablespoon turkey mix. Top each chip with 1/2 teaspoon of white Cheddar cheese.

- 1. Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.
- 2. Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.
- 3. Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.
- 4. Top with turkey.
- 5. Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.
- 6. Spoon half the salsa evenly over chips. Top with remaining cup of cheese.
- 7. Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.
- 8. Serve hot with remaining salsa, sour cream and cilantro, if desired.

- Peel broccoli stems, cut into bite-size morsels; cut tops into bite-size pieces also.
- In a medium saucepan with about a half-inch of water, steam-parboil broccoli in boiling water--just until broccoli is barely BRIGHT green; drain well, then pour into prepared pan.
- Arrange the cut-up turkey (or chicken) over the broccoli.
- In a small bowl, combine soup, mayo and oregano; spoon over turkey.
- Sprinkle cheese over the pan.
- Bake for 45 minutes and cheese is bubbly.

Steps:
- Preheat oven to Low Broil.
- Spread enough tortillas that will fit into the bottom of a sheet pan. I use 15-17 large chips. You will need enough to fit your sheet pan. (I use half sheet.)
- Combine the cooked turkey, black beans, diced tomatoes and chilies, onions, sliced olives and Taco Seasoning in a large bowl. Stir and spread over the tortilla chips.
- Sprinkle the cheese throughout.
- Broil for 4-6 minutes or until the cheese has melted.

Steps:
- Preheat oven to 450°F.
- Toss turkey with lime juice and season with salt and pepper.
- Heat 1 1/2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté bell peppers, stirring, until crisp-tender, about 3 minutes.
