1 pound (455 g) corn tortilla chips
8 ounces (225 g) leftover cooked turkey, (shredded)
1 cup (210 g) leftover mashed potatoes
1 cup (200 g) leftover stuffing
1 cup (240 ml) leftover gravy
1 cup (277 g) leftover cranberry sauce
8 ounces (225 g) Monterey jack cheese, (shredded)
1 jalapeno, (sliced, optional)
1/4 cup (4 g) cilantro leaves

Steps:

  • Position rack about 4 inches (10 cm) from broiler. Preheat broiler to high.
  • Arrange tortilla chips in a single layer on a rimmed half-sheet pan. Scatter turkey evenly over all. Dollop mashed potatoes here and there. Scatter stuffing evenly over top, then drizzle the whole shebang with gravy. Dollop cranberry sauce evenly over nachos, then sprinkle cheese evenly over all. Scatter jalapeno slices on top, if using.
  • Broil until cheese is melted and bubbly, 2 to 5 minutes. Scatter cilantro on top and serve immediately. Get out your cameras and record for posterity.

1 cup sour cream
1 tablespoon minced chipotle chile in adobo, plus more sauce for serving
10 cups tortilla chips
2 cups shredded leftover turkey meat
3 cups shredded Cheddar
2 cups shredded Monterey Jack cheese
2 cups thinly sliced leftover cooked Brussels sprouts
1 1/2 cups leftover cubed roasted butternut squash
1 cup packaged french-fried onions
1 cup lightly packed cilantro leaves or parsley leaves
1/2 cup sliced black olives
1/4 cup chopped pickled jalapenos

Steps:

  • Preheat the oven to 425 degrees F. Stir the sour cream and chipotle chile together in a small bowl. Cover with plastic wraps and refrigerate.
  • Scatter half the chips on a rimmed baking sheet. Top with one-third of the turkey, cheeses, Brussels sprouts, butternut squash and fried onions. Scatter the remaining chips on top followed by the remaining two-thirds of turkey, cheeses, Brussels sprouts and fried onions. Bake until the cheeses are melted and bubbly, about 5 to 7 minutes.
  • Drizzle the nachos with chipotle sour cream and extra adobo sauce. Garnish with cilantro, black olives, and jalapenos.

2 tablespoons butter
½ cup sliced shallots
10 slices jarred jalapeno peppers, chopped - or more to taste
½ cup cranberry jelly
2 cups shredded cooked turkey
½ cup shredded white Cheddar cheese
48 scoop-style tortilla chips (such as Tostitos® Scoops®)

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Melt butter in a skillet over medium heat; cook and stir shallots in the hot butter until softened, about 2 minutes. Stir jalapeno peppers into shallots and cook until fragrant, about 2 more minutes. Stir cranberry jelly into the shallots and peppers until melted.
  • Mix shredded turkey with jalapeno-cranberry jelly mixture in a bowl until thoroughly combined. Arrange tortilla chips on the prepared baking sheet and fill each chip with 1 tablespoon turkey mix. Top each chip with 1/2 teaspoon of white Cheddar cheese.
  • Bake in the preheated oven until the cheese topping is melted and the chips are golden, about 10 minutes.

3 Tbsp lime juice
2 Tbsp olive oil
1 tsp ground cumin
1 tsp garlic powder
2 c cooked turkey, coarsely chopped
salt & pepper to taste
1 pkg 10 ounce large tortilla chips, I used the blue corn organic chips
1 can(s) 16 fluid ounces refried beans
2 c shredded monterey jack cheese
2 c salsa
sour cream
cilantro, fresh

Steps:

  • 1. Heat oven to 425°F. Whisk together lime juice, olive oil, cumin and garlic powder.
  • 2. Add turkey to large/medium bowl. Toss mixture with turkey in a small bowl. Season with salt and pepper.
  • 3. Make a layer of tortilla chips to cover the bottom of a large 12 to 14-inch round or oval baking dish. (I used a 9 x 13 pyrex baking dish) Evenly spoon refried beans over chips.
  • 4. Top with turkey.
  • 5. Sprinkle with 1 cup shredded cheese. Make another layer of tortilla chips.
  • 6. Spoon half the salsa evenly over chips. Top with remaining cup of cheese.
  • 7. Bake nachos 15-20 minutes or until heated through and cheese melts and begins to bubble.
  • 8. Serve hot with remaining salsa, sour cream and cilantro, if desired.

3 bunches fresh broccoli
2 -4 cups turkey, bite-size chunks
1 (10 ounce) can cream of mushroom soup (or chicken)
1/2 cup mayonnaise
1 teaspoon oregano
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350; grease a 13x9 pan.
  • Peel broccoli stems, cut into bite-size morsels; cut tops into bite-size pieces also.
  • In a medium saucepan with about a half-inch of water, steam-parboil broccoli in boiling water--just until broccoli is barely BRIGHT green; drain well, then pour into prepared pan.
  • Arrange the cut-up turkey (or chicken) over the broccoli.
  • In a small bowl, combine soup, mayo and oregano; spoon over turkey.
  • Sprinkle cheese over the pan.
  • Bake for 45 minutes and cheese is bubbly.

Tortilla Chips (I use 15-17 large chips. You will need enough to fit your sheet pan.)
2 cups cooked turkey (Sliced into cubes or shredded)
15 oz canned diced tomatoes and chilies (drained)
15 oz canned black beans (drained)
1/2 cup chopped onions
1/2 cup sliced black olives
1 1/4 cups shredded cheese (I used 1 cup cheddar and 1/4 cup mozzarella.)
1/4 cup shredded pepper jack cheese (Can substitute whatever you wish.)
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
salt and pepper to taste
1/2 teaspoon paprika (I use smoked paprika)
1 teaspoon cayenne pepper (optional for spicy)
salsa
Greek yogurt or sour cream
Guacamole
Jalapenos
Cilantro

Steps:

  • Preheat oven to Low Broil.
  • Spread enough tortillas that will fit into the bottom of a sheet pan. I use 15-17 large chips. You will need enough to fit your sheet pan. (I use half sheet.)
  • Combine the cooked turkey, black beans, diced tomatoes and chilies, onions, sliced olives and Taco Seasoning in a large bowl. Stir and spread over the tortilla chips.
  • Sprinkle the cheese throughout.
  • Broil for 4-6 minutes or until the cheese has melted.

1 1/2 tablespoons fresh lime juice
2 tablespoons vegetable oil
3 bell peppers (preferably red and orange), finely chopped
1 garlic clove, finely chopped
1/4 teaspoon ground cumin
1 teaspoon dried oregano, crumbled
1 (15- to 16-oz) can black beans, rinsed and drained
4 oz corn tortilla chips (not low-fat)
2 cups grated jalapeño Jack cheese (8 oz)
1/4 cup chopped scallion greens
1/2 cup chopped fresh cilantro
1 cup sour cream
2 to 3 teaspoons finely chopped pickled jalapeño
Accompaniment: tomato salsa

Steps:

  • Preheat oven to 450°F.
  • Toss turkey with lime juice and season with salt and pepper.
  • Heat 1 1/2 tablespoons oil in a 10-inch heavy skillet over moderately high heat until hot but not smoking, then sauté bell peppers, stirring, until crisp-tender, about 3 minutes. Transfer to a bowl. Heat remaining 1/2 tablespoon oil in skillet over moderate heat and cook garlic, cumin, and oregano, stirring, 1 minute. Stir in beans and cook, stirring, until heated through, about 1 minute. Season with salt and pepper.
  • Make 2 layers each of corn chips, sautéed peppers, beans, turkey, cheese, scallion, and cilantro in a 3-quart shallow baking dish. Bake nachos in middle of oven until cheese is melted, 6 to 10 minutes.

  • Combine the turkey and salsa, tossing to coat.
  • In a 9x13 baking dish or cast iron skillet, spread 1/2 of the tortilla chips
