BAKED TURKEY CROQUETTES
Steps:
- In a large bowl, mash potatoes with 1/4 cup broth, salt and pepper. Set aside.
- Saute garlic, and onions in oil over low heat. Add parsley, salt and pepper and cook until soft, about 2-3 minutes.
- Add turkey, and remaining broth, mix well and shut heat off.
- Add turkey to mashed potatoes and using your clean hands mix well. Taste for salt and adjust if needed.
- Preheat oven to 450°F.
- Measure 1/4 cup of mixture then form into croquettes. Place on waxed paper. Repeat with remaining mixture.
- Dip each croquette in egg mixture, then breadcrumbs and place on a parchment lined cookie sheet for easy cleanup. Spray generously with olive oil (about 1 tbsp worth). Bake in the oven about 15 minutes, or until golden.
- Optional, serve with leftover turkey gravy.

- 1. Using a food processor, chopper or Bullet finely chop meat, celery, onion, cauliflower, and broccoli.
- 2. Stir in stuffing and 1c crushed cracker crumbs. *I used Cheeze-Its & saltines but any flavor of crackers would work.
- 3. Whisk egg well and add to mixture along with a pinch of salt and pepper. *This makes a good binder for the patties*
- 4. Take a scoop of the mixture and roll into a ball that sticks together (add more cracker crumbs if it's not holding together well). Press ball into patties the size of a standard burger bun in diameter.
- 5. Dredge patties in crushed French fried onion or remaining cracker crumbs if desired.
- 6. Heat a skillet to medium heat and use 2 tbsp olive oil fry the patties for 3-5 minutes on each size until golden brown.
- 7. Serve these patties on a bed of fresh greens with a light dressing (sour Cream w/chives) or on a grilled sesame bun topped with tomato, cucumber & lettuce. Make the patties smaller for appetizers.

- In a small sauté pan over moderate heat, toast the bread crumbs until golden and crunchy, 3 to 4 minutes. Transfer to a small bowl and let cool.
- In a small bowl, beat together the egg and water.
- In a large bowl, combine the mashed potatoes, stuffing, and turkey. Using your hands or a spoon, shape the mixture into 2-inch-long, oblong-shaped croquettes (you should have about 24 croquettes) and transfer to a large rimmed baking sheet.
- Working with 1 croquette at a time, dredge them in the egg-water mixture, letting the excess drip off, then dredge them in the bread crumbs, and return them to the rimmed baking sheet.
- In a large skillet, over moderately high heat, warm 2 tablespoons of the oil. Working in batches, pan-fry the croquettes, turning them occasionally, until crispy on all sides, 5 to 6 minutes total. Repeat with the remaining croquettes, wiping the pan clean and adding 2 tablespoons of the oil to the pan between batches. DO AHEAD: The croquettes can be prepared ahead and frozen, well wrapped in foil, for up to 3 months. To reheat: Bake the frozen croquettes on a large baking sheet in a 475°F oven until golden brown, about 10 minutes. Remove the croquettes from the oven for about 5 minutes to let the interiors thaw, then return them to the oven to finish baking for another 2 minutes.

- Melt butter in a large skillet over medium-high heat. Add onion, 1 teaspoons salt, and teaspoon pepper. Cook for 3 minutes. Stir in sage and savory or thyme, and cook for 1 minute. - In a medium-size saucepan, melt butter. Blend in flour and add milk and chicken broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
- Add lemon juice, snipped parsley, and onion. Stir in celery salt and a dash each of pepper, paprika, and nutmeg. Cool.
- In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly. With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs.
- Lightly shape balls into cones. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Again, dip croquette in egg/flour and roll in bread crumbs. Fry croquettes in deep-fat fryer for approximately 3 minutes or until brown. Drain. Serve with turkey gravy.

- Mix the turkey, stuffing, and eggs well. Refrigerate 3 hours minimum.
- Create a 'log' shape from about 3/4 cup of mixture. Then gently drop onto the counter to flatten the bottom. (about 3" high, 2" in diameter).
- Roll the croquettes in flour, then bread crumbs. Fry in oil in deep skillet over medium heat, turning occasionally, until golden brown on all sides and bottom, about 10-15 minutes. Keep warm in 200 degree Fahrenheit oven.
- Sauce: (or you can use leftover gravy) Meanwhile, mix the can of soup with the half cup milk in a saucepan. Cook, stirring constantly, until warmed and creamy.
- Pour over croquettes or serve sauce on the side. Traditionally served atop mashed potatoes for a wonderful presentation.

Growing up in New Jersey I learned to love "Diner Food" and I could always count on Turkey Croquettes to be on the menu. This is my recreation of that classic diner dish.

- In your food processor add celery, carrots and onion and pulse till finely minced
- In the food processor add your turkey and pulse until finely chopped. (use a mix of dark and white meat)
- In a saute pan melt butter and add finely minced celery, carrots, and onion. Saute until softened (3-5 minutes) Allow to cool.
- In a large mixing bowl, add turkey, stuffing cubes, sauteed celery, onions, carrots, and poultry seasoning. Mix all the ingredients together.
- Add 1 cup of chicken stock and two lightly beaten eggs and mix together. Gradually add more chicken stock as needed. You want the mixture to resemble stuffing consistency. **Don't let it get too wet. It will continue to absorb the liquid as it sits in your refrigerator setting up but it still needs to be shaped so it needs to have a formable consistency.
- Season to taste with sea salt and black pepper.
- After mixing all ingredients together fully, refrigerate for 2-3 hours to allow mix to set up .
- After the mix has set up form into cone-shaped croquettes
- Dredge the croquettes in flour seasoned with salt and pepper. Dip the floured croquette into the egg wash (2 eggs, ½ cup of milk).Coat the egged croquette with seasoned bread crumbs.
- Saute croquettes in olive oil, turning until all sides have been lightly browned.
- Place croquettes you are going to serve into a 350-degree oven for 15-20 minutes until fully heated. (minimum 165 degrees internal temperature)
- Freeze the remainder to use another day!
- Serve Croquettes with sides of your choice and your favorite turkey gravy and enjoy!

- Place bread in a blender and blend until soft crumbs form. Place bread crumbs in a shallow bowl.

- Pour enough oil into a large Dutch oven to fill the pan about 3 inches deep. Heat over medium heat until a deep-fry thermometer inserted in the oil reaches 325 degrees F. Line a rimmed baking sheet with parchment paper, line a second rimmed baking sheet or plate with paper towels and set a cooling rack inside a third rimmed baking sheet. Preheat the oven to 200 degrees F.
- Place the stuffing in a food processor fitted with the blade attachment. Pulse until slightly broken up but still with chunks, 4 to 5 times.
- Scrape the stuffing into a large bowl. Whisk the egg and 1/2 teaspoon salt in a small bowl. Stir the egg mixture into the stuffing with a fork. Add the flour and use a rubber spatula or your hands to incorporate it until no streaks remain.
- Place the panko in a shallow baking dish. Use a 2-tablespoon cookie scoop to scoop out a portion of the stuffing mixture. Flatten the scoop slightly with your hands, then place a cube of mozzarella in the center. Bring the stuffing up over the cheese to enclose it; if the mixture sticks to your hands, spray them with a little cooking spray. Form the croquette into a football shape. Roll the croquette in the panko, pressing slightly to adhere. Place on the parchment-lined baking sheet. Repeat with the remaining stuffing and mozzarella; you should get 10 to 12 croquettes.
- Use a spider to gently lower half of the croquettes into the hot oil, making sure not to overcrowd the Dutch oven. Fry until golden brown, 2 to 3 minutes. Transfer to the paper towel-lined baking sheet and sprinkle with salt. Let the croquettes drain for a minute, then transfer them to the baking sheet with the wire rack and keep warm in the oven until ready to serve. Bring the oil back to 325 degrees F, then repeat with the remaining croquettes.
- Serve the croquettes on a platter with leftover gravy or mustard.
