1/4 cup white wine
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
4 tablespoons coconut oil
1 large yellow onion, small diced
1 cup small-diced celery
1 cup small-diced carrots
4 cups homemade Cornbread Croutons, recipe follows or store-bought
4 cups store-bought seasoned croutons
1 tablespoon fresh thyme, chopped
2 teaspoons fresh rosemary, chopped
1 teaspoon fresh sage, chopped
1 teaspoon cayenne pepper, optional
1 quart chicken stock
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
2 large eggs, beaten
1 pound butternut squash, peeled, seeded and cut into 1-inch pieces
1 pound red beets, peeled and cut into 1-inch pieces
2 yellow onions, large diced (about 4 cups)
1 tablespoon fresh thyme, chopped
Extra-virgin olive oil, for drizzling
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
5 tablespoons coconut oil plus more for greasing the baking sheet, melted
1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon baking powder
Kosher salt and freshly ground white pepper
1 cup almond milk or regular milk, at room temperature
1/4 cup applesauce, at room temperature
1/4 cup sorghum (see Cook's Note)
1 large egg, at room temperature

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray.
  • Whisk together the eggs, milk, 1 teaspoon salt and 1 teaspoon pepper in a large bowl. Stir in the Turkey Gravy and hot sauce. Spread the Cornbread Stuffing in the prepared baking dish, then sprinkle over the Roasted Vegetables and Roasted Turkey Breast. Pour the egg mixture over the top. Bake until golden brown and set, 35 to 40 minutes. Let cool for 5 minutes before slicing. Garnish with the cranberry sauce, if using.
  • Melt the butter in a skillet over medium heat. Whisk in the flour and cook until golden, 1 to 2 minutes. Whisk in the warmed stock. Bring to a simmer and cook, stirring constantly, until thickened, 10 to 15 minutes. The mixture should coat the back of a spoon. Pour in the wine, stir and cook for an additional 2 to 3 minutes. Season to taste with salt and pepper.
  • Preheat the oven to 350 degrees F.
  • Melt the coconut oil over medium heat in a large skillet. Saute the onion, celery and carrots until tender, 8 to 10 minutes. Remove from the heat and put into a large bowl. Add the cornbread croutons, seasoned croutons, thyme, rosemary, sage and cayenne if using. Add the chicken stock and stir to combine. Taste and add salt and pepper, then stir in the eggs. Mix to combine and pour into a 9-by-13-inch casserole dish. Bake until golden brown and fluffy but still moist, 45 to 55 minutes.
  • Preheat the oven to 400 degrees F.
  • Put the squash, beets, onions and thyme in a large bowl. Drizzle with oil and toss to coat. Season generously with salt and pepper. Spread in a single layer on a rimmed baking sheet and roast, tossing once, until golden brown and tender, 45 to 50 minutes.
  • Preheat the oven to 375 degrees F.
  • Add 1 tablespoon of the coconut oil to a 6-inch cast-iron skillet. Put the skillet in the oven and allow to heat until very hot, 6 to 8 minutes.
  • Combine the cornmeal, flour, baking powder and 1 teaspoon salt in a large bowl with a whisk. In a different bowl, combine the almond milk, applesauce, sorghum, egg and 2 tablespoons coconut oil. Make a well in the center of the dry ingredients and pour in the wet. Fold to combine.
  • Carefully remove the skillet from the oven and pour in the batter. Return the skillet to the oven and bake until golden with a crisp crust, 25 minutes. Let cool before cutting the cornbread into 1-inch pieces (about 8 cups).
  • Reduce the oven to 350 degrees F.
  • Grease a baking sheet with some coconut oil and spread the cornbread in a single layer. Be careful, the cornbread is fragile and you dont want to be rough with it. Drizzle lightly with the remaining 2 tablespoons coconut oil and sprinkle with salt and pepper. Cook, stirring halfway through, until golden brown and crunchy, 30 to 40 minutes. Cool on the baking sheet before using.

LEFTOVER TURKEY AND STUFFING BUNDLES

Leftover Turkey and Stuffing Bundles image

This Turkey and Stuffing Bundles recipe is the perfect, easy, delicious meal to make with all of your Thanksgiving leftovers!

Provided by Brandie @ The Country Cook

Categories     Main Course

Time 20m

Number Of Ingredients 7

8 ounce tube crescent roll dough
1/2 pound leftover turkey (or deli turkey)
1 cup leftover stuffing
8 Tablespoons whole berry cranberry sauce
mashed potatoes, for serving
gravy, for serving
parsley flakes, for garnish (optional)

Steps:

  • Preheat the oven to 375°F. Line a baking sheet with parchment paper, set aside.
  • Lay out the crescent roll triangles on a clean work surface.
  • Evenly distribute the turkey, stuffing, and cranberry sauce onto the roll, placing it on the large end of the triangle. I like to place the stuffing, then turkey on top, and end with the cranberry sauce.
  • Carefully roll the pointed end of the triangle over the filling and tuck it under to make a package. Place each package on the lined baking sheet about 2 inches apart.
  • Bake for 9-12 minutes until golden brown.
  • To serve: place a scoop of warmed up leftover mashed potatoes on a plate, top with two turkey bundles, and ladle some gravy on top.
  • Add a garnish of optional parsley and enjoy!

LEFTOVER TURKEY & STUFFING CASSEROLE

Leftover Turkey & Stuffing Casserole image

I made this up when DD had her wisdom teeth out. She wanted a turkey dinner similar to Thanksgiving in June!! I needed to use up all the leftovers so this was it!! You can use boxed stuffing if you need to, you would need 2 6oz packages of seasoned stuffing mix. You can make this ahead very easily...just remember the cooking time will be extended

LEFTOVER TURKEY AND STUFFING REUBENS

Leftover Turkey and Stuffing Reubens image

Leftover turkey and stuffing find their way into a classic Reuben along with sauerkraut, Russian dressing and Swiss cheese.

Provided by Food Network Kitchen

Time 25m

Yield 4

Number Of Ingredients 8

4 tablespoons unsalted butter, room temperature
8 slices rye bread
4 tablespoons Russian dressing
8 slices Swiss cheese
2 cups leftover stuffing, warmed slightly
2 cups sauerkraut
1 pound leftover thinly sliced turkey
Kosher salt and freshly ground black pepper

Steps:

  • Position a rack about 4 inches from the broiler heat source, and preheat. Line a baking sheet with foil.
  • Spread some butter on 1 side of each slice of bread. Place 4 pieces, buttered side down, on the prepared baking sheet. Spread some of the Russian dressing on the sides facing up. Top each with a slice of cheese and evenly crumble some of the stuffing over the cheese. Top each with some sauerkraut, turkey and then the remaining cheese on top.
  • Put the open-faced sandwiches under the broiler and cook until the cheese melts, about 2 minutes. Remove the baking sheet from the broiler. Spread the rest of the dressing on the uncovered side of the 4 remaining bread slices, place on top melted cheese and push down, buttered side up to finish the sandwiches. Return to the broiler and toast sandwich, carefully turning once so both sides get nice and golden brown, about 2 minutes total, serve hot.

TURKEY IN THE BUNDT (LEFTOVER TURKEY)

Turkey in the Bundt (Leftover Turkey) image

This tried-and-true recipe is adapted from the makers of Nordic Ware. Simple and flavorful, the milk, eggs and cheese make this bundt casserole moist. Can be served with vegetables of your choice in the center of the rings, and garnished with apple slices, etc. This dish can be "lightened-up" using your favorite ways, and will still retain flavor. To freeze: cook, thaw, remove from pan (or not) then wrap well and freeze. To cook after freezing: thaw completely, then re-heat (covered or wrapped in tin foil) at 350 degrees for 30-40 minutes. If frozen whole, place frozen food in the bundt pan, covered with foil, with the bundt pan in a larger pan of water, and re-heat.

Time 1h20m

Yield 8 serving(s)

Number Of Ingredients 8

6 cups dry bread, cubed (can use cubed stuffing, if using seasoned stuffing, be careful adding herbs later)
2 1/2 cups diced cooked turkey
2 cups good swiss cheese, grated
1 small onions or 2 leeks, diced and sauted in oil of your choice
4 eggs, beaten
2 1/2 cups milk (any kind)
1/4 teaspoon black pepper
1 1/2 teaspoons any combination dried herbs (sage, thyme, marjoram, oregano all work well if using fresh herbs, use at least 1 TBS.)

Steps:

  • Place 3 cups of bread cubes in the bottom of a greased bundt pan.
  • Place turkey evenly over bread. Spread Swiss cheese over turkey. Sprinkle with sauted onions or leeks. Top with remaining 3 cups of bread cubes.
  • Combine beaten eggs with milk and seasonings and pour over the mixture in the pan. Place bundt pan in a pan of water; I use a 9" x 13" pan for this. Bake at 350 degrees for one hour.
  • Remove from water pan and cook and additional 10 minutes, or until a knife comes out clean.
  • Cool for ten minutes. Use a plastic spatula to carefully lift turkey mixture away from the pan. Invert onto a platter.
