- Roll each roll into a long rope about ½-inch thick and 13+ inches long. Then sprinkle some garlic salt and shredded parmesan onto your work surface and roll the breadstick into the toppings to coat the stick, leaving the ends bare for the next step.
- Pinch the ends together tightly creating a tear drop shape. Then pinch the top of the rounded end into a point, facing the same direction as the bottom point, creating a heart shape. Press more cheese and garlic salt into any bare areas of the heart. Repeat with each roll.
- Place the heart shaped breadsticks onto a silicone lined baking sheet about an inch apart alternating directions to fit them all on one tray. Cover with greased plastic wrap and allow to rise for 30 to 45 minutes.
- Beat an egg and brush it on top of the risen breadsticks. Bake at 350 degrees Fahrenheit for 15 to 18 minutes or until golden brown. Brush the tops with melted butter and serve warm.

- Combine the flours in a large bowl. Mix in the salt, then separately mix in the yeast and sugar. Pour the warm water and the olive oil into the bowl and mix everything together using a dough whisk or a large spoon. Cover the bowl with plastic wrap and let sit in a warm spot for about 90 minutes, or until the dough has become very puffy and about doubled in size.
- Heat the oven to 375ºF. Cover a baking sheet with parchment, then sprinkle with a bit of semolina flour.
- Lightly flour a large wooden cutting board or a pastry board and scrape the dough out of the bowl and onto the board. Give it just a few kneads to bring it together. Let the dough relax for about 10 minutes, then roll it out into an 8×12″ rectangle.
- Melt the butter, then use a pastry brush to distribute it evenly across the surface of the dough. Sprinkle the garlic powder and the Italian herbs over the surface. Cut the dough into 1″ wide strips and roll into twists, as shown.

- In a small saucepan bring water and cubed potatoes to boiling. Simmer, covered, about 15 minutes or until potato is very tender; do not drain. Mash potato in the water. Measure potato mixture. If necessary, add additional water to make 1 2/3 cups total.
- Return potato mixture to saucepan. Add buttermilk, sugar, butter, and salt. Heat or cool as necessary until warm (120 degrees F to 130 degrees F), stirring constantly.
- In a large mixing bowl combine 2 cups of the flour and the yeast. Add the potato mixture. Beat with an electric mixer on low to medium speed for 30 seconds, scraping the side of the bowl constantly. Beat on high speed 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.
- Turn dough out onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately stiff dough (6 to 8 minutes). Shape dough into a ball. Place in a lightly greased bowl, turning once to grease dough. Cover; let rise in warm place until double (30 to 45 minutes).

- In a medium bowl, combine warm water and yeast and whisk until combined. Set aside and allow to proof for 10 minutes. There should be a layer of bubbles and foam on top after 10 minutes.
- Add 2 tablespoons olive oil to an 18×13 inch rimmed sheet pan. Using a pastry brush, brush the olive oil to cover all the way to the sides and corners. Set aside.
- In the bowl of a mixer fitted with the paddle attachment, add flour and salt. Pour the water and yeast mixture on top and mix on high for 1 minute.
- Scrape dough onto the prepared sheet pan and spread the dough all the way to the corners and edges with your fingers. Once spread out, using a pizza cutter or sharp knife, score the dough in half widthwise and lengthwise, making four equal rectangles. Cutting widthwise, score each side of the dough into 6 strips. You should end up with 24 breadsticks. Be sure to only score the dough. Do not cut all the way through.
