When wondering what to make with leftover turkey, give this broccoli casserole a try. It's savory, creamy, cheesy and really easy to make. The Swiss cheese and butter cracker crumbs on top are a nice finish to the dish. This is a filling casserole and a great way to use Thanksgiving leftovers.

1 c long grain rice, uncooked
3 c leftover turkey, chopped
2 c broccoli, chopped and cooked (can use 2 10 oz frozen)
1 can(s) cream of mushroom soup (10 oz)
1 1/2 c milk, whole
1/2 c turkey broth
1/2 c mayonnaise, (I use Best Foods or hellmans)
2 stalks of celery, chopped
1/2 medium onion, chopped
8 oz Swiss cheese, shredded and divided (save 4 oz)
TOPPING:
handful of Ritz crackers, crushed
4 oz Swiss cheese, saved

Steps:

  • 1. Heat oven to 350. Grease 9x13" baking dish.
  • 2. Put in a large bowl all ingredients EXCEPT cheese; stir.
  • 3. Add 4 oz cheese and stir again.
  • 4. Pour into greased 9x13" pan.
  • 5. Cover with aluminum foil. Bake for 45-50 minutes until rice is done.
  • 6. Uncover and top with crushed crackers and 4 oz of cheese.
  • 7. Bake another 10 minutes until cheese is melted and browned.

Delicious casserole that can be made any day of the week! Fancy enough for guests yet so comfy and tasty your family will ask you to make it. So versatile, it can be made from leftovers or pantry items. GREAT for those Thanksgiving leftovers. I know all these items are on my turkey day table in one form or another. A wonderful meal in one or serve with some plain noodles, rice or mashed potatoes. You can choose to make this FAST in the microwave or slower in the oven. Either way it is still on the table quickly and another of Mama's sneaky ways to get those veggies into the mouths of her babes! Not to mention find a creative way to get rid of all that leftover Thanksgiving food!

10 ounces broccoli florets or 1 1/2 cups broccoli, leftover cooked
12 ounces cooked turkey breast or 1 1/2 cups cooked turkey, leftover
1 1/4 cups turkey gravy or 1 (10 ounce) jar chicken gravy
1/4 cup onion, chopped
1/4 cup celery, chopped
1 tablespoon butter
1 cup herbed croutons

Steps:

  • Cook broccoli according to package. Drain and set aside.
  • In a greased casserole dish arrange turkey slices and place broccoli on top.
  • Pour 1 cup of the gravy over the broccoli. Reserve the remaining 1/4 cup.
  • Saute onion and celery in the butter until tender. Stir in croutons and reserved gravy.
  • Spoon this crouton mixture over the center of the casserole.
  • Microwave: Bake in microwave on full power about 8 minutes or until heated through.
  • OVEN: Bake in 350 degree oven until hot and bubbly, about 20 minutes. Faster if you heat the gravy in the microwave before assembling.
  • Note: This is also great with leftover broccoli and cheese or even broccoli, rice and cheese casserole. No need to adjust cooking time, just use that instead of the plain broccoli.

1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup butter, cubed
4 cups cubed cooked turkey breast
1 package (16 ounces) frozen broccoli florets, thawed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup cooked rice
1/2 cup shredded part-skim mozzarella cheese
1 can (2.8 ounces) French-fried onions

Steps:

  • In a large skillet, saute onion and celery in butter until tender. Stir in the turkey, broccoli, soups and rice; transfer to a greased shallow 2-1/2 qt. baking dish., Bake, uncovered, at 350° for 25-30 minutes or until bubbly. Sprinkle with cheese and French-fried onions; bake 5 minutes longer or until cheese is melted. Freeze option: Sprinkle cheese and French-fried onions over unbaked casserole. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

3 bunches fresh broccoli
2 -4 cups turkey, bite-size chunks
1 (10 ounce) can cream of mushroom soup (or chicken)
1/2 cup mayonnaise
1 teaspoon oregano
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350; grease a 13x9 pan.
  • Peel broccoli stems, cut into bite-size morsels; cut tops into bite-size pieces also.
  • In a medium saucepan with about a half-inch of water, steam-parboil broccoli in boiling water--just until broccoli is barely BRIGHT green; drain well, then pour into prepared pan.
  • Arrange the cut-up turkey (or chicken) over the broccoli.
  • In a small bowl, combine soup, mayo and oregano; spoon over turkey.
  • Sprinkle cheese over the pan.
  • Bake for 45 minutes and cheese is bubbly.

Steps:

  • Heat oven to 375.

Another favorite leftover dish usually contains leftover cooked poultry blended with freshly cooked pasta, such as thin spaghetti, spaghettini or vermicelli, with a cheese sauce spooned over and baked, such as a Tetrazzini. With this in mind, Craig Claiborne and Pierre Franey of The New York Times came up with the recipe that consists of thinly sliced cold turkey (light or dark), fettuccine, a cheese sauce (preferably made with Gruyere cheese) and bits of broccoli. It is then baked until bubbling and goes quite well with a chilled Burgundy-type wine, such as a lightly chilled Beaujolais or a nice full-bodied dry white wine.

1 bunch broccoli
5 tablespoons butter
2 tablespoons flour
2 1/2 cups milk
salt
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon cayenne pepper
1/2 cup heavy cream
2 egg yolks
1/2 cup gruyere cheese, cut into 1/4-inch dice (or Swiss)
fresh ground pepper
3 quarts water
9 ounces fettuccine pasta (fresh or dried)
1 lb roast cooked turkey (leftover boneless, skinless)
2 teaspoons finely minced garlic
3/4 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 425 degrees.
  • Trim or break off the flowerettes of the broccoli. There should be about 5 cups. Bring enough water to the boil to cover the broccoli pieces when they are added. Add the broccoli and cook about 3 minutes or until crisp-tender. Do not overcook. Drain thoroughly.
  • Melt 2 T. of the butter in a saucepan and add the flour, stirring with a wire whisk. When blended, add the milk, stirring rapidly with the whisk. When thickened and smooth, add the salt, nutmeg and cayenne. Add the cream and remove from the heat. Stir rapidly with the whisk while adding the egg yolks. Stir in the cheese. Set aside.
  • Bring the water to the boil in a saucepan and add the salt and fettucine. When the water returns to the boil, cook to the desired degree of doneness. (Fresh fettucine will cook in about 2-3 minutes; dried fettucine may require up to 9 minutes or longer.) Drain. Return the fettucine to the cooking utensil and add 1 T. of the butter. Add salt and pepper to taste and toss briefly.
  • Meanwhile, cut the turkey meat against the grain into thin slices. Spoon the fettucine into an oval baking dish (a dish measuring about 13x10x2-1/2 inches is ideal). Scatter the broccoli pieces evenly on top.
  • Heat 2 T. of the butter in a skillet and add the meat and garlic. Cook, stirring briefly, just to heat through. Scatter the slices over the broccoli. Spoon the cheese sauce over all. Sprinkle the grated Parmesan over the sauce. Place in the oven and bake 10 minutes. Run under the broiler until nicely browned on top, about 2-3 minutes.

1 (10.5 ounce) can Cream of Chicken Soup
8 ounces of sour cream
3 cups cooked turkey, diced (or rotisserie chicken)
1 box of stuffing mix, prepared - or leftovers
2 cups of frozen broccoli - or fresh
6 slices American cheese

Steps:

  • Preheat oven to 350°F
  • In a bowl, mix the chicken soup, sour cream & turkey OR 2 cups leftover gravy & turkey.
  • Place the turkey mixture in a sprayed 8x11 casserole dish.
  • Microwave broccoli for 2 minutes in pouch or box. If using fresh, boil for 5 minutes, until tender.
  • Drain water from broccoli well. Sprinkle warmed broccoli on top of turkey.
  • Cover broccoli mixture with prepared stuffing.
  • Bake for 18 minutes.
  • Remove from oven and top with American cheese.
  • Bake for another 2 minutes or until cheese is melted.
  • Remove from oven and devour immediately!
