LEFTOVER STEAK SOUP

You can make this easy low carb soup recipe in no time at all! Use leftover steak if you have it, or cook up some fresh sirloin. You will not regret it!

2 Pounds Top Sirloin Steak, Raw or already cooked
Kosher salt
2 Tablespoons Butter
2 Tablespoons Olive oil
1/2 Onion, diced
4 Cloves Garlic, minced
1 teaspoon Italian seasoning
1 teaspoon Dried parsley
1/2 teaspoon dried thyme
1 Pound Mushrooms, sliced
4 Cups Beef broth
1 teaspoon xanthan gum (click here to see my favorite brand on Amazon) ((you can also make a slurry))

Steps:

  • If you using already cooked steak, cut into 1 inch cubes and set aside. In a heavy bottom pot over medium heat, add the butter and olive oil. Continue to 3rd step.
  • For fresh steak: In a heavy bottom pot over medium high heat, add the butter and olive oil. Cut the fresh steak into 1 inch cubes and season with salt. Sear all sides and then remove from the pot. work in batches so you do not overcrowd the pot. Set cooked steak aside.
  • In the same pot over medium heat, add the diced onion. Cook until the onion is browned and softened. Now add in the garlic, herbs, and mushrooms. Continue to cook until the mushrooms are browned and soft.
  • Add in the beef broth and the xanthan gum. Bring the soup to a boil and cook for a few minutes to let it thicken.
  • Add in the steak and cook for a few minutes to heat through. Ladle into bowls and serve.

This is an extremely hearty soup that only gets better in the fridge! It is one of the only soups you will not have to jazz up on your own, and people will remember you for it! This is a great cold-weather soup, but my family requests it all year long.

2 tablespoons butter
2 tablespoons vegetable oil
1 ½ pounds lean boneless beef round steak, cut into cubes
½ cup chopped onion
3 tablespoons all-purpose flour
1 tablespoon paprika
1 teaspoon salt
¼ teaspoon ground black pepper
4 cups beef broth
2 cups water
4 sprigs fresh parsley, chopped
2 tablespoons chopped celery leaves
1 bay leaf
½ teaspoon dried marjoram
1 ½ cups peeled, diced Yukon Gold potatoes
1 ½ cups sliced carrots
1 ½ cups chopped celery
1 (6 ounce) can tomato paste
1 (15.25 ounce) can whole kernel corn, drained

Steps:

  • Melt butter and oil in a large skillet over medium heat until the foam disappears from the butter, and stir in the steak cubes and onion. Cook and stir until the meat and onion are browned, about 10 minutes. While beef is cooking, mix together flour, paprika, salt, and pepper in a bowl. Sprinkle the flour mixture over the browned meat, and stir to coat.
  • In a large soup pot, pour in the beef broth and water, and stir in the parsley, celery leaves, bay leaf, and marjoram. Stir in beef mixture, and bring to a boil. Reduce heat to medium-low, cover the pot, and simmer, stirring occasionally, until meat is tender, about 45 minutes.
  • Mix in the potatoes, carrots, celery, tomato paste, and corn; bring the soup back to a simmer, and cook uncovered, stirring occasionally, until the vegetables are tender and the soup is thick, 15 to 20 minutes. Remove bay leaf and serve hot.

I clipped this recipe year's ago and adapted it to use my leftover beef roast and steaks. Just chop up any leftover beef, throw it in a freezer bag and store until you have enough to make the soup. Also, save your leftover broth. It really makes the soup rich and flavorful. Great for a cold winter day!

1/2 cup chopped carrot
1/2 cup chopped celery
1/2 cup chopped onion
1 tablespoon margarine or 1 tablespoon butter
8 cups beef broth (if you don't have enough, make up the rest with water)
2 cups chopped cooked boneless beef roast (or steak)
1 (14 1/2 ounce) can diced tomatoes, undrained
1 cup quick-cooking barley
1 1/2 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 cup frozen peas

Steps:

  • In a large saucepan, saute carrot, celery & onion in butter until translucent.
  • Add the broth, water, beef, tomatoes, barley, salt, pepper, basil and oregano; bring to a boil.
  • Reduce heat, cover and simmer for 20 minutes, or until barley is tender, stirring occasionally.
  • Add the peas and simmer uncovered for 5 minutes.
