SIMPLE MACARONI AND CHEESE
A very quick and easy fix to a tasty side-dish. Fancy, designer mac and cheese often costs forty or fifty dollars to prepare when you have so many exotic and expensive cheeses, but they aren't always the best tasting. This recipe is cheap and tasty.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
- Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Add Cheddar cheese to milk mixture and stir until cheese is melted, 2 to 4 minutes.
- Fold macaroni into cheese sauce until coated.

- Prepare macaroni according to package.
- Drain.
- No need to rinse.
- Pour in large mixing bowl.
- Add sauce packet, sour cream, milk, and 2 cups of the cheese.
- Pour in casserole dish.
- Top with remaining cheese.
- Bake at 375F for about an hour or until nicely browned.

- melt butter.
- add flour, mustard and salt and pepper to sauce pan, cook 1 minute stirring contantly.
- add milk slowly with whisk.
- cook until just boiling, stir contstantly. remove from heat.
- Add cheddar cheese to butter flour mixture, mix thoroughly.
- pour macaroni into casserole dish. pour cheddar cheese mixture over macaroni. sprinkle with cheddar and parmesan cheese.
- put in oven on broil for 5 minutes or until cheese is melted and bubbly.

- Preheat oven to 425°. Cook macaroni according to package directions; drain., Meanwhile, sprinkle 1/4 cup bread crumbs into 36 greased mini-muffin cups. In a large saucepan, melt butter over medium heat. Stir in flour and seasonings until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in 1 cup cheddar cheese and Swiss cheese until melted., Remove from heat; stir in biscuit mix, eggs and 1/2 cup bread crumbs. Add macaroni; toss to coat. Spoon about 2 tablespoons macaroni mixture into prepared mini-muffin cups; sprinkle with remaining cheddar cheese and bread crumbs., Bake 8-10 minutes or until golden brown. - In a large saucepan, melt butter, stir in flour until smooth, gradually add milk, bring to boil- cook and stir for 2 minutes.

- Boil water and when boiling, add pasta.
- Mix butter and flour to make a roux in a saucepan. Take off the heat.
- Introduce and gradual mix in the milk to make sure it remains smooth.
- Return to heat and once bubbling, remove from heat.
- Stir in cheese until it has all melted.
- Drain the pasta into a casserole dish, add the cheese sauce and sprinkle the red Leicester on the top.
- Place under grill and remove when slightly browned.

- 1. Cook your macaroni in boiling water according to package directions, usually around 15 minutes until tender. Drain. Pour into a casserole dish and add butter, salt and pepper to taste.
- 2. Combine cream and velveeta cheese in a microwaveable measuring cup or dish; microwave 1 to 2 minutes. If the cheese is not completely melted, stir well and it will melt. Pour into the macaroni and mix well. Add more cream if sauce is too thick. Heat in microwave (or oven) for another minute or two to ensure it is hot enough to serve.
- 3. Tip: Top with fresh cooked crumbled bacon or chives.
