FRIED DRESSING PATTIES

FRIED DRESSING PATTIES image

I may have mentioned somewhere else that my mother-in-law used to make fried patties from leftover dressing. Well, here they are and they are delicious! 11-27-15

Provided by Ellen Bales

Categories     Other Side Dishes

Time 25m

Number Of Ingredients 3

2 c leftover sage dressing (or whatever kind you have)
all purpose flour
2 Tbsp butter or cooking oil

Steps:

  • 1. Shape leftover dressing into patties. If dressing is moist, you won't need to add anything--they should shape right up easily. If they are too dry to hold together, beat in an egg or a little milk.
  • 2. Coat the patties in flour. Heat butter or oil in a large skillet and add the patties, one at a time. Cook on one side over medium heat, about five or ten minutes. Turn patties once and cook on other side.
  • 3. When golden brown, remove to a paper towel to drain. Serve plain or with leftover gravy.

LEFTOVER CHRISTMAS LUNCH PATTIES WITH GOCHUJANG MAYO

Leftover Christmas lunch patties with gochujang mayo image

Eliminate Christmas food waste with these easy patties. Filled with leftover roasties, veg, stuffing and meats, they make a great brunch on Boxing Day

Provided by Rosie Birkett

Categories     Dinner, Lunch, Supper

Time 37m

Yield Makes 6-8 patties

Number Of Ingredients 20

200g leftover roast potatoes, finely chopped
150g leftover cooked carrots or swede, finely chopped
150g leftover cooked Brussels sprouts, finely sliced
100g leftover cooked stuffing, finely chopped or crumbled
50g leftover cooked cabbage, or 2 tbsp kimchi
1 garlic clove, grated
1 tsp grated ginger
splash of Tabasco
100g leftover cooked sausages, finely chopped
100g leftover roast turkey meat, shredded or finely chopped
50g cheese, grated (any kind)
2 tbsp bread sauce or mayonnaise
1 tbsp chopped herbs (coriander, parsley or chives all work well)
3 tbsp plain flour
3 tbsp semolina flour (or use an extra 2 tbsp plain flour)
1 tbsp toasted sesame oil
2 tbsp rapeseed oil or leftover turkey drippings, plus extra for moulding
6 tbsp mayonnaise
2-3 tbsp gochujang
1⁄2 lime, zested, plus 1-2 tbsp juice

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. To make the gochujang mayo, whisk together the mayonnaise, 2 tbsp gochujang and the lime zest and juice. Taste and add another 1 tbsp gochujang if you prefer more spice. Set aside.
  • To make the patties, mash the potatoes well in a large bowl using a potato masher or fork. Add the carrots or swede, sprouts and stuffing and mash to combine. Stir in the cabbage or kimchi and season well. Stir in the garlic, ginger, Tabasco, sausages, turkey, cheese, bread sauce or mayonnaise and herbs, mixing everything well until evenly combined. Put the flours in a second shallow bowl. Lightly oil your hands, and mould handfuls of the patty mixture into burger-sized patties. If they start to fall apart, add a little more bread sauce or mayonnaise. Lightly dust the patties in the flour mixture, then flatten them slightly between your palms.
  • When all the mixture has been used (you should have about six to eight patties), heat the sesame and rapeseed oils in a heavy-bottomed frying pan or skillet over a medium heat. Fry the patties undisturbed for 2-3 mins, until they have a golden crust (you'll need to do this in batches). Carefully flip and fry for another couple of minutes on the other side until golden. Transfer the fried patties to a baking tray and bake in the oven for 5 mins until deeply golden and crisp on the outside, and cooked through. Serve with the gochujang mayo.

LEFTOVER TURKEY AND MASHED POTATO PATTIES

Leftover Turkey and Mashed Potato Patties image

My mom usually bought a whole bird for Thanksgiving dinner but no one but Grandma would eat anything other than the breast resulting in a lot of leftover dark turkey meat. If your family is the same way this is a great way to get rid of that left over turkey. You can use chicken and fish instead of turkey.

  • Breakfast Stuffing Cakes. It makes the most sense to start with a breakfast idea, as the first meal after a turkey dinner is this one. Served with a side of bacon and a freshly cracked fried egg, it’s a great way to keep on loving those savory flavors right into the morning.
  • Turkey & Stuffing Dumpling Soup. Making dumplings out of stuffing? Genius. Making a soup from both turkey and stuffing leftovers? The perfect next-day comfort food.
  • Bacon Wrapped Stuffing Balls. The perfect appetizer and snack that will take little to no effort to make, but aims to please those palates! Incredibly simple in concept, these bite-sized snacks will be a popular appetizer without being too reminiscent of a holiday feast.
  • Leftover Casserole. Casseroles are a life essential. Why? Because all the prep is done in advance, meaning nobody needs to stand by the stove AND…you can freeze it to use at a later date.
  • Leftover Sandwich. This takes your stuffing, and all it’s best buddies and makes it into a gorgeous sandwich that you can feel good about eating after the holidays.
  • Stuffing Muffins. Let’s just call these STUFFINS! These leftover muffins look a little like cupcakes – but that’s not frosting you see on top, that’s mashed potatoes.
  • Stuffed Squash. Spaghetti squash is my favorite squash for one main reason – it’s easy to serve in boat form, filled with delicious things and then baked to perfection.
  • Mozzarella Stuffing Balls. Cubes of cheese encased in stuffing then rolled in panko and fried to perfection. These are something you’re going to be SAVING stuffing for, forget accidental leftovers.
  • Stuffing Stuffed Peppers. What to do with leftover turkey stuffing? Stuff it in something new! Peppers make a great little carrier for this – and brings a whole new flavor element to reinvent the leftovers.
  • Stuffing Waffles. The easiest fool-proof way to eat up that stuffing is by wafflefying them. It only takes a few ingredients added to the already-amazing leftover stuffing, and you’ve got yourself a whole new plate.

  • Then add in a couple slightly beaten eggs and flour. Start off with the smaller range of measurements. Then add more eggs or flour as needed. The stuffing should hold together in a small ball when the consistency is correct.
