JAMMIN' SALMON BURGERS

2 teaspoons freshly chopped parsley leaves
1/2 Vidalia onion, diced
2 eggs
1/2 cup panko bread crumbs
1/2 teaspoon cracked black pepper
1 teaspoon kosher salt
1 lemon, zested
4 tablespoons Dill Mayonnaise, recipe follows
Two 6 1/2-ounce cans Alaska skinless and boneless pink salmon, drained well
2 tablespoons grapeseed oil
1/2 cup mayonnaise
1/2 lemon, juiced
2 tablespoons freshly chopped dill leaves
Pinch cayenne pepper
1/2 teaspoon salt
1/2 teaspoon cracked black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • In medium bowl, combine, parsley, onions, eggs, panko, black pepper, salt, lemon zest and Dill Mayonnaise together. Add drained salmon and mix well together. Make 4 patties and set aside.
  • In a large skillet on medium, heat 2 tablespoons of grapeseed oil. Place burgers in skillet. Cook over medium heat until browned. Turn and brown other side. Place in oven for 3 to 4 minutes.
  • Serve on buns with Dill Mayonnaise.
  • Combine all the ingredients in a small bowl and set aside.

Absolutely, hands down, no doubt about it, the best recipe for fish tacos! Do your chopping ahead of time, as these tacos cook up fast! Fresh and light in taste, the flavor of delicious Alaskan Wild Salmon shines in this dish. You may also substitute halibut, or a similarly firm textured fish in place of the salmon. The leftovers are great served cold over a salad! I adapted this recipe from my mom's method of preparing salmon tacos.

1 lb salmon, skinned and cut into one inch cubes
1 tablespoon cumin
1 teaspoon chili powder
2 tablespoons olive oil
1 medium yellow onion, chopped
2 limes, quartered
2 (8 ounce) cans diced tomatoes with green chilies, drained (like Rotel)
1/2 bunch fresh cilantro, chopped
1 bunch green onion, chopped

Steps:

  • Toss cubed salmon in cumin and chili powder. Set aside.
  • Heat large skillet over medium and cook yellow onion 2 minutes, until it begins to soften.
  • Turn heat up to medium high. Add salmon to skillet. Lightly sear salmon cubes for about 2-3 minutes, turning gently (don't break the salmon into pieces!).
  • IMPORTANT: Do not over cook the salmon. This juicy recipe will keep steaming the salmon. The salmon should still be firm in the middle of the cube when you proceed to the next step.
  • Return heat setting to medium. Add canned tomatoes and chilies, cilantro and green onions. Gently incorporate and heat through.
  • Squeeze quartered limes over the salmon mixture, give it a quick stir, and plate up the salmon (I usually drain a little liquid off at this point).
  • Serve with warm flour tortillas, quality salsa, sour cream, sliced avocado, and crisp romaine lettuce.

Wondering how to make salmon patties? These salmon cakes are so tender and flakey on the inside, but crispy and perfect on the outside. Use up that leftover salmon with this healthy dinner idea!

1 lb. cooked salmon (chilled and flaked (~4 cups shredded salmon)*)
1 cup panko breadcrumbs
1 red bell pepper (finely diced)
1/2 small white onion (minced)
2 tablespoons chopped fresh parsley
1 tablespoon chili powder
1 tablespoon garlic powder
1 teaspoon salt
1/8 teaspoon smoked paprika
1 large egg
1 tablespoon mayonaisse
1 teaspoon tabasco sauce
3 tablespoons olive oil (divided)

Steps:

  • First, remove the skin from your salmon and discard. Then, place salmon into a large bowl and use a spoon to break the salmon up into small shredded chunks.
  • Next, add the breadcrumbs, bell pepper, white onion, parsley, chili powder, garlic powder, salt, paprika, egg, mayo, tabasco, and 1 tablespoon of olive oil to the bowl.
  • Using a spoon or hands, mix all of the ingredients together until the ingredients stick together and form a ball. Form the salmon patties by using a 1/3 cup scoop and make 10-12 small balls out of the salmon mixture. After all the balls are formed, carefully make patties out of each ball by gently patting them down between your hands. Set them on a plate and repeat until all the patties are made.
  • Next, heat a large skillet over medium/high heat. Add one tablespoon of olive oil to the pan. When the olive oil is fragrant, add 3-4 patties to the pan (if there is room) and cook them for 2-3 minutes on each side or until the salmon patties brown. Remove from heat. Add another tablespoon of olive oil and repeat until all the patties are cooked.
  • Enjoy them alone, on top of a salad, or get creative!

  • Trim and roughly chop the leeks and zucchinis and place in a large pan on a low heat with a lug of olive oil and the thyme leaves.
  • Cook gently for 30 minutes, or until soft and lightly golden, with the lid on for the first 15 minutes, stirring regularly. Once soft and sweet, season to perfection and leave aside to cool for 5 to 10 minutes.
  • Flake the salmon into the cooled leek and zucchini mixture, crumble in the feta, grate over the zest from the lemon, crack in the eggs and stir well to combine.
  • Layer the filo over the base of a lightly oiled ovenproof frying pan or dish (roughly 30cm), overlapping the sheets and letting them hang over the edge of the pan as you layer, Brush each sheet of filo with olive oil as you go.
  • Spoon in the salmon filling, then fold in the overhanging filo to form a lid. Brush the top with olive oil and finely grate over the Parmesan.
  • Bake on the bottom shelf of the oven for 45 to 50 minutes, or until cooked through, golden and crisp.
  • Meanwhile, slice the lettuce and cucumber. Mix the juice from the lemon, the extra virgin olive oil and a pinch of salt and pepper together, then drizzle over the salad.
