Leftover Rotisserie Chicken and Sausage Chili image

This easy-to-make chili recipe uses precooked rotisserie chicken and has just enough heat to give it a kick but is not too hot. Serve right away with your favorite chili toppings, or refrigerate and reheat gently before serving at another time.

⅛ cup olive oil
4 cups chopped yellow onions
⅛ cup minced garlic
2 red bell peppers, diced
2 yellow bell peppers, diced
2 teaspoons chili powder
½ teaspoon red pepper flakes, or to taste
½ teaspoon cayenne pepper, or to taste
1 teaspoon kosher salt
1 (28 ounce) can diced tomatoes in puree, undrained
1 (14.5 ounce) can chicken stock
1 (15 ounce) can red beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
¼ cup chopped fresh basil
1 rotisserie chicken, skin and bones removed
2 andouille sausage links, cut into small pieces
freshly ground black pepper

Steps:

  • Heat oil in a large pot over medium-low heat. Add onions and cook until soft and translucent, 10 to 15 minutes. Add garlic and cook 1 minute more. Add red and yellow bell peppers, chili powder, red pepper flakes, cayenne pepper, and salt and cook for 1 minute. Add tomatoes, chicken stock, red beans, black beans, and basil. Bring to a boil, about 5 minutes. Reduce heat and simmer, uncovered, for 30 minutes, stirring occasionally.
  • Add chicken meat and sausage to the pot with the chili and simmer, uncovered, for another 20 minutes. Season with black pepper.

This is our to-go chicken chili recipe during our roast chicken week. We'll roast whole chickens in the oven and save the leftovers for recipes such as this one. It's a great way to use up all the leftover chicken breast or even chicken thigh meat. Enjoy!

1 1/2 Tablespoons Cooking Oil
1 Onion (, chopped)
2 cloves garlic (, minced or crushed)
15 oz. crushed Tomatoes ((@ 2 cups))
7 oz. canned diced Green Chilies
1 1/2 cups (about) leftover Roast Chicken (, chopped)
15 oz. canned Beans ((Chili, Black, or Pinto, or whichever you prefer))
1 Red Bell Pepper (, chopped)
1/2 teaspoon ground Oregano
2 teaspoons ground Cumin
2 tablespoons chili powder
1/2 teaspoon paprika
1/2 cup water (about) (, or to desired chili thickness)
Salt (, to taste)
fresh cracked Black Pepper (, to taste)
sour cream, grated cheese, diced tomatoes, sliced green onions
bread, corn bread

Steps:

  • Heat a medium saucepan over medium-high heat and add oil. Add onions and garlic and cook until slightly translucent, about 2 minutes.
  • Add tomatoes and green chilies and cook for 2-3 minutes.
  • Add chicken, beans, bell pepper, oregano, ground cumin, chili powder, paprika. Add water to your desired thickness (usually about 1/2 to 1 cup).
  • Bring to a simmer then reduce heat and cook for 20-30 minutes.
  • Season with salt and pepper to taste. For gluten free, do not serve with bread or corn bread.

I've added pork to ground beef in chili before, but I've never tried it with all Italian sausage, and I loved the results. We Italian'd this up even more with cannellini beans and a touch of basil, but other than that, it's a fairly classic chili. Garnish with sour cream, avocado, red onion, and basil.

1 tablespoon olive oil
1 ¼ pounds hot Italian sausage, casings removed
1 ¼ pounds mild Italian sausage, casings removed
1 onion, chopped
salt to taste
2 tablespoons ancho chile powder
1 teaspoon paprika
1 teaspoon ground cumin
1 teaspoon ground black pepper
½ teaspoon chipotle chile powder
½ teaspoon dried oregano
2 ½ cups water, or as needed
1 cup tomato puree
2 (15 ounce) cans cannellini beans, drained and rinsed
1 red bell pepper, diced
1 green bell pepper, diced

Steps:

  • Heat oil in a large pot over medium-high heat. Cook and stir hot Italian sausage, mild Italian sausage, onion, and a pinch of salt together in the pot, breaking up sausage with a wooden spoon. Cook until sausage is browned and crumbly, and most of the liquid is evaporated, about 10 minutes.
  • Stir ancho chile powder, paprika, cumin, ground black pepper, chipotle chile powder, and oregano into sausage mixture; saute until fragrant, about 2 minutes.
  • Pour water and tomato puree into sausage mixture, bring to a simmer, reduce heat to medium-low, and cook on a steady simmer until sausage is tender, about 45 minutes. Add water as necessary and skim any fat that floats to the top.
  • Stir cannellini beans, red bell pepper, and green bell pepper into sausage mixture. Simmer until vegetables are tender, about 30 minutes. Season with salt to taste.
