LEFTOVER PORK AND VEGETABLES

Steps:
- In a skillet, saute the onion, red pepper and celery in oil until crisp-tender. Add the pork, carrots, mushrooms, gravy, broth, soy sauce and pepper. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until carrots are tender. Serve over rice.

LEFTOVER PORK IN OLIVE SAUCE
Adapted from the Woman's Day Encyclopedia of Cookery. The original recipe called for shortening, but I've substituted vegetable oil.

Steps:
- Heat oil in a large skillet and stir in flour.
- Cook, stirring, until light brown.
- Add salt, paprika, brown sugar, lemon juice, onion and water.
- Mix thoroughly and cook over low heat for 5 minutes, stirring constantly.
- Add meat, cover, and cook over low heat until heated through, about 10 minutes.
- Add olives and cook until heated through, about 5 minutes more.
QUICK DINNER USING LEFTOVER PORK TENDERLOIN
I'm always looking for ways to use up leftovers. I came up with this one last night, and it was delicious served over wild rice. I would rather have used a can of tomatoes, but hubby won't eat a cooked tomato that he can actually see...oh well!

Steps:
- In heavy sauce pan, saute onion and garlic in oil and butter until softened.
- Add wine, chicken bouillon and tomato sauce, bring to a boil.
- Cook uncovered at a low-boil for about 10 minutes. Add more wine or water if sauce is too thick.
- Slice tenderloin into 1/2" slices and place in sauce. (I flipped them right away so sauce was on top and bottom.).
- Cover pan and cook until pork is heated through, which shouldn't take more than 3-4 minutes.
- Serve over wild rice.
PULLED PORK SANDWICH
Oh what can I do with all this leftover pork roast??? Try these sandwiches. They are wonderful with a side of cole slaw--or just pile it on top.

- In a heavy skillet, combine pork with just enough water to cover. Add the vinegar, barbecue sauce and hot sauce. Bring to a boil and simmer over medium heat, covered until meat pulls apart, about 50 minutes.
- Remove pork from the sauce, shred and set aside.
- Simmer the sauce until it reaches the desired thickness.
- Stir the pork in the sauce and spoon onto hamburger buns.

LEFTOVER PORK CASSEROL
This is a recipe that I use to deal with leftover pork in roast, chop or pork loin form. It is very flexible in helping to use up other vegetables as well. You can even substitute the pork for leftover chicken too. A simple recipe that makes an easy meal. You can add diced mushrooms, partially cooked carrots, asparagus, peas and other vegetables that you wish to use. I've also sprinkled leftover bacon bits onto the casserole during the last five minutes of cooking. Adding a 1/2 package of onion soup mix to the soup mixture will also increase the flavour. If you want a thicker soup and are not adding the rice to the casserole dish, substitute the 5 ounces (1/2 the soup can) of milk with 8 to 10 ounces of sour cream. This alternative goes very well with egg-noodles rather than rice.

- Place skillet on medium-low heat. Add a tablespoon of butter.
- Peeled and coarsely chopped the onion into bite size pieces. Coarsely chop the celery. Add to the skillet. Stirring occasionally as it cooks.
- While onions and celery are cooking, break up the broccoli into florets. Add more if you like lots of broccoli. Cube the pork into bite-size pieces. Place these into a casserole dish.
- Mix the soup, milk and Worchester sauce together.
- When the celery and onions are partially cooked and the onions have begun to caramelize slightly, add to casserole dish. Poor soup mixture into casserole dish and mix together.
- Cook in 350 oven for 35 to 45 minutes, until bubbling and starting to brown along the edges.
- Meanwhile mix rice and water together. Bring to a boil and cook on medium heat until all water is absorbed, about 12 to 15 minutes, stirring occasionally.
- NOTE: You can also reduce the water by 1/2 cup and add the rice and the 1.5 cups water to the casserole dish, cover it and cook at 350 for one hour. This will allow the soup to flavour the long grain rice.
- Serve casserole on the rice.

LEFTOVER PULLED PORK STEW
A little too hearty to be called a soup, this recipe is a great way to use leftover pulled pork. Such a crowd pleaser, I can't keep it in my house! Great eaten with sour cream and crackers or your favorite tortilla chips.

- Heat olive oil in a large stockpot over medium-low heat. Add jalapenos, bell peppers, onions, and garlic and sweat in the hot oil, stirring occasionally, about 5 minutes. Add chicken stock, diced tomatoes, and tomato puree. Stir.
- Increase heat and bring mixture to a boil. Reduce heat to a simmer. Add pork, black beans, and corn. Season with cumin, chili powder, chipotle powder, sazon, cayenne, salt, and pepper. Simmer, stirring occasionally, until stew reaches desired consistency, about 45 minutes.
- Serve in bowls. Garnish each with Cheddar cheese, cilantro, and scallions.

- Melt butter in large sauce pan, add celery onion, garlic and bell pepper saute until just tender crisp, or until your liking stir in flour. add beef consomme, beef bouillon and stewed tomato's, worcestershire sauce , caraway seed and cook 30 minutes adding more liquid as needed, 10 minutes before serving add pork, black pepper and celery salt as needed, stir in sour cream heat and serve over buttered egg noodles.
