This is a recipe I made up after we had a bit of curry left-over from supper. I didn't feel like having exactly the same meal again, so I thought I would use the ingredients as a base for soup.

1 cup left-over vegetable curry
1 cup cooked rice
1 sweet potato, cubed
4 mushrooms, sliced
1 sweet pepper, diced
2 -3 cups vegetable broth
1 tablespoon oil

Steps:

  • Heat oil in a saucepan.
  • When ready, saute mushrooms, sweet potato and peppers for 2-3 minutes.
  • Add just enough broth to cover mixture and simmer until tender.
  • Mix in left-over rice and curry and puree with a hand blender, adding broth as needed until soup is as thick or as thin as you like it.

left over cooked chicken
3 green chilies
1 medium onion
2 tablespoons vegetable oil
1 piece fresh ginger, skinned
2 garlic cloves
4 tablespoons water (for ginger or garlic paste)
1 tablespoon turmeric
1 tablespoon cumin
1 tablespoon coriander
1 (13 ounce) can coconut milk (if you prefer more sauce use 2)
2 teaspoons black mustard seeds
salt

Steps:

  • chop the onion and chilis small.
  • In a blender put water ginger and peeled garlic and blend it.
  • If mixture is too thick add a bit more water.
  • The paste should be the consistancy of apple sauce.
  • set aside.
  • Heat the oil in the pan and add the onion and chilis, cook till the onion is transparent take onions/chilis out with a slotted spoon and put in the blender.
  • Add mustard seeds to oil and cook until they start to pop.
  • Add the ginger garlic paste and spices,fry for about a minute.
  • blend coconut milk with the onion and chilis in the Blender until the chilis are nothing but minute green specks.
  • In a pot heat chicken in a bit more oil.
  • Add the chicken to the spice mixture and add the blended coconut milk to the chicken, heat thoroughly.
  • add salt to taste serve with white basmati rice.
  • *note:add as many chilis as you want to make this dish spicier.

This soup is a great way to use up leftover turkey after Thanksgiving. The curry powder lends a Middle Eastern flair to this chunky winter soup. Add more or less curry powder to suit your tastes.

1 (10 ounce) package fresh Baby Spinach
3 tablespoons butter or 3 tablespoons margarine
2 cups onions, chopped
3 tablespoons all-purpose flour
2 1/4 teaspoons curry powder
2 (14 1/2 ounce) cans chicken broth
1 1/2 cups red potatoes, unpeeled and diced
3/4 cup carrot, peeled and diagonally sliced
3/4 cup celery, chopped
2 1/2 teaspoons fresh parsley, chopped
3/4 teaspoon rubbed sage
3 cups cooked turkey, chopped
2 cups half-and-half
1/2 teaspoon salt, to taste
1/4 teaspoon black pepper, to taste

Steps:

  • Remove stems from spinach; wash leaves thoroughly, pat dry. Set aside.
  • In a large Dutch oven, melt butter or margarine over medium heat. Add onion and cook, stirring frequently, until tender. Add flour and curry powder, stirring until smooth. Cook 3 minutes, stirring constantly. Gradually add broth, stirring until blended.
  • Add potato, carrots, celery, parsley, and sage; bring to a boil over medium-high heat, stirring frequently. Cook, stirring constantly, until mixture thickens slightly. Cover, reduce heat, and simmer 15 minutes.
  • Stir in spinach, turkey, half and half, salt, and pepper; cover and simmer 10 minutes, stirring occasionally. Adjust spices to taste before serving.
