Time 55m

Number Of Ingredients 17

2 tablespoons oil
1 large onion, chopped
1/2 teaspoon salt
3 cloves garlic, crushed
1 inch piece ginger, grated
2 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garam masala
3 cardamom pods
1/2 teaspoon cinnamon
1/2 teaspoon turmeric
1/2 teaspoon crushed red pepper
1/2 teaspoon coarse ground black pepper
1 x 400g can diced tomatoes
500ml chicken stock
250g cold roast chicken, roughly chopped
2 tablespoons plain yoghurt

  • Add garlic and ginger and stir for 2 minutes
  • Add spices and stir for around 2 minutes until the fragrance starts filling the kitchen.

  • Add the stock and bring to the boil. Let it bubble gently for around 20 minutes until thickened.
  • Add the roast chicken and warm through until you have the desired consistency of sauce.
  • Remove from heat and add in one spoonful of yoghurt. Make sure it is fully mixed in before you add the second spoonful. Gently warm through and serve.

Leftover Chicken Curry image

Fry onions, spices, and tomato puree to make a rich, comforting curry sauce for leftover chicken. Simmer for 15 minutes for a simple week-night curry.

Provided by Helen Best-Shaw

Categories     Main

Time 30m

Number Of Ingredients 10

1 tsp vegetable oil
½ onion
1 clove garlic
2 tsp curry powder
1 tsp turmeric powder
2 tsp plain flour
1-1.5 cups leftover roast chicken (diced into 1 cm cubes - 150g)
1 cup chicken or vegetable stock / broth (240ml)
1 tbsp tomato puree
salt and pepper

Steps:

  • Chop the onion and fry for a few minutes. Crush and add the garlic, and cook for about 2 minutes.
  • Add the turmeric, curry powder, and flour along with the chicken, and then stir until the meat is well coated. Cook for a further two minutes or so, to cook out the taste of the flour and bring out the aroma of the spices.
  • Add a little stock, and stir until you have a smooth paste. Add the rest of the stock slowly. Then add the tomato puree and stir again until well mixed.
  • Turn the heat down low. Cover and simmer for 15 minutes. Serve with flatbread or rice.

CHEESY COUNTRY HAM GRIT BALLS

Cheesy Country Ham Grit Balls image

Provided by Kardea Brown

Time 45m

Yield 10 to 12 servings

Number Of Ingredients 10

Canola oil, for frying
1/2 cup diced country ham
2 1/2 cups leftover cooked grits
1 cup grated smoked Gruyere cheese
1/2 cup all-purpose flour
1/2 teaspoon paprika
1/8 teaspoon cayenne pepper
3 large eggs, lightly beaten
1 cup panko breadcrumbs
Kosher salt

Steps:

  • Fill a large Dutch oven two-thirds full with oil and heat over medium-high heat to 360 degrees F.
  • Add 2 tablespoons oil to a large heavy-bottomed skillet over medium-high heat. Add the ham and cook just until browned, 4 to 5 minutes. Remove with a slotted spoon to a large bowl. Add the grits and cheese to the bowl and stir until combined. Using wet hands, scoop 1/4 cup of the grit mixture, roll it into a ball and place on a platter or large plate. Repeat until all the grit mixture is used.
  • Whisk together the flour, paprika and cayenne in a shallow bowl. In a separate shallow bowl, add the eggs. Add the panko to another separate shallow bowl. Dip each grit ball into the flour mixture and shake to remove any excess before dipping into the eggs and then into the panko, spinning to coat completely.
  • Add the grit balls to the Dutch oven in batches, frying until brown on all sides, about 5 minutes. Remove to a sheet pan lined with a wire rack and immediately sprinkle with salt.

12 MEALS TO MAKE USING YOUR LEFTOVER CURRY - JAPAN TODAY

From japantoday.com

Author Japan Today
  • Grilled Curry Sandwiches. A simple recipe (as long as you have a sandwich grill). Just stick a small amount of extra curry between two pieces of bread, add a slice of cheese if you please, grill, and you’ve got a delicious snack in just a few minutes.
  • Cheesy Curry Bake. Another easy recipe, though this one will be better if you have a larger amount of curry left over. Just put some rice in the bottom of a oven-safe dish, add your left over curry, top it with a hard boiled egg yolk, sprinkle with parmesan cheese, and pop it in the oven.
  • Curry Cream Pasta. Make a creamy curry pasta with very little effort. All you need to do is add three tablespoons of cream to one cup of leftover curry.
  • Curry Yakisoba. Yakisoba is another one of those easy to make Japanese dishes, but if you’re tired of the plain old stuff, just add leftover curry to the mix for a twist on a Japanese favorite.
  • Kimchi Curry Fried Rice. Most people should know how to cook fried rice, so spice up your usual dish with some kimchi and, of course, some leftover curry.
  • Curry Paella. This one takes a little more effort, but if you do it right, the results will impress your friends. Saute one clove of garlic, one medium onion, squid (cut into rings), green beans, and shimeji mushrooms.
  • Curry Soba. If you know your way around a soup stock, you should be good with this one. Make a broth using your leftover curry, dashi stock, hot water, green onions and a little splash of mirin and cooking sake.
  • Curry Udon. This one is similar to the curry soba, but this time, try adding in soy sauce and abura-age (fried tofu skins). Then substitute soba noodles for udon and you have yourself a slightly different noodle dish.
  • Curry Wonton. This one looks fancy, but it’s actually not too difficult. Add small dollops of your leftover curry to the middle of a dumpling wrapper.
  • Curry Eggroll. Okay, so the recipe we found for curry egg rolls might surprise you, so feel free to get creative and add anything you like to the middle.
