This Horchata is the kind that is served in "neverias" or ice-cream shops in Mexico. It is creamy and easy to do. Grinding the rice twice brings out all the starch and flavor. Prep time is the time needed for the rice to soak. One reviewer stated that I don't know what I'm talking about and that the rice should be soaked overnight...if you choose to soak it longer, the result will be the same and you will still need to strain it as stated---twice. I do know what I'm talking about: I'm Mexican and live in Mexico.

3/4 cup rice
2 teaspoons ground cinnamon or 1 in cinnamon stick
1 1/2 teaspoons good vanilla (Mexican is best)
1/2-3/4 cup sweetened condensed milk
water, as necessary

Steps:

  • Rinse the rice in a colander. Place in a blender and add enough water to cover by an inch; soak 5 or 10 minutes. Add the vanilla and cinnamon and blend until finely ground. Drain the liquid through colander into a pitcher.
  • Return the ground rice to the blender. Add the condensed milk and about 2 cups water and blend again. Drain into the pitcher. Discard any remaining rice.
  • Add more water to the pitcher, one cup at a time, until it has the right amount of sweetness for you. Add ice and serve cold.
  • Note: you can add 1 cup sugar or so and 1 cup milk, instead of the sweetened condensed milk . I suppose you could use rice or even soy milk, but I haven't tried it.

1 cup uncooked long grain white rice
3 ½ cups cold water
1 (12 fluid ounce) can evaporated milk
½ cup white sugar
½ teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Place the rice in a bowl with enough water to cover it and let it soak overnight.
  • Strain the rice and discard the water. Stir the cold water and evaporated milk together. Place the drained rice into a blender along with half of the diluted milk. Blend until the rice is finely ground, about 30 seconds. Add the sugar, cinnamon, and vanilla; blend well. Pour in the remaining diluted milk; blend.
  • Line a strainer with two layers of cheesecloth. Place the strainer over another bowl to catch the liquid. Strain the rice milk through the cheesecloth, discard the solids. Repeat the process if necessary. Serve over ice.

Horchata de morro is a popular Salvadoran drink made from a blend of spices and seeds such as morro, cocoa, sesame, peanut and others.

1 lb morro seeds
1¼ cup white rice
¾ cup golden sesame seeds
¾ cup peanuts ((without skin))
1 cup squash seeds
¾ cup cocoa beans
4 tablespoons cinnamon powder
2 whole nutmeg
6 tablespoons coriander seeds
5 whole allspice berries
Sugar ((to taste))
A few drops of vanilla extract ((optional))

Steps:

  • Roast all the ingredients separately, taking care not to burn the rice.
  • The roasting time is different from one ingredient to another and can be done in an oven, in a pan or on a hot griddle.
  • Mix all the ingredients together in a food processor until obtaining a fine powder.
  • It is important to mix them dry (without adding water), as the powder for the horchata can be kept to prepare the drink later and it will last longer, because all the ingredients will maintain their natural moisture.
  • It is also recommended to keep the ground mixture in an airtight container which will keep the aroma longer.
  • Add very cold water or very cold whole milk to the previously prepared powder.
  • Add 1 tablespoon for ½ cup 9250 ml) of liquid (water or milk).
  • Add the natural vanilla extract (optional).
  • Stir for 1 minute.
  • Filter the preparation through a cheesecloth.
  • Sweeten according to taste.

Growing up in Chicago, we ate a ton of amazing Mexican food. Most of my favorite Mexican places had horchata de arroz, a rice milk spiced with cinnamon. It's sooooo good! This version blends horchata into a frozen latte. Espresso mixed with cinnamon and creamy milk is the most delicious way to get a brunchtime caffeine buzz.

1 cup long-grain white rice
1/2 cup blanched almonds
2 cinnamon sticks
2 shots espresso (4 ounces), cooled
2 tablespoons sugar
2 large scoops vanilla ice cream
10 ice cubes (approximately 2 cups)
Whipped cream, for topping
Ground cinnamon, for dusting
Chocolate sprinkles, for serving

Steps:

  • In a high-speed blender, add the rice, almonds, cinnamon sticks and 2 cups water. Blend until the cinnamon sticks are broken up. Cover and refrigerate for at least 8 hours and up to 14 hours.
  • Strain the rice mixture through a fine-mesh strainer, reserving the liquid. Add the liquid to a blender with the espresso, sugar, ice cream and ice cubes. Blend until smooth. Divide the shake into 2 cups. Top with whipped cream, dust with cinnamon and sprinkle with chocolate sprinkles.

2/3 cup medium-or long-grain white rice
3 cups warm water
1 (2-inch) piece Mexican cinnamon stick
1 cup sugar, or more if needed
2 cups whole milk
Ground Mexican cinnamon

Steps:

  • Put the rice in a blender or spice grinder and process until completely pulverized, with a flour like texture. (Alternatively, you can leave the rice whole if you prefer.) Combine the rice powder, warm water, and cinnamon stick and stir with a whisk until well combined. Cover and refrigerate for at least 5 hours or overnight.
  • Transfer the mixture to a blender and blend until as smooth as possible. It will feel slightly grainy but should not be gritty. Strain into a pitcher through a sieve or colander lined with a couple layers of cheesecloth, pressing the solids with the back of a wooden spoon to extract as much liquid as possible. Stir in the sugar and milk, then taste and add more sugar if you like.
  • Refrigerate until completely chilled. Serve over ice, topped with a sprinkling of the ground cinnamon.
  • In downtown Oaxaca's Mercado 20 de Noviembre, there's a stand called Doña Casilda, where they add about 2 tablespoons worth of chunks of cantaloupe and red prickly pear and 1 tablespoon of pecans-or a combination of those-to a tall glass of horchata, depending on your preference. The prickly pear makes the horchata turn a light shade of pink, and the chunks of fruit and pecans complement the horchata wonderfully.
  • Or, to make a coconut horchata, add 1/2 cup of ground blanched almonds to the rice powder mixture before you soak it, and 1 cup of fresh coconut flesh when blending the rice mixture. If the consistency is too thick, add water.
  • To make a nut horchata, add 1 cup of raw nuts (almonds, cashews, or peanuts) to the rice powder mixture before soaking, then proceed as directed.
