If you want to take this dish to the next level, invest time in cooking your leeks super-slowly until sticky and sweet.

6 large leeks
2 cloves of garlic
5 sprigs of fresh thyme
olive oil
1 knob of unsalted butter
100 ml single cream
100 g Cheddar cheese
50 g Parmesan cheese
100 g brie

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Trim, wash and slice the leeks, about 2cm thick, at an angle. Peel and slice the garlic, then pick the thyme leaves.
  • Put a large casserole-type pan (ideally one you'd be happy to serve in) on a medium heat and add a drizzle of oil, the butter, thyme leaves and garlic.
  • Cook until it begins to bubble and fry, then stir in the leeks. Continue cooking and checking on it every few minutes to stir and make sure it doesn't catch.
  • At this point, you have two choices: one is good, one is great. You can either stir the rest of the ingredients into the leeks, grating in the Cheddar and Parmesan, and tearing in the brie, then put it into the oven to cook for 45 minutes uncovered, or, if you want the sweetest leeks in the world (and I think you do), do the following...
  • Turn the heat under the pan down a little and cook the leeks for about 35 minutes, or until soft and intensely gorgeous, stirring every now and then.
  • Season, then spoon it all into a dish, or leave in the pan.
  • Stir in the cream and splash of water, grate over the Cheddar and Parmesan, then pull the brie into parts and bomb those on top.
  • Pop in the oven for 15 minutes, or until golden and bubbling.

A creamy supper dish that's cooked in one pot, and is easily made vegetarian

125ml stock (made with a cube - whatever you've got)
carton double cream
150ml milk
1 garlic clove, crushed
1 bay leaf
a knob of butter, for greasing
800g potato, peeled and thinly sliced
2 leeks, washed and thinly sliced
175g sliced ham, chopped (optional)
85g cheddar, grated

Steps:

  • Pour the stock, cream and milk into a small saucepan, add the garlic and bay leaf and bring to the boil. Remove from the heat, cover and let the flavours infuse while you get on with the rest of the dish.
  • Preheat the oven to 180C/gas 4/fan 160C. Butter a 2 litre gratin dish well. Mix the potatoes, leeks and ham (if using) together in the dish, and spread out in an even layer. Pour over the stock mixture and tuck the bay leaf in the middle. Season and sprinkle with the cheese.
  • Stand the dish on a baking tray to catch any spills. Loosely cover with foil and bake for 30 minutes. Test the potatoes with a knife - they should be just beginning to soften. Remove the foil and bake for another 35-45 minutes, spooning some of the stock mixture over every now and again until the potatoes are tender. Cool for 15 minutes before serving.

Another healthy recipe from Martha Rose Shulman of the New York Times. Makes a great vegetarian main dish or, in smaller portions, a satisfying side dish.

1 garlic clove, cut in half
1 tablespoon extra virgin olive oil
1 lb leek, white and light green parts only, cut in half lengthwise, sliced and rinsed of sand
salt & freshly ground black pepper
1 teaspoon cumin seed (lightly toasted and crushed in a mortar and pestle or a spice mill)
2 lbs russet potatoes or 2 lbs yukon gold potatoes, peeled if using russets, scrubbed if using Yukon golds, and sliced 1/4 inch thick
3 ounces gruyere cheese, grated (3/4 cup, tightly packed)
2 1/3 cups low-fat milk

Steps:

  • Preheat the oven to 375ºF. Rub the inside of a 2-quart gratin or baking dish with the cut side of the garlic clove. Brush lightly with olive oil.
  • Heat the remaining olive oil in a wide, heavy nonstick skillet over medium heat and add the leeks. Cook, stirring often, until tender, for about 5 minutes. Add 1/2 teaspoon salt and freshly ground pepper to taste and stir in the crushed cumin seeds. Stir together for half a minute and remove from the heat.
  • Place the potatoes in a large bowl and season generously with salt and pepper. Add the leeks mixture and half the cheese, and toss together. Arrange in the baking dish in an even layer. Pour in the milk. Place the baking dish on a baking sheet and place in the oven.
  • Bake the gratin for 45 minutes, checking after 30 minutes and pressing the potatoes down into the milk with the back of a spoon. At 45 minutes, remove the dish from the oven and again press the potatoes down into the liquid. Sprinkle the remaining cheese over the top and bake for another 30 to 45 minutes, or until nicely browned. Remove from the heat and allow to sit for 10 to 15 minutes before serving.

5 tablespoons unsalted butter
4 lbs leeks, white and light green portions, rinsed well, cut into 1/4-inch rings
1 1/2 tablespoons kosher salt
1 teaspoon minced fresh thyme
1/4 teaspoon freshly grated nutmeg
3/4 teaspoon fresh ground pepper
1 cup heavy cream
6 ounces gruyere cheese, grated
3 ounces parmigiano-teggiano cheese, grated
3 lbs russet potatoes, peeled, cut into 1/4-inch slices
3 tablespoons minced fresh chives

Steps:

  • In 12" nonstick fry pan over medium heat, melt 4 Tbs. butter. Add leeks and salt, stirring to coat leeks with butter. Cover and cook, stirring occasionally, until leeks are tender, about 20 minutes.
  • Add thyme, nutmeg, pepper, and cream. Simmer, uncovered, stirring occasionally, until thickened, about 15 minutes. Transfer to bowl. Let cool. Wipe out pan, grease, with 1 Tbs. butter.
  • Preheat oven to 400 degrees F.
  • In bowl, combine cheeses. Layer one-third of potatoes in fry pan. Spread one-third of leek mixture on top. Sprinkle with one-third of cheeses, then
