1 (9 inch) frozen single pie crust, thawed
3 leeks - white and light green parts only, halved lengthwise, and sliced
3 eggs
½ cup heavy whipping cream
½ cup milk
2 tablespoons chopped fresh chives
¼ teaspoon ground nutmeg
¼ teaspoon salt
¼ teaspoon ground black pepper
2 ounces soft goat cheese, crumbled

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Prick pie crust all over with a fork; place on a baking sheet.
  • Bake in the preheated oven until lightly golden, about 15 minutes. Remove crust and set aside to cool slightly; reduce oven temperature to 375 degrees (190 degrees C).
  • Bring a large pot of water to a boil and simmer leeks just until tender, about 7 minutes; drain thoroughly.
  • Whisk eggs, heavy cream, milk, chives, nutmeg, salt, and black pepper together in a bowl. Spread leeks evenly over bottom of pie crust; dot with goat cheese. Pour egg mixture over leeks.
  • Bake in the preheated oven until puffed, lightly browned, and a sharp knife inserted near the center comes out clean, 40 to 50 minutes. Remove to cool until warm or room temperature before serving.

1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 cloves garlic, thinly sliced
1 5-ounce package chopped mixed winter greens, such as kale and/or chard (about 8 cups)
Kosher salt
1 sheet frozen puff pastry, thawed (half of a 17-ounce package)
All-purpose flour, for dusting
5 ounces goat cheese, crumbled (about 3/4 cup)
1/2 cup grated Parmesan cheese (about 1 ounce)
4 large eggs
1 cup heavy cream
1/4 teaspoon ground nutmeg
Freshly ground pepper

Steps:

  • Preheat the oven to 425 degrees F. Heat the olive oil and butter in a large skillet over medium-high heat. Add the garlic and cook until softened, about 1 minute. Add the greens and 1/2 teaspoon salt; cook, stirring occasionally, until the greens wilt and most of the liquid evaporates, 5 to 7 minutes.
  • Meanwhile, roll out the puff pastry on a lightly floured surface until large enough to fit in a 9-inch pie plate. Ease into the pie plate and trim the edge; crimp if desired. Scatter the goat cheese and Parmesan in the crust, then top with the sauteed greens.
  • Whisk the eggs, heavy cream, nutmeg, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl; pour over the greens. Bake until the crust is golden brown and the quiche is set, about 20 minutes. Slice into wedges.

Tried a leek quiche at a friends house, and even though my partner doesn't like leeks, he like that one. This is my version as I didn't want to ask for the recipe, but I reckon this one beats it hands down anyway :) Also, had to remove crust as doing a carb-reduced diet.

1 large leek (white and green parts)
3 slices smoked bacon
7 eggs
2 tablespoons Dijon mustard
1/2 cup milk
2 tablespoons cream
2 tablespoons flour
1 cup tasty cheese
1/2 cup tasty cheese (additional)
20 g butter
salt
pepper

Steps:

  • Turn on oven to 180°C to let oven come up to temperature.
  • Slice leeks finely. Slice bacon into strips, and again into pieces. Grate cheese.
  • Fry bacon with a little butter, then add leek and fry until soft. Remove from heat and set aside.
  • In a bowl, break all eggs. Whisk and add dijon mustard. Continue whisking.
  • In a shaker, add milk, cream and flour. Shake to mix, then add to egg mix whilst continuing to whisk. Season with salt & pepper.
  • Add first measure of cheese and mix well with egg mixture.
  • Assemble leeks and bacon in quiche dish (26cm), add egg mixture and use hand to mix all together.
  • Add remaining grated cheese to top of mixture and sprinkle with paprika (optional).
  • Bake for 20-25 minutes at 180°C, or until center is set.

The recipe is from America's Test Kitchen, with some minor modifications made by me (highlighted in italics). Goat cheese should be fairly easy to find in any decent supermarket. I found the best value for it at a warehouse club, where they were charging less for a pound of it than a normal grocery store charged for half the amount. Make sure to wash leeks thoroughly, as they can be gritty.

2 tablespoons unsalted butter
2 large eggs
2 large egg yolks
3/4 cup whole milk
3/4 cup heavy cream
1/2 teaspoon table salt

1 pinch fresh grated nutmeg
4 ounces mild goat cheese, crumbled
1 (9 inch) partially baked pie crusts, baked until light golden brown, 5 to 6 minutes (warm)

Steps:

  • Adjust oven rack to center position and heat oven to 375 degrees.
  • Sauté white parts leeks in butter over medium heat until soft, 10-15 minutes.
  • Meanwhile, whisk all remaining ingredients except goat cheese in medium bowl.
  • Spread goat cheese and leeks evenly over bottom of warm pie shell and set shell on oven rack.
  • Pour in custard mixture to 1/2-inch below crust rim.
  • Bake until lightly golden brown and a knife blade inserted about one inch from the edge comes out clean, and center feels set but soft like gelatin, 32 to 35 minutes.
  • Transfer quiche to rack to cool. Serve warm or at room temperature.

I got this recipe out of either Gourmet or Bon Apetite years ago. The bacon and leek combination with the nutmeg is great. It is easily doubled, reheats in the microwave easily, and freezes well. We often have this for breakfast during the week.

1 9 inch deep dish pie shell, unbaked and chilled
3 slices bacon
3 leeks, cleaned and sliced thinly (I use the white and about 1 to 1-1/2 inch of the green)
3 whole eggs, plus
1 egg yolk
1 egg white, slightly beaten
1/2 cup half-and-half
1/2 cup heavy cream
1 cup Italian cheese blend (I use Sargento's)
1/4 teaspoon dried herbes de provence or 1/4 teaspoon dried Italian seasoning
1/8 teaspoon fresh ground nutmeg, if you don't have fresh,skip it
paprika, optional

Steps:

  • Cook bacon until crisp, but do not over cook.
  • Set aside to drain.
  • Drain off fat from pan, leaving just a light coating in the pan.
  • Add the sliced leeks, and cook over medium until wilted and limp, but do not brown.
  • Set aside to cool.
  • Preheat oven to 350.
  • Brush pie crust with the beaten egg white.
  • Finely chop the bacon and sprinkle evenly over the bottom of the pie crust.
  • Sprinkle the leeks evenly over the bacon.
  • Sprinkle the cheese evenly over the leeks.
  • Beat the whole eggs, egg yolk, cream, half and half, herbs and nutmeg until well mixed, slightly thick and a lemon color.
  • Slowly pour over the bacon, leek and cheese mixture.
  • Smush down the cheese that floats to the top to coat with the egg mixture.
  • It will settle down while baking.
  • Sprinkle the top with paprika for a little extra color, if you like.
  • Bake at 350 for about 35 min, or until knife inserted off center comes out clean.
  • Let set 30 minutes before cutting.
  • This can be served warm, room temperature or cold.
  • I have made this for vegetarians without the bacon, and it is still quite good.

1 sheet of 9-inch pie dough, refrigerated
3/4 lb leek, about 3 medium, white and pale green parts
2 tablespoons butter, unsalted
1/4 lb smoked ham, thinly sliced
1 cup gruyere cheese, coarsely grated
1 cup Fontina cheese, coarsely grated
1 cup mozzarella cheese, coarsely grated
3 eggs
1/8 teaspoon nutmeg, freshly grated
1/4 teaspoon pepper
1 3/4 cups creme fraiche, from two 8 oz containers

Steps:

  • Use a 9-inch pie plate. Prebake pie dough in pie plate according to package instructions, then remove from oven and reduce temperature to 350 degrees.
  • Meanwhile, halve leeks lengthwise and cut crosswise into 1/2-inch pieces, then wash well in a bowl of cold water, agitating leeks. Lift out and drain leeks in a colander and pat dry. Melt butter in a 10-inch heavy skillet over moderately low heat and cook leeks, stirring occasionally, until very tender, 8 to 10 minutes.
  • Line warm pie shell with sliced ham, overlapping layers as necessary to cover bottom and side of pie shell completely. Toss cheeses together and sprinkle evenly into pie shell (do not pack cheese), then spread leeks evenly on top of cheese.
  • Whisk together eggs, nutmeg, and pepper until combined well, then whisk in creme fraiche until smooth.
  • Carefully pour half of custard on top of pie filling, gently moving cheese with a spoon to help custard disperse evenly. Slowly add remaining custard in same manner. Cover pie loosely with foil, gently folding edges over crust (keep foil from touching top of cheese mixture) and transfer to a baking sheet.
  • Bake until center of filling is puffed and set (center will be slightly wobbly but not liquid), and 1 1/4 to 1 1/2 hours. Cool on a rack at least 20 to 30 minutes before serving (filling wll continue to set as it cools).
  • Quiche can be made 3 days ahead and cooled completely, uncovered, then chilled, wrapped in plastic wrap. Reheat quiche (uncovered) in a 350 degree oven until warmed through, about 15 minutes.

2 large leeks , sliced
2 rashers back bacon , chopped
1 x 210g sheet ready-rolled puff pastry
1 tbsp crème fraîche
1 tbsp Dijon or wholegrain mustard
2 slices firm Welsh goat's cheese , from a 100g log (we used Pant-Ysgawn Farm organic goat's cheese)

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Heat the oil in a frying pan, then soften the leeks for 5 mins. Add the bacon, cook for a further 5 mins, season, then tip onto a plate to cool.
  • Unroll the pastry and cut out two 12 x 18cm rectangles - save or freeze the rest for another time. Lift onto a baking sheet. Using the tip of a sharp knife, mark a border inside each one, about 1.5cm from the edge.
  • Mix the crème fraîche and mustard together, then spread over the inside of the pastry frames. Spoon the leek and bacon mix over the mustard mix, then place the goat's cheese on top. Bake for 15-20 mins until the pastry is crisp and golden. Serve with salad.

1 lb bacon, cooked crisp, drained, and crumbled

1 1/2 cups cheddar cheese, grated
8 eggs, beaten
2 cups evaporated skim milk
1 large tomatoes, thinly quartered

Steps:

  • Preheat oven to 350°F.
  • Spread leek and bacon over bottoms of two baked & cooled pie crusts. Set aside.
  • In bowl, beat eggs and whisk in evaporated milk, set aside.
  • In heavy saucepan, melt cheese with mustard, garlic, and worcestershire sauce. Mixture should be completely melted and look like a big glob. Remove from heat.
  • Right away, start to stir in the egg/milk mixture, a little at a time, until smooth (Be patient, this takes a lot of stirring/whisking).
  • Pour an equal amount into each pie crust.
  • Wrap foil loosely around crust to prevent it from overcooking. Try not to let the foil touch the filling.
  • Bake quiches for about 30 minutes, then remove from oven and arrange tomato wedges around the edges.
  • Return to oven and finish baking, about 5-10 minutes, or until knife inserted near center comes out clean.
  • Cool slightly before serving.

  • In a skillet, saute the bell pepper and bacon over medium heat until bacon until it's midway to crisp. Add the diced ham and butter. Continue to cook for about 3-4 minutes to just warm the ham through.
  • Coat a pie plate or baking dish with cooking spray. Pour the skillet contents into it. Sprinkle with half of the goat cheese. Pour the egg mixture over it. Sprinkle the remaining goat cheese on top.
  • Bake for 30 minute Remove from oven and let stand for 10 minutes. Slice and top with the garnish toppings (divided among the servings).
  • You can substitute a combination of milk & heavy whipping cream or similar depending on your taste, allergies, or fat content preferences.

  • In a food processor, add the flour, salt, dried thyme and butter. Pulse the mixture until small pebble-size pieces of butter are visible. Whisk the egg yolk and the cold water together and pulse quickly until the mixture just begins to come together in a ball.
  • Transfer the mixture to a lightly floured surface and press into a ball with your hands. Do not knead the pastry dough. Flatten the ball into a smooth disk about 1-1/2 inches thick and wrap it in plastic wrap. Refrigerate for 20-30 minutes
  • Remove the chilled pastry dough from the refrigerator and roll into a circle, (about 14-inches). Carefully fit the pastry into a 11-inch removable bottom quiche pan, fitting the dough into the edges of the pan with the back of a curled finger. Trim the dough about 1-inch and fold to the inside, creating a double thickness on the rim. Press and crimp all around the rim of the pan. Poke holes with a fork to the inside bottom and rim and place in the freezer for 30 minutes.
  • Spray a piece of foil with non-stick oil and press firmly against the frozen pastry. Fill with pie weights or dry beans. Place on a baking sheet and bake for 10-minutes. Transfer to the workspace and remove the pie weights and foil. If the sides appear to have slumped, press back into shape with the back of a spoon.
