HEALTHIER STUFFED PEPPERS
This healthier stuffed peppers recipe uses an assortment of colored peppers, lean ground beef, brown rice, fresh onion and garlic, and natural tomato sauce. So colorful and so healthy!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Bring brown rice and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 45 to 50 minutes.
- Cook and stir beef, garlic, and onion in a skillet over medium heat until meat is evenly browned and onion is softened, about 5 minutes.
- Remove and discard the tops, seeds, and membranes of the green, red, and yellow bell peppers. Arrange peppers in a baking dish with the hollowed sides facing upward. Slice the bottoms off the peppers if necessary so that they stand upright.
- Mix the browned beef, cooked rice, 1 can tomato sauce, Worcestershire sauce, salt, and pepper in a bowl. Spoon an equal amount of the mixture into each hollowed pepper. Mix the remaining tomato sauce and Italian seasoning in a bowl, and pour over the stuffed peppers.
- Bake in the preheated oven, basting with sauce every 15 minutes, until the peppers are tender, about 1 hour. Sprinkle the peppers with grated Parmesan cheese after baking.

WW HEARTY STUFFED BELL PEPPERS
This is a classic, old-fashioned stuffed bell pepper. The recipe is adapted from Weight Watchers Take 5 - 150 Five-Ingredient Recipes cookbook. I use red peppers because they are sweeter. I also use the hot and spicy V 8 for zing. I also use Uncle Ben's Tomato Basil or Spanish Rice and have sub ground turkey for beef. Can cover and bake in a 350 degree oven for 55-60 minutes or until peppers are tender and beef mixture is cooked through. Cook time includes rice cool down time. Per serving (1 bell pepper with 5 tablespoons sauce): 186 calories, 5 grams fat, 2 grams fiber. 4 points

Steps:
- Cook the rice according to package directions, omitting the butter or vegetable oil. Cool 10 minutes.
- Meanwhile, with a sharp knife, slice off the top of each bell pepper and remove the seeds. Set aside. Remove and discard stems and chop remaining pepper tops.
- Combine the cooked rice, the ground beef, onion, chopped pepper, garlic, 1/4 cup of the vegetable juice, the Parmesan, and spices in a medium bowl. Spoon the rice mixture, dividing it evenly, into the bell peppers.
- Place the bell peppers in a deep 3-quart sauce pan; pour the remaining 1 1/4 cups vegetable juice around the bell peppers.
- Set pan over medium high heat. Bring to a boil; reduce heat to simmer and cover.
- Simmer until peppers are tender and beef is cooked through, 20 - 30 minutes.
- Place each bell pepper in a serving bowl and serve with the sauce.

DELICIOUS CROCK POT STUFFED BELL PEPPERS
I was searching for a good stuffed bell pepper recipe that I could put in the crock pot and didn't find what I was looking for. I came up with this one and they were absolutely DELICIOUS!

Steps:
- Remove tops of peppers, remove seeds and clean out.
- Place in crock pot so that all 5 peppers stand up right.
- Mix beef, onion, basil, oregano, thyme, rosemary, garlic, garlic salt, salt and pepper. (I mixed with my hands).
- Add rice to thicken the mixture.
- Add Worcestershire sauce and 8 oz. can of tomato sauce. (I now mix with a spoon).
- Spoon mixture into each pepper until pepper is full.
- Pour 14 oz. tomato sauce over each pepper and on the side of the peppers (to go in the bottom of the crock pot).
- Add 4-6 oz. water (I used the tomato can to use the rest of the sauce) on the sides of the peppers so that they are sitting in the sauce/ water mixture.
- Cook on low for 6-8 hours.

PERFECT STUFFED BELL PEPPERS
I know there are tons of stuffed bell peppers recipes already posted -- but I didn't see this one. Some of the members of my family don't actually eat the bell pepper (for others, that's the best part) -- but EVERYONE loves the stuffing! Sometimes I'll double the stuffing part and if I don't have enough peppers, I just put it in a little casserole dish and watch everyone fight for it. If you are looking for a stuffed bell recipe, I hope you'll try this one.

Steps:
- Core and clean peppers and cook in hot water for approximately 5 minutes. Remove from water, stand upside down and drain.
- Sprinkle inside with salt.
- Brown beef and onions in hot oil. Add tomatoes, rice, Worcestershire sauce, salt and pepper. Simmer 5 minutes.
- Stir in 1 cup cheese and stir until almost melted.
- Stuff peppers and top with additional cheese.
- Bake approximately 25 minutes in 350 oven.
- Note: I usually add about 1/4 cup water to the baking dish just prior to put it in the oven. Also, if you think the whole pepper is to large, you can cut it in half and stuff them that way.
- Note #2: My grandson doesn't like to find a "chunk" of tomato in his pepper -- so if he's going to be around for the meal (his favorite one), I'll put the stewed tomatoes in my food processor and give them a couple whirls just to break up any large pieces of tomato.
