2 tablespoons chopped fresh basil
2 tablespoons chopped fresh parsley
2 tablespoons fresh lemon juice
1/2 teaspoon garlic salt
1/4 teaspoon coarse ground black pepper
1 (1-lb.) salmon fillet with skin
1 cup sour cream
2 tablespoons finely chopped red onion
1 teaspoon grated lemon peel
1 tablespoon fresh lemon juice
1 teaspoon honey
1 teaspoon Dijon mustard
Fresh basil
Lemon slices or wedges
1/4 cup caviar (2 colors if desired)
24 slices small cocktail bread, halved if desired

Steps:

  • In large skillet, combine 4 cups water, 2 tablespoons basil, parsley, 2 tablespoons lemon juice, garlic salt and pepper. Bring to a boil. Add salmon, skin side down. Reduce heat to medium; cover and cook 6 to 10 minutes or until fish flakes easily with fork.
  • Remove salmon from skillet. Cool 30 minutes or until completely cooled.
  • In small serving bowl, combine all sauce ingredients; mix well. Cover loosely; refrigerate until serving time.
  • Just before serving, place salmon on serving platter. (If desired, carefully remove skin.) Garnish plate with basil and lemon slices. Place caviar on paper towel to drain; sprinkle caviar over salmon. Serve salmon with sauce and bread slices.

Juice and zest of 1 orange (about 1/4 cup juice)
5 black peppercorns
2 tablespoons plus 1 teaspoon white wine vinegar
4 large egg yolks plus 4 large whole eggs, cracked into a bowl
Kosher salt and freshly ground black pepper
1 1/2 cups clarified butter
4 English muffins, split and toasted
2 avocados, sliced
8 slices smoked salmon (about 1 ounce each)
Pickled Red Onions, recipe follows
1/2 cup fresh dill, picked
2 ounces American sturgeon caviar
2 cups white wine vinegar
1/2 cup sugar
1 tablespoon kosher salt
1 tablespoon pickling spice
1 red onion, sliced 1/4-inch thick

Steps:

  • For the sauce, prepare a double boiler with a medium pot of water with a bowl set over the top. Bring the water to a simmer.
  • In a small pot, combine the orange juice and zest, black peppercorns and 2 tablespoons vinegar. Place over mellow heat and cook until slightly thickened and reduced by half, 5 to 8 minutes. Set aside to cool slightly.
  • Whisk together the egg yolks and a pinch of salt in the bowl set over the double boiler, making sure the water below is simmering. Continue to whisk until the yolks are pale yellow and warm to the touch, about 5 minutes. Add a splash of water if it thickens too much.
  • Remove the bowl from the heat. Slowly drizzle in the clarified butter, whisking to form an emulsion. Add the orange juice reduction and whisk to combine. Season with salt and pepper. Remove from the double boiler and set aside in a warm place.
  • Add water halfway up a large straight-sided pan and bring to a simmer. Add the remaining teaspoon vinegar to the pan along with a pinch of salt. Stir the water clockwise, then add the whole eggs, one at a time, to the swirling water. Poach the eggs, at a medium simmer, until soft-cooked, 2 to 3 minutes each for a runny yolk. Remove with a slotted spoon to a plate lined with a kitchen bowl or paper towels.
  • Top the English muffins with the avocado, followed by a piece of smoked salmon, a poached egg and some of the Maltaise sauce. Garnish each with some Pickled Onion, dill and caviar.
  • Combine the vinegar, sugar, salt, pickling spice and 2 cups water in a small saucepan. Bring to a boil, then pour over the onions in a bowl. Allow to sit for 3 days in the fridge before serving.

4 cups canning or pickling salt
1 gallon cold water
2 skeins (egg sacks) fresh chum salmon eggs (Eggs of other salmon species may be substituted, but curing time will be different as noted below)
1 to 2 tablespoons olive oil

Steps:

  • In a large glass or stainless steel container, mix salt into water, stirring thoroughly until dissolved. With wire-mesh deep frying basket or other 1/4-inch metal screen, gently separate eggs from egg sack over bowl, by rubbing sack along screen. Take care not to scrape membrane from the egg sack, even if it means leaving some eggs behind. Pour brine mixture over eggs and allow to soak 12 minutes, stirring occasionally. (Soaking times for other salmon species: Sockeye or Red: 6 minutes; Pink or Humpy: 8 minutes; Coho or Silver: 10 minutes; King or Chinook: 14 minutes). While eggs soak, use tweezers to remove bits of membrane and broken eggshells. When soaking is complete, pour eggs into colander to drain. Rinse eggs quickly with cold water and drain for a few minutes. Cover colander with plastic wrap, place over bowl, allowing it to continue draining in refrigerator.
  • After 8 to 12 hours, transfer the now-sticky eggs into glass bowl. Gently fold in just enough olive oil to make the individual eggs shiny and slick.
  • Serving Suggestions: Salmon or ?red? caviar prepared this way is much less salty than the commercial variety, allowing the sweet flavor of the fresh roe to emerge. Because of the lower salt levels however, it should be refrigerated and consumed within 3 to 4 days. Its mild flavor lends itself to serving with cream cheese and crackers. A traditional favorite is salmon caviar atop celery sticks stuffed with cream cheese. Salmon caviar is delightful when added to salads with creamy herb or ranch-style dressing. This mild version of salmon caviar will be a welcome alternative to the more strongly flavored ?ikura? salmon eggs used in Japanese sushi or sashimi.

1 cup 35% whippping cream
1 ripe avocado, peeled and pitted

2 cloves garlic, crushed
125 ml champagne
250 ml heavy cream
200 g smoked salmon, cut into thin slices
2 tablespoons small capers, rinsed and patted dry
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill

Steps:

  • Heat the oil in a large frying pan and cook the garlic over a medium heat for 30 seconds.
  • Pour in the champagne and cook for 2-3 minutes, or until reduced slightly.
  • Add the cream and cook for 3-4 minutes, or until reduced and thickened.
  • Add the remaining ingredients and pour over the pasta of your choice.
  • Toss through gently and season to taste with salt and freshly ground black pepper.

2 teaspoons baking powder

Steps:

  • Sift the flour, baking powder, salt & pepper in a mixing bowl.
  • Rub the butter into the flour using your fingertips, like when making scones.
  • Add the parsley, onion and mixed herbs.
  • Beat the egg and add to the mixture.
  • Add just enough milk to obtain a soft dough the same consistancy as scones.
  • Add to soup during the last 15-20 minutes of cooking, by dropping tablespoons of dough into the boiling soup.
  • Replace the lid securely and simmer for allotted time.
  • Do not be tempted to open the lid until the dumplings are done.

1 tablespoon butter
1 salt and pepper
1/2 cup mayonnaise
1 tablespoon parsley

  • Cut fillet in 4 serving pieces. Place large side of fillet toward edge of Pyrex baking dish with center open. Pierce fish, dot fish with butter, and cover with plastic wrap.
  • Microwave Medium (50%) for 5 minutes.
  • Mix mayonnaise, parsley, onion, and dill together.
  • Spread mayonnaise mixture on top of fillets and microwave Medium (50%) covered for 5-6 minutes before serving.

This recipe was a product of cleaning out the fridge and being hungry. I had just catered a party and had leftover caviar, just a small spoonful, but that is all I needed; frozen crepes, eggs, herb cheese, smoked salmon and a little bechemel (white sauce) left from 2 nights ago. So that sealed the deal. This is something you can easily have done in a few minutes and serve. Make the sauce and the crepes ahead of time and then just scramble your eggs and roll the crepe. Warm up the sauce as the eggs cook and your are done. Now I know the caviar is a bit expensive, but for a special brunch a small amount goes a long way. Also, crepes are not that hard, and they freeze well. But many stores carry them pre-made in the frozen section these days. Recipe #262038 from Zaar is a simple basic crepe recipe.

4 crepes, Crepe Batter is a basic recipe (use your favorite recipe, or buy them pre-made)
3 -4 ounces smoked salmon, thin sliced (approximately 1 oz per crepe, I get mine right from the local grocery store)
2 teaspoons caviar (1/2 teaspoon per crepe)
8 ex large eggs (2 eggs per crepe)
4 tablespoons herb cheese spread (Boursin is one brand I suggest)
2 shallots, thin sliced
2 teaspoons butter
salt
pepper
1 cup milk
2 tablespoons flour
2 tablespoons butter
1/2 teaspoon salt
1/8 teaspoon pepper
1 teaspoon fresh lemon juice
1 teaspoon fresh dill
sour cream

Steps:

  • Crepes -- I won't go through the whole recipe here, but you can use your favorite recipe or buy them pre-made. If they are frozen just, thaw in the fridge and then I reheat by simply wrapping them in a damp paper towel in the microwave for just a few seconds. Or you can wrap in foil and reheat in the oven on 325 for just 5 minutes or so. You just want them warm and plyable, not steaming hot.
  • Sauce -- In a small pot, add the butter, flour and milk and whisk well until combined. Bring to medium heat and continue stirring until well combined. DON'T boil as you do not want to scald/burn the milk. Bring to a light boil stirring often. The sauce will thicken. Reduce to low and add the lemon, dill, salt and pepper. Just keep on low while you cook the eggs.
  • Eggs -- In a medium non-stick sauce pan, add the butter and bring to medium heat. Add in the shallots and cook 1-2 minutes just to soften them up a bit. Then, in a medium size bowl, whisk the eggs very well and add in a pinch of salt and pepper. Add the eggs to the sauce pan with the onions, stir, and let them cook on medium low heat 3-4 minutes until slightly set and then stir. Add in the Boursin or herb cheese and stir to combine. It will take another 3-4 minutes for the cheese to melt and the eggs to finish cooking. Stir often. DON'T overcook the eggs - you want a soft scramble, as they will continue to cook once removed from the heat.
  • Salmon -- Buying it in a package it should already be thin sliced and ready to use.
  • Crepes -- Add 1/4 of the eggs to each warm crepe, top with smoked salmon and roll. Place 1-2 crepes per plate and top with the warm lemon dill sauce, a sprig of dill, a dollop or spoon of sour cream, and a little caviar. ENJOY!

1/2 tablespoon unsalted butter, softened
1/2 teaspoon fleur de sel plus additional to taste
4 (6-oz) pieces center-cut salmon fillet (about 1 inch thick)
1/4 cup créme fraîche
2 tablespoons hot water
2 tablespoons avruga caviar (from a 120-g jar)
2 teaspoons olive oil
5 oz baby arugula (7 cups loosely packed)
5 oz mesclun (mixed baby salad greens; 7 cups loosely packed)
4 small lime wedges
1/2 teaspoon fresh lime juice

Steps:

  • Put oven rack in middle position and preheat oven to 250°F.
  • Spread butter over bottom of a 13- by 9-inch baking dish and sprinkle with 1/2 teaspoon fleur de sel. Put salmon, skin sides down, in dish and bake, uncovered, until just cooked through, 30 to 35 minutes.
  • About 10 minutes before salmon is done, put créme fraîche in a 1- to 1 1/2-quart heavy saucepan and heat over low heat, stirring occasionally, until just melted. Transfer to a blender along with water and caviar and purée into a very smooth emulsion. Return to saucepan and keep warm, uncovered, over very low heat, stirring occasionally. Thin sauce slightly with a little additional hot water if too thick.
  • Just before salmon is done baking, heat oil in a 12-inch skillet over moderately high heat until hot but not smoking, then add greens in 3 batches, stirring and turning with tongs until greens are slightly wilted before adding each new batch, and continue to cook, stirring, until completely wilted, 1 to 2 minutes. Push greens to one side of skillet and pour off liquid (discarding it). Divide greens among 4 plates. Top greens with salmon and season lightly with fleur de sel, then squeeze some of lime juice from wedges over salmon. Stir 1/2 teaspoon lime juice into sauce and spoon onto plates.

8 dumplings
5 tablespoons caviar
1 bunch dill
1 bunch chives
1 cup sour cream
1 cup yogurt
