I found this recipe on the back of the label on a package of ground beef! Of all the different ways I've used the same old pasta and sauce combinations, I'd never tried this one - it was a big hit! I'm sure this will adapt itself to using vegetables, different meats, no meat - whatever you like best. I'm including the ingredients for a "lazy" marinara sauce in case you don't have any jars of storebought in the pantry.

1/2-1 lb ground beef
1 -2 minced garlic clove
1/2 cup chopped onion
1 (26 ounce) jar marinara sauce
25 ounces frozen cheese ravioli
1 -2 cup shredded mozzarella cheese (or a blend of mozzarella and parmesan)
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
1 -2 teaspoon italian seasoning (or a blend of oregano, basil and parsley)
1 -2 teaspoon sugar
crushed red pepper flakes, to taste (optional)
salt, to taste
1 -2 dash wine (just a splash or two) (optional)

Steps:

  • preheat oven to 375.
  • brown ground beef with garlic and onion in large nonstick skillet. Drain off fat if necessary.
  • Mix with prepared marinara and set aside.
  • You can use a jar of storebought marinara or make your own with the ingredients listed above. The ingredients are flexible - I use whatever combination of canned tomatoes I happen to have at the time - crushed, diced, puree, with herbs or garlic already added - whatever. No need to cook before you add to the mix - it will bake along with everything else.
  • Bring 4 qts water to a boil. Cook ravioli just till it floats, about 3-5 minutes. Drain.
  • Place a bit of sauce/beef mixture in bottom of 9x13 pan. Add a layer of half the ravioli, topped by half the sauce, followed by half the shredded cheese.
  • Repeat layers.
  • Bake uncovered for about 30 minutes, till sauce is bubbly and cheese is browned.
  • Let stand 5-10 minutes before serving.

This incorporates all the flavors of lasagna, but it's easier because the ingredients are simply mixed together and baked.

1 cup wide egg noodles
½ pound ground beef
4 ounces bulk Italian sausage
1 ½ cups marinara sauce
½ cup cottage cheese
⅓ cup grated Parmesan cheese, divided
¼ teaspoon onion powder
¼ teaspoon garlic salt
¼ teaspoon Italian seasoning
½ cup grated mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.
  • Bake in the preheated oven until cheese is golden brown, about 25 minutes.

1 tablespoon olive oil
1 pound mild Italian sausage, casings removed
2 cups Classic Marinara Sauce, recipe follows
12 ounces mafaldine corte or farfalle pasta
8 ounces mini mozzarella balls
3/4 cup ricotta
1/4 cup grated Parmesan
Torn basil leaves, for topping
1/3 cup olive oil
6 cloves garlic, minced
Three 26-ounce cartons chopped tomatoes
1 teaspoon Italian seasoning
1 large basil sprig
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter

Steps:

  • Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
  • Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.

3/4 cup shredded part-skim mozzarella cheese
1/2 cup 4% cottage cheese
1-1/2 cups cooked wide egg noodles
2 tablespoons grated Parmesan cheese
Chopped fresh parsley, optional

Steps:

  • Warm the spaghetti sauce; stir in mozzarella and cottage cheeses. Fold in noodles. Pour into 2 greased 2-cup baking dishes. Sprinkle with Parmesan cheese. , Bake, uncovered, at 375° until bubbly, about 20 minutes. If desired, top with parsley.

  • Preheat oven to 375 degrees F and prep a 9x13 inch pan, rubbing with a little bit of olive oil to coat it. Meanwhile boil water and cook pasta just 1-2 minutes short of package directions until al dente (firm, but cooked through). At the same time, brown ground beef in a large saute pan until cooked through, about 5-6 minutes, and drain if there is a lot of excess moisture. Add marinara sauce.
  • Drain pasta and toss with the marinara/beef mixture till coated. Layer 1/2 the pasta in the bottom of the pan. Then top with all of the ricotta/garlic/basil mixture. Spread the rest of the pasta over the top of the ricotta mixture, then dot with mozzarella tears all over the top (save 2 or 3 slices for a snack!!).
  • Cover with aluminum foil and bake at 375 for 20-25 minutes until warmed through and bubbling. Remove foil and bake uncovered for another 10 minutes until lightly browned on top. (If you want yours a little more brown like mine, you may have to broil for 1-2 minutes on high)
