Asian-Style Turkey Meatloaf image

A twist on classic meatloaf, this Asian-Style Turkey Meatloaf has crunchy water chestnuts, umami mushrooms, and loads of flavor from herbs and spices like cilantro, ginger, and sriracha. Modifiable to your family's preferences, this recipe is also freezer friendly and can be made ahead.

1/4 cup rice vinegar
3 tablespoons low-sodium soy sauce, (or gluten-free soy sauce)
2 tablespoons honey
1 teaspoon sriracha
2 teaspoons olive oil
1/2 cup chopped scallions
1/2 cup chopped red bell pepper
5 ounces sliced mushrooms
1/2 cup chopped drained water chestnuts
1 tablespoon freshly grated ginger
1 1/2 teaspoons minced garlic, (~3 medium cloves)
1 1/2 pounds ground turkey breast
1/4 cup freshly chopped cilantro
3 tablespoons low-sodium soy sauce, (or gluten-free soy sauce)
1 teaspoon sesame oil

Steps:

  • To Make Glaze: Combine rice vinegar, soy sauce, honey, and sriracha in a small saucepan and bring to a boil. Immediately reduce heat to simmer sauce for 2 to 3 minutes until sauce coats the back of a spoon. Turn off heat and set aside.
  • Preheat oven to bake at 375 degrees F. Line a 5x10-inch loaf pan with parchment paper and set aside.
  • Heat olive oil in a large sauté pan over medium-high. When oil is hot, add onions and peppers and sauté 1 to 2 minutes. Add mushrooms and sauté another 5 to 7 minutes. Add water chestnuts, ginger, and garlic and sauté 1 minute more. Remove pan from heat and set vegetables aside.
  • In a large bowl, combine the turkey, cilantro, soy sauce, sesame oil, and sautéed vegetables. Transfer meatloaf mixture into the loaf pan.
  • Brush prepared glaze over top of meatloaf. Bake for 1 hour and 15 minutes, brushing top of loaf with glaze once or twice.
  • Transfer loaf to lined baking sheet and bake another 15 minutes, until thermometer registers 165 F. Let rest about 5 minutes before slicing. Serve with extra honey-soy glaze drizzled on top.

A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

1/4 cup olive oil
1 large onion, chopped
2 teaspoons fresh thyme leaves
1 teaspoon minced fresh sage
Kosher salt and freshly ground black pepper
2 cloves garlic, grated
1 tablespoon tomato paste
3 tablespoons Worcestershire sauce
3/4 cup panko breadcrumbs
1/2 cup chicken broth
3 pounds ground turkey
2 large eggs
1/2 cup ketchup

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil.
  • Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
  • Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
  • Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

GLAZED TOFU MEATLOAF

My mom made this for our family when I was a kid using ground turkey. The tofu blends so nicely with the meat and the sauce. I like it juicy so I sometimes double the sauce.

1 (14 ounce) package firm tofu, drained and mashed
2 pounds ground turkey
½ cup dry bread crumbs
1 (1 ounce) envelope dry onion soup mix
¼ cup minced green bell pepper
2 eggs, beaten
¼ cup brown sugar
¼ cup soy sauce
1 teaspoon prepared yellow mustard

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch square baking dish.
  • In a bowl, mix the tofu, turkey, bread crumbs, soup mix, green pepper, and eggs. Place the mixture into the prepared pan, and mold into a loaf shape.
  • In a saucepan over low heat, blend the brown sugar, soy sauce, and mustard.
  • Bake the meatloaf 30 minutes in the preheated oven. Drizzle with the sauce mixture, and continue baking 15 minutes, or to an internal temperature of 180 degrees F (80 degrees C).

1 1/4 cups whole wheat panko breadcrumbs
1/2 cup whole milk
3 large eggs
1/2 cup minced fresh parsley leaves or cilantro
1/4 cup minced fresh basil leaves
4 scallions, minced
6 garlic cloves, finely minced
1/2 medium white onion, grated on a box grater
1 tablespoon finely grated fresh ginger
2 teaspoons toasted sesame oil
2 teaspoons kosher salt
Freshly cracked black pepper
1 pound ground pork
1 pound ground turkey
1/3 cup hoisin sauce
2 tablespoons ketchup

Steps:

  • Preheat the oven to 350°F. Line a broiler pan rack or wire rack with foil and set it on top of a rimmed baking sheet. Lightly coat the foil with cooking spray, then use a sharp knife to make a few slits in the foil (this will allow the fat from the meatloaf to drip down onto the baking sheet).
  • In a large bowl, whisk together the panko, milk, eggs, parsley, basil, scallions, garlic, onion, ginger, sesame oil, salt, and pepper to taste. Add the ground pork and turkey and stir or use your hands to gently combine, being careful not to overwork the meat.
  • Shape the meat mixture into a 12-inch long loaf and place it on the foil-lined rack. Flatten the top slightly and square off the ends. In a small bowl, whisk together the hoisin sauce and ketchup. Pour about half the sauce over the meatloaf and use a brush or spoon to generously coat the sides and top.
  • Bake for 1 hour to 1 hour 10 minutes, until the internal temperature reads 160°F on an instant-read thermometer, brushing with glaze every 20 minutes or so. Let the meatloaf cool for 10 to 15 minutes, then transfer to a platter, slice, and serve.
  • Variation
  • For an extra decadent loaf, melt 1 tablespoon unsalted butter in a large skillet over medium-high heat. Add the panko and toast until golden brown, stirring often, 2 to 3 minutes. Continue with the rest of the recipe.
