Steak Frites, or Steak and Chips, or Steak and French Fries, is a great easy quick weeknight meal that makes you feel like you're dining in Parisian Café. This Steak Frites Recipe is especially easy and foolproof in the way we make the fries, and deep fry the steak... Did he really just deep fry that steak?!? Yup! Deep frying the steak is a foolproof method for getting an even crust on the outside and even edge to edge cooking through the middle.

Number Of Ingredients 5

2 Potatoes
1 Ny strip steak
Salt and pepper to taste
1 tsp baking soda
2L vegetable, or peanut oil for frying

Steps:

  • Slice the potatoes into batons of equal size and place in a bowl of cold water seasoned with salt and baking soda.
  • Allow the potatoes to soak for an hour - if you can.
  • Pull the potatoes out and dry them with a tea towel, and place in a heavy bottomed pot.
  • Pour cold oil over the potatoes, just enough to cover and about 2 inches above.
  • Turn on the stove to medium, medium high and allow the oil to reach a temp of 320ºF - 350ºF.
  • While the heat is rising, stir the potatoes occasionally so they don't stick together.
  • While the potatoes are cooking - prep the steak with salt and pepper, cut off some of the exterior fat if you wish, and slice through the cartilage on the fat side of the steak.
  • The chips are done when they are golden brown and start to float.
  • Remove them to a sheet pan with a wire rack and salt them.
  • Place in a 200ºF oven to keep warm while the steak cooks.
  • Dab any moisture off the surface of the steak.
  • Carefully place the steak in the hot oil.
  • After about 1 minute use an instant read thermometer to check the temperature.
  • Re-check often and pull the steak when it reaches around 120ºF internal temp.
  • Place the steak on a wire rack and cover to let rest for 5-10 minutes.
  • Serve with a compound butter topping.

1 pound lean ground beef
⅓ cup panko breadcrumbs
1 teaspoon Italian seasoning
1 large egg
1 tablespoon ketchup
1 teaspoon Dijon mustard
2 teaspoons Worcestershire sauce
salt and pepper (to taste (I use about ½ teaspoon of each))
1 garlic clove (finely minced)
2 tablespoons extra virgin olive oil
1 tablespoon extra virgin olive oil (if needed)
½ onion (diced)
8 ounces sliced mushrooms
2 tablespoons unsalted butter
2 tablespoons all purpose flour
1 ½ cups beef stock (or beef broth or beef consomme)
1 tablespoon ketchup
1 teaspoons Worcestershire sauce
salt and pepper (to taste)

Steps:

  • In a large bowl, combine the ground beef, panko breadcrumbs, Italian seasoning, egg, ketchup, Dijon mustard, Worcestershire sauce, salt, pepper and garlic.
  • Form into 4 oval patties about ¾ inch thick.
  • Heat olive oil in a large deep skillet over medium high heat. Add the steaks and cook until golden brown, about 4 to 5 minutes on each side. (Steaks do not need to be fully cooked at this time.) Remove steaks to a plate and set aside.

Another recipe from Hawai'i's Best Local Dishes by Jean Watanabe Hee. I haven't tried this but it does sound easy and tasty. For a variation add potatoes, onions and carrots in the last hour cooking.

1 (12 ounce) can beer

Steps:

  • Cut chuck steak into portion size pieces. Combine all ingredients in baking dish. Cover and bake 3 hours at 300 degrees F or until meat is tender and there is a rich gravy.
  • *For a variation add potatoes, onions and carrots in the last hour of cooking.

This is a recipe from a restaurant in Islamorada, Florida that my husband and I went to on our 25th wedding anniversary. Twice. In two days....because it was that good. This recipe is identical to what we ate, as I was lucky enough to find it in a book shortly after we came home. This is good for lunch or dinner. I served it with garlic mashed potatoes and some Pinot Grigio.

1 cup water
1/4 cup dry white wine (Chef Lupe uses Chablis, and I have used Grigio, both good)
1 tablespoon key lime juice (I like a bit less, and can be ordered at Amazon if not available locally)
1/2 teaspoon garlic powder
1/8 teaspoon fresh ground white pepper (to taste)
1/4 lb butter (one stick)
3 teaspoons water
3 teaspoons cornstarch
2 large eggs
2 tablespoons water
1 cup flour
2 cups panko breadcrumbs (Japanese style breadcrumbs)
2 lbs white fish fillets (I like Mahi Mahi the best, grouper great too)
1 cup diced tomato (using more fine)
1 cup thinly sliced scallion, some greens included (using more fine)
1/2 cup grated parmesan cheese (I think more is better)
2 tablespoons fresh parsley

Steps:

  • Place the water, wine and key lime juice in a large saucepan over a high heat and reduce by half, about 5 minutes.
  • Add the garlic power. Add pepper to taste. Cut the butter into pats about the size of 1 tablespoon. Reduce the heat to low. Add one pat butter and whisk until the butter is incorporated. Add another pat and continue until all of the butter is used.
  • Mix the water and cornstarch together and add to the sauce. Raise the heat to medium and stir until the sauce thickens and a few bubbles appear. Set aside while the fish cooks.
  • Mix the eggs and water together in a small bowl (whisk vigorously til combined).
  • Place the flour on a plate and dip the fish fillets into flour, coating both sides.
  • Dip the fish into the egg wash.
  • Place the bread crumbs on a second plate and coat the fish with bread crumbs, making sure both sides are coated.
  • Heat 4 tablespoons of the Key lime butter sauce over medium-high heat in a skillet large enough to hold the fish in one layer. Add the fish and sauté for 4 minutes. It should be golden. Turn the fish and sauté for 4 minutes for 1 inch thick fillets. Sauté 2 minutes longer for thicker fish or 2 minutes less for thinner fish. The fish is cooked when the flesh is opaque, not translucent. (I had trouble sauteing in the sauce, and did use olive oil or coconut oil here).
  • Place the fish on 4 dinner plates. Spoon the sauce over the fish. Sprinkle the tomatoes, scallions, parmesan cheese and parsley over the fish.
  • Note: I have had the best success with setting up all ingredients before cooking. My prep time and cook time may be a bit off only because I make it an event and take my time so I guessed at both as if I was trying to get the job done normally. The ingredients are copied verbatim from book, and are in order of use, and I thought a bit confusing at first, but it works! Lastly, use real butter, good fish and fresh herbs and cheese. It makes all the difference.

1 celery rib, sliced
1 can tomato soup
1/2 can water
1 bay leaf
1 teaspoon celery seed
2 medium potatoes, cut into chunks
1 onion, thinly sliced
1 can green beans
1 (6 ounce) can mushrooms

Steps:

  • Grease a casserole dish.
  • Put into it crumbled burger, carrots, celery, soup, water, spices, potatoes, onion, green beans and mushrooms.
  • Cover and bake at 275 degrees for 4 hours, adding a litle more water if necessary.

This easy to make stew is so rich and delicious. Can be baked or made in a slow cooker.

2 lb beef cubes
2 c carrots, sliced or baby carrots
2 c potatoes, cut into chunks
2 medium onions, chopped
1 c celery, chopped
1-1/2 c green beans or 1 (10 ounces) pkge. lima beans
2 tsp quick cooking tapioca
1 tsp salt
1/2 tsp pepper
1 can(s) (8 ounces) tomato sauce
1 c water
1 Tbsp brown sugar

Steps:

  • 1. Place beef cubes in a single layer in a 2-1/2 quart casserole or roast pan. Add vegetables. Sprinkle tapioca, salt and pepper over top. Pour tomato sauce mixed with water over vegetables and seasonings. Crumble brown sugar over all.
  • 2. Cover tightly and bake at 325 degrees for 3 hours.
  • 3. SLOW COOKER: Place beef in bottom of slow cooker. Add vegetables. Sprinkle tapioca, salt and pepper over ingredients. Mix tomato sauce and water. Pour over top. Sprinkle brown sugar over all. Cover. Cook on low 8 hours.
