BUSY-DAY PORK CHOPS
It was time to use or lose some pork chops I had in the fridge, so I dressed them in bread crumbs and Parmesan and baked them up. Necessity sure is the mother of invention, and in this case I invented an amazing healthy pork chop recipe. -Dee Maltby, Wayne, Ohio

- Preheat oven to 375°. Place milk in a shallow bowl. In another shallow bowl, toss bread crumbs with cheese and seasonings., Dip pork chops in milk, then coat with crumb mixture. Place on a baking sheet coated with cooking spray; lightly spritz chops with cooking spray., Bake 8-10 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.

LAZY DAY PORK CHOPS
Very simple and tasty, yet very lazy way to make pork chops or pork steaks. I make this about once a month or so. As often as my husband will let me get away with before he starts to complain. For pork steaks or more chops you might have to use an extra can of soup. I might be weird but I just love pork chops fixed this way! (Tastes better if the pork chop has some fat on it.)

- Place pork chops or steaks in to 9x13 inch pan.
- Pour soup over pork to cover.
- Bake@ 350 for 35 minutes or until cooked through.

MISTAKENLY ZESTY PORK CHOPS
Yes, the title says it all! This recipe was created by mistake. While using another recipe as a guide, I made the mistake of using cocktail sauce instead of chili sauce. Well, this was the best darn mistake I have ever made. These pork chops had the most wonderful zip to them! Mistakes like this should happen more often!

- In a saucepan over medium heat, mix the soy sauce, water, brown sugar, honey, and lemon juice. Bring to a boil, remove from heat, and cool.
- Place the pork chops in a large, resealable plastic bag. Pour the soy sauce mixture into the bag, seal, and marinate in the refrigerator for 3 to 6 hours.
- Preheat oven to 350 degrees F (175 degrees C).
- Drain the pork chops, and discard remaining marinade. Arrange the pork chops in a baking dish, cover, and bake 30 minutes in the preheated oven.
- In a bowl, blend the ketchup, cocktail sauce, brown sugar, water, and mustard. Pour over the pork chops, and continue baking 30 minutes, to an internal temperature of 145 degrees F (63 degrees C).

- Slightly brown pork chops.
- Put rice in casserole - add corn and onion. Put in pork chops - add soup and water. Cover.
- Cook for about 2 hours at 350°F.

LAZY VEGETABLE PORK CHOP BAKE
When I am tired and want something DH likes and the clean up later is fast, I make this. Line your baking pan with foil. Serve with baked potato and salad. Simple but good. The apple butter does color the chops a very nice brown.

- Preheat oven to 350 degrees.
- In cup, mix together apple butter and corn starch; set aside so cornstarch has a chance to dissolve.
- Put carrots, onion, raisins, dried apples, and garlic (if using) in a single layer in baking pan.
- Sprinkle on sage, lemon pepper and garlic powder (omit garlic powder if using fresh garlic).
- Put pork chops on top of vegetable mixture.
- Spread apple butter mixture onto pork chops.
- Cover and bake at 350* for 1 hour and 20 minutes.
- Uncover and bake 15 minutes longer, or until carrots are done and meat juices are clear.

BALSAMIC PORK CHOPS
Jazz up your weeknight pan-fried pork chops with a balsamic glaze! We like these with steamed broccoli and a crispy, fresh salad.

Steps:
- Pat pork chops dry with paper towels, and season with salt and pepper.
- Melt butter in a large, nonstick skillet over medium heat. Add olive oil and stir to combine.
- When butter and oil shimmer, carefully add chops and cook over medium heat until browned on one side, 5 to 6 minutes. Turn and cook pork chops until no longer pink in the center and browned on the other side, 3 to 4 minutes. Do not overcook the chops or they will turn dry and hard. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Remove pork chops from heat and cover to keep warm.
- Combine chicken broth, balsamic vinegar, and honey in a small saucepan. Bring glaze to a boil over medium-high heat and boil until mixture is reduced to 1/2 cup, 5 to 6 minutes.
- Drizzle pan-fried chops with balsamic glaze and serve warm.

LAZY DAY POT ROAST
I hesitated to add this recipe because it is so very easy it is hardly a recipe. It is also delicious so I decided to share it. Perfect fall/winter recipe. If you like pot roast I'd be very surprised if you don't enjoy this method of cooking. I've had this recipe for many many years - not sure of the origin. Simple can be good - very good.

- Wrap tightly in aluminum foil after salting and peppering to your taste. Make sure you have this on a pan the will catch any seeping juices.
- Put in a preheated 250 degree oven and bake for 5-6 hours. Turns out beautifully with enough natural juices to make gravy if desired.
