LAYERED VEGETABLE TORTILLA CASSEROLE
Made with a mix of cheeses and all kinds of veggies, this potluck-perfect tortilla casserole is just layer after layer of crowd-pleasing deliciousness.

Steps:
- Heat oven to 350ºF.
- Heat large heavy skillet on medium-high heat. Brush tortillas evenly with 2 Tbsp. oil. Add to skillet, in batches; cook 10 to 15 sec. on each side or just until softened. (Do not overcook. Tortillas should still be pliable.) Drain on paper towels. Cut 6 tortillas in half.
- Heat 1 tsp. of the remaining oil in medium saucepan on medium heat. Add 1/4 cup onions; cook 3 min., stirring frequently. Stir in tomato sauce and oregano; simmer on low heat 10 min., stirring occasionally.
- Meanwhile, heat remaining oil in large skillet. Add remaining onions; cook 3 min., stirring frequently. Add potatoes, zucchini and corn; cook 5 min., stirring frequently. Add cream cheese and milk; cook and stir 3 to 5 min. or until cream cheese is completely melted and sauce is well blended. Remove from heat.
- Spray 13x9-inch baking dish with cooking spray. Cover bottom of prepared dish with 2 whole tortillas and 4 tortilla halves; top with 1 cup of the tomato sauce mixture, half the vegetable mixture and 1 cup cheese. Repeat layers. Top with remaining tortillas, 1 cup of the remaining tomato sauce mixture and remaining cheese; cover. Reserve remaining tomato sauce mixture for later use.
- Bake 30 min. or until heated through. Microwave chipotle peppers and reserved tomato sauce mixture in microwaveable bowl on HIGH 2 min.; stir. Serve with the casserole.

LAYERED VEGETABLE ENCHILADA CASSEROLE
Steps:
- Heat the oven to 350 degrees F.
- Heat the oil in a 10-inch skillet over medium-high heat. Add the zucchini and onion and cook for 5 minutes or until they're tender. Stir in the spinach and corn. Cook and stir until the spinach is wilted.
- Spread 1/2 cup enchilada sauce in a 3-quart shallow baking dish. Line the bottom of the baking dish with 6 tortillas, overlapping as needed. Spread with half the remaining enchilada sauce. Top with the vegetable mixture and half the cheese. Top with the remaining tortillas and enchilada sauce.
- Bake for 20 minutes. Top with the remaining cheese and bake for 5 minutes or until the cheese is melted. Sprinkle with the cilantro before serving, if desired.

- Heat oven to 400ºF.
- Prepare stuffing as directed on package. Add 1 egg; mix well. Press onto bottom of 9-inch square baking dish sprayed with cooking spray; sprinkle with 3/4 cup cheese.
- Cook and stir onions in medium nonstick skillet sprayed with cooking spray 5 min. or until tender. Remove from heat; stir in spinach. - Preheat the oven to 400 degrees F.
- Toss the potato, yam, bell pepper, carrots, and 2 tablespoons of olive oil in a 13 by 9 by 2-inch baking dish to coat. Sprinkle with salt and pepper and toss until coated. Spread vegetables evenly over the bottom of the pan.
- Arrange the onion slices evenly over the vegetable mixture. Arrange the zucchini over the onion. Drizzle with 2 tablespoons of oil. Sprinkle with salt and pepper. Arrange the tomato slices over the zucchini.
- Stir the Parmesan and bread crumbs in a small bowl to blend. Sprinkle the Parmesan bread crumbs over the vegetables in the baking dish. Drizzle with the last tablespoon of olive oil.
- Bake uncovered until the vegetables are tender, and the topping is golden brown, about 40 minutes. Garnish with fresh basil sprigs, if desired.

I got this recipe from Canadian Living magazine a few years ago. It is a delicious layered casserole combination of creamy mashed potatoes, spinach and squash, that's a great comfort food laced with zingy fresh ginger. I often receive potluck invitatiions with the requests to bring "That layered thing."

Steps:
- Peel potatoes, cut in half.
- Place in a large saucepan and cover with boiling or hot water.
- Cover saucepan and bring back to the boil.
- Reduce heat to medium and continue boiling gently, partially covered, until potatoes are very tender, about 20 to 30 minutes.
- Drain potatoes and mash.
- Stir in 2 TBS butter, sour cream and 1/2 tsp salt.
- You should have about 6 cups.
- Squeeze handfuls of spinach until fairly dry.
- Coarsely chop if not already chopped.
- Place in a medium size bowl.
- Stir in onions, egg,1 TBS butter and 1/4 tsp salt.
- Drain off any liquid from thawed squash.
- Stir squash with 1 TBS butter, ginger and 1/4 tsp salt.
- Preheat oven to 350*F.
- Butter a large caserole dish that will hold at least 8 cups or coat with cooking spray.
- Spoon one third of the potato mixture into buttered dish and spread til smooth.
- Evenly spread with all of the squash mixture.
- Spread with half of remaining potatoes, then all of spinach mixture.
- Top with a layer of remaining potatoes, then sprinkle with cheese.
- Bake uncovered, in center of oven until hot and cheese is lightly golden, from 55 to 65 minutes.
- To test if hot right through, plunge a table knife into center of casserole and hold for 15 seconds.
- Then withdraw knife and lightly touch to see if it has become very warm.

7 LAYER CASSEROLE WITH GROUND BEEF AND RICE

- Gather the ingredients.
- Put the rice in a 2-quart baking dish .
- Spoon the corn evenly over the rice layer and sprinkle lightly with salt and freshly ground black pepper .
- Combine the 1 can of tomato sauce with 1/2 cup of water and pour over the corn layer.
- Sprinkle with the chopped onion and bell pepper.
