This hearty pasta dish comes from John Barricelli, the manager of our prep kitchen at the television studio. It can be made the day before and reheated.

Number Of Ingredients 12

3 tablespoons olive oil
2 large cloves garlic, finely chopped
1 small onion, finely chopped
1 can (6-ounce) tomato paste
2 cans (28-ounce) unpeeled crushed tomatoes in puree
1 teaspoon sugar
1 tablespoon coarse salt, plus more to taste
1 teaspoon freshly ground pepper, plus more to taste
1 pound rigatoni
2 pounds sweet Italian sausage, casings removed
1 1/2 pounds whole-milk ricotta cheese
1 pound mozzarella cheese, shredded

Steps:

  • Preheat oven to 350 degrees. In a large saucepan, heat 2 tablespoons oil over medium heat. Add garlic and onion, and cook until onion is translucent, about 4 minutes. Add tomato paste, and cook, stirring, 2 minutes. Stir in tomatoes and sugar. Season with 1 tablespoon salt and 1 teaspoon pepper. Cook until slightly reduced, stirring occasionally, about 15 minutes.
  • Bring a large pot of water to a boil; add salt. Add rigatoni, and cook, stirring occasionally, 9 minutes. Drain in a colander, and rinse under cool water until cool. Set aside.
  • In a medium nonstick skillet, heat remaining 1 tablespoon olive oil over medium heat. Add sausage, and cook, stirring frequently with a wooden spoon to break up any large pieces, until browned and cooked through, about 8 minutes. Drain, and set aside.
  • In a medium bowl, combine ricotta with half of the mozzarella. Stir to combine. Season with a pinch of salt and a pinch of pepper.
  • To assemble, spread 1 cup of the sauce in the bottom of a 9-by-13-inch baking dish. Add half of the rigatoni in an even layer. Spread with 1/2 cup sauce, ricotta mixture, sausage, and 1 cup more sauce. Top with remaining rigatoni, and 1 1/2 cups sauce. Any remaining sauce may be reheated and served on the side or reserved for another use. Sprinkle the remaining mozzarella over the top to cover. Place baking dish on a baking sheet, and transfer to oven. Bake until bubbly, 35 to 40 minutes. Serve hot.

1 package (16 ounces) rigatoni or large tube pasta
2 tablespoons butter
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups whole milk
1/4 cup water
4 large eggs, lightly beaten
2 cans (8 ounces each) tomato sauce
2 cups shredded part-skim mozzarella cheese
1/4 cup grated Parmesan cheese

Steps:

  • Preheat oven to 375°. In a 6-qt. stockpot, cook pasta according to package directions. Drain; return to pot. Cool slightly., Meanwhile, in a small saucepan, melt butter over low heat. Stir in flour and salt until smooth; gradually whisk in milk and water. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Remove from heat., Add eggs to pasta, tossing to coat. Divide mixture between two greased 8-in. square baking dishes. Layer each dish with one can tomato sauce, 1 cup mozzarella cheese and half of the white sauce; sprinkle with Parmesan cheese. Bake, uncovered, until a thermometer reads 160°, 30-35 minutes. Freeze option: Cover and freeze unbaked casseroles. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 375°. Cover casserole with foil; bake 40 minutes. Uncover; bake until a thermometer inserted in center reads 165°, 7-10 minutes.

1 package (16 oz) uncooked rigatoni pasta
1 medium onion, chopped (1/2 cup)
1 tablespoon butter
2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 cups fat-free (skim) milk
1 container (15 oz) low-fat ricotta cheese, drained on paper towels
1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
1 tablespoon olive oil
4 cloves garlic, chopped
1 can (28 oz) Muir Glen™ organic whole peeled tomatoes, undrained
2 packages (1 oz each) fresh basil leaves
1/2 cup Progresso™ panko crispy bread crumbs
1/2 cup shredded Parmesan cheese

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook and drain pasta as directed on package except omit salt; keep warm.
  • Spray 3-quart saucepan with cooking spray; heat over medium heat. Add onions to saucepan; cook and stir 1 minute. Add butter and flour; cook 2 minutes, stirring constantly, until mixture is smooth and bubbly; remove from heat. Gradually stir in milk with wire whisk. Heat to boiling, stirring constantly; boil and stir 1 minute. Remove from heat; stir in ricotta cheese and spinach.
  • In separate 3-quart heavy saucepan, heat oil over medium heat; add tomatoes to oil, crushing tomatoes with spoon. Stir in basil, salt and pepper; cook uncovered about 10 minutes, stirring occasionally, until mixture begins to simmer and basil wilts. Remove from heat; discard basil.
  • Over bottom of baking dish, spread half of the tomato sauce (1 1/4 cups). Arrange half of the pasta, 7 rows lengthwise by 9 or 10 rows widthwise, over tomato sauce. Spread half of the ricotta mixture (2 cups) over pasta. Repeat layers, ending with ricotta mixture. Sprinkle with bread crumbs and Parmesan cheese.
  • Bake uncovered 30 minutes or until hot and bubbly. Let stand 15 minutes before serving.

1 lb bulk Italian sausage
1 can (28 ounces) crushed tomatoes, undrained
3 cloves garlic, finely chopped

1 package (8 ounces) sliced fresh mushrooms (3 cups)
1 jar (7 ounces) roasted red bell peppers, drained and chopped
1 cup shredded Parmesan cheese
2 1/2 cups shredded mozzarella cheese (10 ounces)

Steps:

  • Heat oven to 375°F. Spray rectangular baking dish 13x9x2-inches, with cooking spray. Cook and drain pasta as directed on package.
  • While pasta is cooking, cook sausage in 10-inch skillet over medium heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain. Mix tomatoes, garlic and basil.
  • Layer half each of the pasta, sausage, mushrooms, bell peppers, Parmesan cheese, tomato mixture and mozzarella cheese; repeat layers.
  • Bake uncovered 35 to 40 minutes or until hot and cheese is golden brown.

This easy Baked Rigatoni with sausage, marinara sauce, and two different types of cheese is a classic pasta bake that's pure comfort food!

1 (16 ounce) box rigatoni (or mezzi rigatoni)
1 tablespoon olive oil
1 lb. Italian sausage, casings removed ((or substitute with ground beef))
1 cup diced onion
2 cloves garlic, minced or pressed
2 (24 ounce) jars marinara sauce (about 5 cups total)
¼ cup chopped fresh basil
¼ teaspoon crushed red pepper flakes
Kosher salt and pepper, to taste
2 cups grated mozzarella cheese, divided
½ cup grated Parmesan cheese, divided
Optional garnish: chopped fresh parsley or additional fresh basil

Steps:

  • Preheat the oven to 400°F and set the oven rack in the middle position. Grease a 9 x 13-inch baking dish; set aside.
  • In a large pot of salted boiling water, cook rigatoni according to package instructions for very al dente. (It will continue to cook in the oven, so you want to undercook the pasta just a bit.) Drain; set aside.
  • Meanwhile, heat olive oil in a 12-inch cast iron skillet or Dutch oven over medium-high heat. Add the sausage and onion; cook until the sausage is no longer pink, about 5-7 minutes. Add the garlic and cook for 30 seconds.
  • Stir in both jars of the marinara sauce, basil, red pepper flakes, and salt and pepper. Simmer over medium-low heat for about 5-7 minutes. Remove from heat.
  • Add the cooked pasta to the sauce and toss to combine.
  • Spread half of the pasta mixture in the bottom of the prepared baking dish. Top with 1 cup of mozzarella and ¼ cup of Parmesan.
  • Top with remaining pasta mixture. Sprinkle with remaining 1 cup of mozzarella and ¼ cup of Parmesan.
  • Bake, uncovered, until the casserole is hot and bubbly, about 20 minutes.

1 (500 g) package rigatoni pasta
1 lb lean ground beef (or 1/2 pd each of both) or 1 lb ground pork (or 1/2 pd each of both)
1 medium onion, chopped
2 tablespoons fresh minced garlic (or to taste)
season salt and pepper (or use white salt)
2 (700 ml) jars favourite pasta sauce (or homemade is great)
2 cups ricotta cheese
4 cups shredded mozzarella cheese
1/4-1/3 cup parmesan cheese
2 eggs

Steps:

  • Set oven to 350°F.
  • Grease a 13 x9-inch casserole dish.
  • Cook the rigatoni until firm-tender (do not overcook as it will cook more when baked) toss with 2 tbsp oil to prevent drying out; set aside.
  • Cook beef with onions, garlic, seasoned salt and pepper until beef is done and no longer pink; drain off fat.
  • Stir in pasta sauce; simmer 20 minutes.
  • In a bowl, combine ricotta cheese, 1 cup mozzarella cheese, Parmesan cheese and eggs.
  • On the bottom of the casserole dish spread 1-1/2 cups meat sauce.
  • Top with half each, the cooked rigatoni, ricotta cheese mixture and meat sauce.
  • Repeat layer ending with meat sauce.
  • Top with remaining cheese.
  • Bake uncovered until hot and bubbly, about 30-35 minutes.
  • Let stand for 15 minutes before serving.
  • Note: canned sliced mushrooms may be added to meat sauce if desired.

1 lb ( 16 ounces rigatoni ) half cooked and drained
1 lb italian sausage
1 lb lean ground beef
20 slice pepperoni, cut into quarters
3 clove garlic, minced
1 onion, chopped
1 small green or red bell pepper, diced
2 24 oz favorite spaghetti sauce, i used ragu old world style
1 can(s) (14.5 ounce ) fire roasted diced tomatoes and juice
2 Tbsp oregano or italian seasoning
1 Tbsp garlic powder
1 1/2 tsp salt
1 tsp pepper
1 1/2 tsp red pepper flakes ( optional )
3 c shredded, mozzarella cheese
1 Tbsp fresh or dried parsley ( optional )
FILLING
1/2 c shredded parmesan cheese
1 (15 ounce ) ricotta cheese
1 egg
1/2 c shredded, mozzarella cheese
1/2 tsp salt
1/4 tsp pepper
1/2 tsp dried parsley

Steps:

  • 1. Prepare a 9 x 13 deep casserole or lasagna pan with cooking spray, set aside.
  • 2. In a dutch oven or large skillet, saute peppers and onions until tender in a few tablespoons of oil. About a minute before they are done, add the minced garlic; cook another minute or so.
  • 3. Add the ground beef, Italian sausage, seasonings, crumble with a spoon as it cooks. Continue cooking until no longer pink. Drain.
  • 4. Return meat and vegetables to the pot.
  • 5. Now, add the sauce, pepperoni and tomatoes; stir and cover. Simmer for about 30 minutes, stirring occasionally.
  • 6. Meanwhile, in a large bowl, mix the ricotta, salt, pepper, egg, Parmesan cheese, 1/2 cup parmesan cheese.
  • 7. Pour the cooked and drained rigatoni into the cheese mixture, toss well. Preheat oven to 375 degree F.
  • 8. Add about a 1 1/2 cups of sauce and toss.
  • 9. Pour half of the rigatoni mixture into the prepared pan; spreading evenly. Sprinkle 1 - 1/2 cups of mozzarella cheese over rigatoni.
  • 10. Now, spread about 2 cups of sauce over the cheese. Spreading evenly. ( This may seem like a lot of sauce, but the half cooked pasta will use up the sauce when baking).
  • 11. Repeat one more time, rigatoni, 1 - 1/2 cup of cheese, sauce. Top with remaining 1/2 cup of cheese. Sprinkle with dried or fresh parsley.
  • 12. Bake for 40 - 45 minutes or until bubbly and cheese is starting to brown. I served with garlic toast and tossed salad.
  • 13. Enjoy!

  • Cover with foil and bake 60-70 minutes until bubbly.
  • Uncover and continue cooking for another 5 minutes until cheese melts.
  • Let stand 15 minutes before serving.
