POPCORN SHRIMP TACOS WITH CABBAGE SLAW



Popcorn Shrimp Tacos with Cabbage Slaw image

These healthy popcorn shrimp tacos combine classic flavors in a new way! It's one of my family's favorites. To make them low-carb, use lettuce instead of tortillas. -Julie Peterson, Crofton, Maryland

Number Of Ingredients 16

2 cups coleslaw mix
1/4 cup minced fresh cilantro
2 tablespoons lime juice
2 tablespoons honey
1/4 teaspoon salt
1 jalapeno pepper, seeded and minced, optional
2 large eggs
2 tablespoons 2% milk
1/2 cup all-purpose flour
1-1/2 cups panko bread crumbs
1 tablespoon ground cumin
1 tablespoon garlic powder
1 pound uncooked shrimp (41-50 per pound), peeled and deveined
Cooking spray
8 corn tortillas (6 inches), warmed
1 medium ripe avocado, peeled and sliced

Steps:

  • In a small bowl, combine coleslaw mix, cilantro, lime juice, honey, salt and, if desired, jalapeno; toss to coat. Set aside., Preheat air fryer to 375°. In a shallow bowl, whisk eggs and milk. Place flour in a separate shallow bowl. In a third shallow bowl, mix panko, cumin and garlic powder. Dip shrimp in flour to coat both sides; shake off excess. Dip in egg mixture, then in panko mixture, patting to help coating adhere., In batches, arrange shrimp in a single layer in greased air-fryer basket; spritz with cooking spray. Cook until golden brown, 2-3 minutes. Turn; spritz with cooking spray. Cook until golden brown and shrimp turn pink, 2-3 minutes longer., Serve shrimp in tortillas with coleslaw mix and avocado.

I created this main-dish salad to satisfy our family's love of shrimp. It has lots of contrasting textures, including firm taco-seasoned shrimp, crispy tortilla strips and hearty black beans. 1 pound uncooked large shrimp, peeled and deveined
1 envelope taco seasoning, divided
1/2 cup plus 3 tablespoons olive oil, divided
1 small onion, finely chopped
3 tablespoons cider vinegar
2 tablespoons diced green or sweet red pepper
6 garlic cloves, minced
1/2 teaspoon ground coriander
1/4 teaspoon sugar
3 corn tortillas (6 inches), cut into 1/4-inch strips
1 can (15 ounces) black beans, rinsed and drained
1 package (8 ounces) ready-to-serve salad greens
1 medium tomato, chopped
2 cups (8 ounces) finely shredded Colby-Monterey Jack cheese

Steps:

  • Place shrimp in a large bowl; sprinkle with half of the taco seasoning. Set aside. In a small bowl, whisk 1/2 cup oil, onion, vinegar, green pepper, garlic, coriander and sugar; set aside., In a large skillet, heat remaining oil over medium-high heat. Add tortilla chips; stir-fry until golden. Drain on paper towels. Sprinkle with remaining taco seasoning. In same skillet, cook and stir shrimp 8-10 minutes or until shrimp turn pink., In a large bowl, combine beans, salad greens, tomato, shrimp and tortilla strips. Just before serving, whisk dressing and pour over salad; sprinkle with cheese and toss to coat.

1 pound ground beef
2/3 cup water
1 envelope taco seasoning
2 medium ripe avocados, peeled and pitted
2 tablespoons finely chopped red onion
3 garlic cloves, minced
1 teaspoon lemon juice
4 cups shredded lettuce
1 can (2-1/4 ounces) sliced ripe olives, drained
2 medium tomatoes, chopped
1 small cucumber, peeled and chopped
5 green onions, chopped
2 cups shredded cheddar cheese
1 cup salsa
2 cups sour cream
Tortilla chips

Steps:

  • In a small skillet, cook beef over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes. Cool slightly., In a small bowl, mash avocados with onion, garlic and lemon juice. In a 3-qt. glass bowl, layer with beef, avocado mixture, lettuce, olives, tomatoes, cucumber, green onions, cheese, salsa and sour cream. Serve immediately with chips.

Number Of Ingredients 7

12 ounces cooked chilled shrimp, chopped
2 fresh jalapenos, seeded, ribbed and finely chopped divided
6 teaspoons lemon flavored olive oil, divided
Kosher salt and freshly cracked black pepper
4 medium vine-ripened tomatoes, seeded and diced
1 to 2 avocados, peeled, pitted, and diced
Chopped chives, for garnish

Steps:

  • Put the shrimp in a small bowl and add 1/2 of the jalapeno, 2 teaspoons lemon oil, and salt and pepper, to taste, and toss to combine. In a second bowl, mix the tomatoes with 2 teaspoons oil and salt and pepper, to taste. Put the diced avocado in a third bowl, add the remaining 2 teaspoons lemon oil, remaining 1/2 of the jalapeno, salt and pepper, to taste, and toss well.
  • To assemble, divide 3/4 of the shrimp among 4 short 6-ounce wide-rimmed glasses. Top the shrimp in each glass with 1/4 of the tomatoes, followed by 1/4 of the avocado. Finely chop the remaining shrimp to garnish each glass and sprinkle the chives evenly over each salad. Alternately, you can layer this salad in a large glass trifle bowl, to share. Serve immediately or chill and serve within 1 hour.

This is a recipe I got from a magazine. It is, without a doubt, the best salad I've ever had! Maybe some of you will think so, too! It looks like alot of ingredients, but it's so quick and easy to throw together! My husband requests this ALL THE TIME! The dressing is really a nice mix, too.

Number Of Ingredients 15

1 lb uncooked large shrimp, peeled and deveined
1 envelope taco seasoning, divided
1/2 cup olive oil, plus
3 tablespoons olive oil, divided
1 small onion, finely diced
3 tablespoons cider vinegar or 3 tablespoons red wine vinegar
2 tablespoons finely diced red bell peppers
6 cloves garlic, minced
1/2 teaspoon ground coriander
1/4 teaspoon sugar
3 6-inch corn tortillas, cut into 1/4 inch strips
1 (8 ounce) package ready to eat salad greens
1 medium tomatoes, chopped
1 (8 ounce) can black beans, rinsed and drained
2 cups finely shredded colby-monterey jack cheese

Steps:

  • Remove shrimp tails.
  • Place shrimp in bowl, sprinkle with half of the taco seasoning.
  • Set aside.
  • In another bowl, combine 1/2 cup
  • oil, onion, vinegar, (I usually use the cider) red pepper, garlic, coriander and sugar: set aside.
  • This will be your salad dressing.
  • In a skillet, fry tortlla strips in remaining oil, drain on paper towels.
  • Sprinkle with remaining taco seasoning.
  • In same skillet, saute shrimp for a few minutes or until pink. (don't overcook)
  • In a large bowl, mix greens, tomato, beans, shrimp, and tortilla strips.
  • Drizzle dressing all over the mix.
  • Sprinkle with cheese and toss.
