CHOCOLATE SOUFFLé

Chocolate Soufflé image

Light and airy, yet rich with chocolate, this classic soufflé is sheer decadence-and with Chef Boulud's instruction, mastering this gravity-defying dessert is within your reach. Just follow his tips for preparing the ramekins and whipping the egg whites, and you'll be amazed by how something so deliciously impressive can be so easy to make.

Provided by Daniel Boulud

Categories     dessert

Time 45m

Yield 6 servings

Number Of Ingredients 10

2 tablespoons unsalted butter, softened
1/4 cup sugar, plus more to coat ramekins
4 1/2 ounces bittersweet chocolate, roughly chopped, preferably 70% Guanaja Valrhona brand; about 1 cup, chopped
1/2 cup whole milk
3/4 tablespoon cornstarch
2 large egg yolks
4 large egg whites
Sea salt
Powdered sugar, for serving (optional)
Unsweetened whipped cream, for serving (optional)

Steps:

  • Prepare ramekins: Brush ramekin with butter to evenly coat the entire interior, from the bottom of the ramekin to the top of the rim. Add a few tablespoons of sugar to the ramekin, then spin the ramekin around to coat the bottom and the walls, pouring the excess into a mixing bowl. (The sugar coating provides a rough surface for the soufflé to adhere to as it bakes, allowing for a taller rise.) Repeat with other ramekins. Chill until ready to use.
  • Preheat the oven to 375 F. Prepare a double boiler: Add enough water to a 1-quart saucepan to fill halfway, and bring to a simmer. Fit a heatproof glass bowl snugly on top of the saucepan, making sure the bottom of the bowl isn't touching the surface of the water. Add chocolate to the bowl and allow it to melt, stirring occasionally. Meanwhile, in a small bowl whisk together the milk and cornstarch. Pour mixture into a small saucepan over low heat and whisk; once the mixture is simmering, continue to whisk until thickened, about 1 minute. When the chocolate has melted, remove the bowl from the saucepan. Slowly add the milk-cornstarch mixture into the melted chocolate, whisking constantly, until it's thoroughly combined. Add egg yolks and whisk until thoroughly combined and shiny. Set aside.
  • In a stand mixer fitted with the whisk attachment, add egg whites and a pinch of salt. Starting on low then coming up to medium speed, whip until soft peaks form; then continue whipping as you slowly add the sugar in a steady stream. Once medium peaks form, 1-2 minutes later, turn the motor off and remove whisk. Finish whisking by hand to form medium-stiff peaks. (This prevents the machine from over-whipping, which can cause the soufflé to fall.)
  • Use a rubber spatula to stir ⅓ of the whipped whites into the chocolate mixture. Then very gently fold in the rest of the egg whites, being careful not to overmix; the goal is to make sure the egg whites retain their airiness. When the chocolate and egg whites are just mixed, fill each ramekin to the rim. Run the tip of your thumb around the inner rim of the ramekin to wipe off the butter and sugar from the top ¼ inch. This prevents the soufflé from sticking to the rim as it bakes, allowing it to rise straight up.Place ramekins on a rimmed baking sheet lined with parchment paper, then into the oven. Bake until the soufflés have risen about ½-1 inch above the rim, 7-9 minutes.
  • When soufflés have fully risen, remove from oven. Dust with powdered sugar, if using. Shape quenelles of unsweetened whipped cream (optional): Pass about a tablespoon of whipped cream back and forth between two spoons, smoothing and shaping it until you have formed an egg-shaped dollop, or "quenelle." Make a small opening in the top of the soufflé and nestle the quenelle into the hole. Serve immediately. (Note: Soufflés will fall quickly as they cool, so work quickly once they are out of the oven!)

LAVENDER-SCENTED FRENCH CHOCOLATE SOUFFLE

Lavender-Scented French Chocolate Souffle image

None other than a crème de la crème of French classic desserts, a Chocolate Souffle with the addition with a hint of lavender! If you've tried making a souffle numerous times and it simply didn't turn out right, I am feeling your pain. After numerous attempts to get the perfect souffle, I am now pleased to say that I've found the ingredients and the method that works for me every time!

Categories     Dessert

Time 30m

Number Of Ingredients 9

300 ml milk
20 g cornflour
300 g dark chocolate (at least 65% cocoa solids) (finely chopped)
2 egg yolks
8 drops of lavender essence
3 egg whites
85 g caster sugar
10 g butter (melted, for brushing the ramekins)
1 tbsp caster sugar for ramekins ( for ramekins)

Steps:

  • Deliberately brush ramekins with melted butter and place them in the fridge for the butter to solidify on the walls of the ramekins.
  • Heat the milk with cornflour on low-medium heat stirring continuously until it starts to simmer. Make sure no lumps of cornflour form.
  • Pour the simmering milk over the finely chopped dark chocolate and stir until the chocolate melts and the mixture is smooth and glossy. Beat in the egg yolks and lavender and set the mixture aside.
  • Using an electric whisk or a stand mixer with a whisk attachment, whisk egg whites until foamy. Start adding caster sugar 1 tsp at a time and keep on whisking until you have a firm glossy meringue.
  • Gradually adding the chocolate mixture into the egg whites, carefully fold the two until combined.
  • Take the ramekins out of the fridge and brush again with some melted butter. Tip a tsp of sugar into the ramekin and swish it around so it sticks to the butter at the bottom and on the sides. Tip out any excess.
  • Pour the souffle batter into the ramekins to the top. Using a dough scraper or a wide-bladed knife, skim the top to create a flat surface. Then clean the rim of the ramekin. Place the souffles on a baking tray and into the oven for 14-15 minutes.
  • Serve immediately with some pouring cream or creme Anglaise!

CHOCOLATE SOUFFLES

Time 42m

Yield 6 servings

Number Of Ingredients 6

2 tablespoons butter, plus more for coating ramekins
1/4 cup granulated sugar, plus more for coating ramekins
8 ounces good quality dark chocolate, chopped
7 eggs, separated
Pinch salt
Melted vanilla bean ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter 6 ramekins or 1 large souffle dish and coat with granulated sugar, tapping the side of the ramekins while upside down to remove any excess sugar. Heat the chocolate and butter in a glass bowl over simmering water in a double boiler, until blended, stirring occasionally. When blended, remove the bowl from the double boiler.
  • Using a hand mixer, beat the egg whites with a pinch of salt in a mixing bowl until soft peaks form. Add the 1/3 cup granulated sugar gradually, beating constantly until stiff peaks form. In a small bowl, whisk the egg yolks until slightly paler in color. Add the whisked egg yolks to the melted chocolate mixture, then fold in the egg whites.
  • Spoon or pipe the chocolate mixture into the prepared ramekins and arrange them on a baking sheet. Carefully put them in the middle of the oven and bake until the souffles are risen and cooked, about 18 to 25 minutes Remove the souffles from the oven and serve immediately with melted vanilla bean ice cream, in a pitcher, to be poured over the souffles. Enjoy!
  • Other serving suggestions: lightly sweetened whipped cream or a dusting of powdered sugar or cocoa powder.
  • Cook's Note: To help the souffles rise evenly, run the tip of your thumb around the inside edge of the ramekins before baking.

CHOCOLATE SOUFFLE WITH ESPRESSO CREME ANGLAISE

Chocolate Souffle with Espresso Creme Anglaise image

Provided by Tyler Florence

Categories     dessert

Time 1h40m

Yield 6 servings

Number Of Ingredients 17

2 tablespoons unsalted butter for greasing
1/4 cup sugar, plus more for dusting
1 1/2 cups whole milk
1 vanilla bean, split and scraped
6 large eggs, separated
1/4 cup all-purpose flour
8 ounces semisweet chocolate, chopped
2 tablespoons hazelnut flavored liqueur (recommended: Frangelico)
Pinch salt
1 recipe Espresso Creme Anglaise, recipe follows
Confectioners' sugar, for dusting
1 cup heavy cream
1 vanilla bean, split and scraped
4 large egg yolks
1/2 cup sugar
1 cup brewed espresso coffee
2 tablespoons instant espresso powder

Steps:

  • Preheat the oven to 375 degrees F and remove the top oven rack. Prepare 6 (8-ounce) coffee cups or ramekins with straight sides (or a 2-quart souffle dish) by greasing with butter and coating with granulated sugar, pour out any excess. The butter and sugar will keep the souffles from sticking to the sides, which will allow them to rise evenly. The sugar will also give the souffle a crunchy crust, which is a great contrast to the soft interior.
  • To make the pastry cream base for the souffle: Combine the milk and vanilla bean and seeds in a heavy large pot and place over medium-low heat. Bring the mixture to a brief simmer, until bubbles form around the edge of the pot; do not boil. Remove from heat and discard the vanilla bean. The vanilla bean can be rinsed and dried and kept for another use.
  • In a large bowl, whisk together the egg yolks, flour, and 1/4 cup of sugar until slightly thickened and lemon-colored. Temper the yolks by gradually whisking in about half of the hot milk mixture (do not add too quickly or the eggs will cook.) Return the pastry cream back to the saucepan and cook over medium-low heat, stirring constantly, until it is nice and thick, enough to coat the back of a spoon, about 8 to 10 minutes.
  • Slowly melt the chocolate with the Frangelico in a double boiler over hot water or in a microwave set on high for 2 minutes, stirring halfway through the heating time to smooth it out. Stir the melted chocolate mixture into the pastry cream; cool to room temperature.
  • In a separate clean bowl, beat the egg whites and salt just until they hold soft peaks. Using a rubber spatula, fold 1/3 of the beaten whites into the chocolate pastry cream to lighten it, then gently fold in the rest. Spoon the batter into the prepared coffee cups, 2/3 of the way full, and shake them gently to smooth out the top. Place the coffee cups on a cookie sheet and bake on the middle rack for about 20 minutes. The souffle is done when it has puffed over the rim, the outside is golden and the center is still a bit loose and creamy; take care not to over bake. To serve, have each guest crack open the top of the souffle with a spoon and pour in the Espresso Crème Anglaise. Dust the top with confectioners' sugar.
  • Pour the heavy cream and vanilla bean and seeds into a saucepan and place over medium-low heat. Bring the mixture to a brief simmer, until bubbles form around the edge of the pot; do not boil. Remove from heat. Discard the vanilla bean. The vanilla bean can be rinsed and dried and kept for another use.
  • In a large bowl, whisk together the egg yolks, sugar, coffee, and espresso powder, until well blended. Temper the yolks by gradually whisking in the hot cream mixture (do not add too quickly or the eggs will cook.) Return the custard back to the saucepan and cook over medium-low heat, stirring constantly, until it is thick enough to coat the back of a spoon, about 8 to 10 minutes. Serve immediately with Chocolate Souffle. (If not serving immediately, press plastic wrap on the surface of the custard to prevent a skin from forming and refrigerate.)

Time 45m

Number Of Ingredients 9

4 Tablespoons (1/4 cup; 60g) unsalted butter, cut into 4 Tablespoon size pieces
4 ounce (113g) semi-sweet chocolate bar, coarsely chopped*
3 large eggs, separated*
1 teaspoon pure vanilla extract
1/8 teaspoon salt
1/8 teaspoon cream of tartar
3 Tablespoons (38g) granulated sugar
1 Tablespoon (15g) unsalted butter, extra soft (the softer it is, the easier it is to spread)
4 teaspoons (16g) granulated sugar

Steps:

  • Melt the 4 Tablespoons of butter and the chopped chocolate together in a double boiler or in a large heatproof bowl in the microwave. Microwave in 20 second increments, stirring after each until completely melted and combined. Slightly cool for 3-5 minutes.
  • Whisk egg yolks, vanilla extract, and salt into chocolate mixture. Set aside.
  • In a completely clean residue-free medium glass or metal mixing bowl, using a handheld mixer or stand mixer fitted with a whisk attachment, beat the egg whites and cream of tartar together on high speed until soft peaks form, about 2 minutes. With the mixer running on high speed, slowly add the sugar in 3 additions about 1 Tablespoon at a time, beating for 5 seconds before adding the next Tablespoon. After all 3 Tablespoons of sugar have been added, beat until stiff glossy peaks form, about 2 more minutes. Do not over-beat.
  • Slowly and gently fold the egg whites into the chocolate mixture. It's best to do this in 3 separate additions, combining each addition completely before folding in more.
  • Refrigerate the batter for 5-10 minutes as you preheat the oven and prepare the ramekins. (No need to cover the batter unless you are refrigerating it for longer than 1 hour. Can be made up to 2 days in advance, see make ahead instructions below.)
  • Adjust the oven rack to the lower third position and preheat to 400°F (204°C).
  • Brush four 6-ounce oven-safe straight sided ramekins with a generous coating of the softened butter. Sprinkle in the granulated sugar, then shake/rotate each to ensure every spot of the ramekin has a sugar coating. Place ramekins on a baking sheet. Discard excess sugar.
  • Spoon batter evenly into ramekins. Using a knife or icing spatula, smooth down the surface. Run a knife, icing spatula, or your thumb around the rim at the top, creating a "channel" between the batter and the rim of your pan. Feel free to wipe the edges clean with a towel, though I don't always do that and don't notice a difference in appearance or rise.
  • Place baking sheet with ramekins on top in the oven. Immediately reduce oven temperature to 375°F (191°C). Bake for 13-14 minutes or until the edges are set and the center just barely jiggles when you give the pan a light tap. Avoid opening/closing the oven too much.
  • Remove from the oven and serve immediately plain or with optional toppings. Soufflés begin to fall within minutes. You'll still have that sponge-like texture underneath a crackly top, though it settles into a denser texture as time passes. Cover and store leftovers in the refrigerator for up to 3 days.

HOT CHOCOLATE SOUFFLéS WITH CHOCOLATE CREAM SAUCE

Hot chocolate soufflés with chocolate cream sauce image

Light as a feather, these chocolatey melt-in-the-mouth soufflés are sure to please

Provided by Good Food team

Categories     Dessert, Dinner, Treat

Time 30m

Number Of Ingredients 11

142ml pot single cream
25g caster sugar
100g dark chocolate (70% cocoa), broken into pieces
25g butter
melted butter , for greasing
50g caster sugar , plus 2 tbsp extra
175g dark chocolate (70% cocoa), broken into pieces
2 tbsp double cream
4 egg yolks
5 egg whites
icing sugar , to serve

Steps:

  • Heat oven to 220C/fan 200C/gas 7 and place a baking tray on the top shelf. For the sauce, heat the cream and sugar until boiling. Remove from the heat, stir in the chocolate and butter until melted, then keep warm.
  • Brush 6 x 150ml ramekins with melted butter, sprinkle with the 2 tbsp caster sugar, then tip out any excess. Melt the chocolate and cream in a bowl over a pan of simmering water, cool, then mix in the egg yolks. Whisk the egg whites until they hold their shape, then add the sugar, 1 tbsp at a time, whisking back to the same consistency. Mix a spoonful into the chocolate, then gently fold in the rest.
  • Working quickly, fill the ramekins, wipe the rims clean and run your thumb around the edges. Turn oven down to 200C/fan 180C/gas 6, place the ramekins onto the baking tray, then bake for 8-10 mins until risen with a slight wobble. Don't open the oven door too early as this may make them collapse.
  • Once the soufflés are ready, dust with icing sugar, scoop a small hole from their tops, then pour in some of the hot chocolate sauce. Replace the lids and serve straight away.

  • Set the oven rack in the lower third of the oven and preheat the oven to 450°F (230°C). Brush soft butter on the bottom and sides of 6 (8 ounce/1 cup) ramekins and dust the insides with about 1 teaspoon each of sugar, rotating to ensure the entire interior is evenly coated, and knocking out any excess.
  • Add the egg whites to the bowl of an electric mixer fitted with the whisk attachment and beat for about 3 to 4 minutes on medium speed (#6 on a Kitchenaid mixer) until frothy but not stiff. Next, add the sugar and continue beating for about 5 to 6 minutes on medium speed, until you achieve glossy stiff peaks.
  • Add chopped chocolate to a double boiler or a metal bowl set over a pot of simmering water. Make sure the bowl does not touch the simmering water below. Heat until the chocolate in the bowl melts, stirring occasionally, and then turn off the heat but leave the bowl over the water to keep it hot/melted.
  • Meanwhile, place the egg yolks in a large mixing bowl and set it beside the stove. Whisk together the milk and potato starch (or cornstarch) in a small saucepan. Heat over medium heat and bring to a bubble, whisking continuously until thickened, about 10 minutes from start to finish. Slowly whisk the hot milk mixture into the egg yolks about a tablespoon at a time to ensure you don't cook the eggs. Whisk until smooth.
