This recipe was modified from that which I tried at a local restaurant. It was too bitter when I tried it there, so slight modifications were necessary. Hope you all enjoy this recipe.

3 cups water
1 ½ cups lemon juice
3 cups water
1 ¼ cups white sugar
2 tablespoons dried lavender flowers
1 ½ teaspoons dried hibiscus petals

Steps:

  • Mix 3 cups water and lemon juice in a large pitcher. Refrigerate until chilled.
  • Bring remaining 3 cups water, sugar, lavender, and hibiscus petals to a boil in a saucepan. Reduce heat to medium-low and simmer for 10 minutes. Remove from heat and allow to cool. Strain lavender and hibiscus from liquid and pour into pitcher with lemon water. Refrigerate until cold.

1 cup sugar
1 heaping tablespoon food-grade dried lavender
1 cup fresh lemon juice (6 to 8 lemons), plus lemon slices, for garnish
1 bottle chilled cava or other sparkling white wine such as prosecco or champagne

Steps:

  • Put the sugar and 1 cup of water in a small pot and bring just to a simmer, stirring occasionally to dissolve the sugar. Remove from the heat, stir in the dried lavender, cover and let steep for at least 20 minutes.
  • Pour the lavender syrup through a fine-mesh strainer. The syrup can be made up to 3 days in advance and kept cold in the refrigerator.
  • In a large pitcher, add the lemon juice, lavender syrup, 2 cups of water and ice and stir to combine. Taste, adding more water to reach the desired sweetness.
  • Pour the lavender lemonade into individual glasses with ice, top with chilled cava and garnish with lemon slices. Enjoy!

24 sprigs fresh lavender
1 tablespoon dried hibiscus
1 tablespoon dried lavender
1 cup fresh lemon juice (6 lemons)
1 1/2 cups seltzer
3/4 cup vodka
Honey Simple Syrup, recipe follows
One 750-ml bottle prosecco
1/2 cup honey

Steps:

  • For the lavender ice cubes: Place a sprig of fresh lavender in 24 large square ice cube molds. Fill the molds with water and freeze until solid, 2 hours.
  • For the punch: Combine 1 1/4 cups water and the hibiscus and dried lavender in a small saucepot. Bring to a simmer, then turn off the heat and let steep for 30 minutes. Strain and discard the lavender. Cool in the refrigerator.
  • To a large pitcher, add the hibiscus-lavender water, lemon juice, seltzer, vodka, all the Honey Simple Syrup and a few lavender ice cubes. Stir to combine and top off with the prosecco.
  • Serve the punch in glasses over lavender ice cubes.
  • Put the honey and 1/2 cup water in a small saucepot over medium-high heat. Bring to a simmer, stirring to dissolve the honey. Remove from the heat and let cool completely.

1 gallon cold water
1/4 cup dried lavender blossoms
2 cups boiling water
mint or lemon balm, sprigs,to garnish

Steps:

  • Combine the frozen lemonade concentrate with cold water, mixing well.
  • Steep lavender in boiling water for 10 minutes; strain lavender blossoms from boiling water and discard.
  • Combine remaining lavender concentrate with prepared lemonade.
  • Chill well; garnish with a mint or lemon balm sprig.

1 cup sugar
1 cup water
zest of one lemon
1 cup lavender syrup
1 cup freshly-squeezed lemon juice, strained of pulp (8 small lemons or 4 large lemons)
2 cups brewed butterfly pea flower tea, cooled
1 -2 cup ice
lavender, sprigs (for garnish)

Steps:

  • For the lavender syrup: Combine dried lavender, sugar and water in a small pot and bring to a boil, stirring until sugar is completely dissolved. Remove from heat and stir in lemon zest. Let lavender steep for 1 hour before straining syrup through a sieve lined with cheesecloth. Allow to cool completely and store in refrigerator until ready to use.
  • For the lemonade: In a large pitcher, combine lavender syrup, lemon juice and cooled butterfly pea flower tea. As you stir, you'll notice the blue tea turns purple when mixed with lemon juice. When ready to serve, add 1-2 cups of ice. Garnish individual glasses with lavender sprigs.

1-1/2 cups fresh squeezed lemon juice (about 6 large lemons)

Steps:

  • Bring 2 cups water and sugar to a boil. Remove from the heat; add lavender. Cover and let stand for 2-4 hours., Strain, discarding lavender. Stir in lemon juice, vanilla and remaining water. Chill; serve over ice.
