1 1/2 lbs ground beef (I have used half ground beef & half ground pork)
1 cup pork rind, crumbs
1 egg
1/3 cup tomato sauce
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons parsley
1/2 cup grated parmesan cheese
1/4 cup chopped onion
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees.
  • Mix meat and other ingredients.
  • Shape into a firm oval loaf in shallow baking pan.
  • Bake for 1 hour.
  • Makes 6 servings.
  • Laurie's Note: Total 11 carbs.
  • This was really good- very moist.
  • When I removed it from the oven the baking pan was full of fat.
  • I didn't pour it off; just let the meatloaf sit and soak it back up.
  • Lana's Note: We like our meatloaf a little drier, so I drained off the fat.
  • I have tried this recipe both ways& both are very good.

2 tablespoons olive oil
2 cups yellow onion (diced)
3 pounds ground beef ((I used 80/20))
1 cup plain bread crumbs
3 large eggs (beaten)
1/2 cup milk
salt & pepper (to taste)
1 tablespoon onion powder
1 1/2 teaspoons garlic powder
1 teaspoon Italian Seasoning
1 cup ketchup
2 tablespoons Worcestershire sauce
3 tablespoons parsley (chopped)
1/3 cup brown sugar
1 1/2 cups ketchup

Steps:

  • Preheat oven to 350 degrees. Line half sheet pan with heavy-duty foil, spray lightly with nonstick cooking spray and set aside.
  • In a large skillet, saute onions in olive oil until tender and browned, about 10 minutes. Pour into a large bowl.
  • To the onions, add in ground beef, bread crumbs, eggs, milk, salt, pepper, seasonings, 1 cup ketchup, Worcestershire sauce and parsley. Mix well until completely combined.
  • Form into a long log on the prepared baking sheet and flatten the top.
  • In a small bowl, whisk brown sugar with remaining 1 1/2 cups ketchup to form glaze.
  • Spread glaze overtop prepared meatloaf and bake covered with foil 45 minutes to 1 hour or until cooked thoroughly and registers at least 160 degrees F. Rest meatloaf covered lightly with foil for 10-15 minutes before cutting. Top with more chopped parsley, if desired, and serve.

  • In a food processor, add the prosciutto, salami, provolone, garlic and parsley and pulse until finely minced, add the mixture to a large bowl with the ground beef, egg, parm, breadcrumbs and a small pinch of salt.
  • Mix everything together really well then form into a meatloaf (on your prepared pan)and nestle the hard boiled eggs along the center (watch the video to see how I do this), set this aside and work on the potatoes.
  • In a large bowl, toss the potatoes with the peas, onion, salt, pepper and olive oil, then scatter them around the meatloaf and pop the whole thing in the oven to roast for 45 minutes, stir the potatoes around half way through. Allow the meatloaf to rest a bit before cutting into it.
