STEAKS WITH CHIMICHURRI
I think steak really is the perfect solution for a quick dinner. First, there's a steak to fit any budget, from pricey filets and rib-eyes (if it's a special dinner) to sirloin and bottom round for a regular weeknight meal. Second, steaks can so easily be changed up with different serving sauces. If you haven't ever tasted the bright-green magic of chimichurri sauce (a South American specialty) spooned over a medium-rare steak...oh, boy. You're in for a treat! I like to pile whole or sliced steaks on a cutting board next to a bowl of chimichurri, then let everyone serve themselves. So fresh and fun.

Yield as many steaks as you like, with enough sauce for 8 to 10 steaks

Steps:
- First, make the chimichurri by placing the herbs and garlic into a food processor (or blender). Add the vinegar, red pepper flakes, salt and black pepper to taste.
- Pulse it a few times then continue pulsing while adding 3/4 cup of the olive oil. Keep pulsing until the mixture is pulverized, leaving just a little texture from the herbs. Transfer to a bowl, then cover and refrigerate until you need it (you can make it up to 1 day ahead, though it's best to make it the same day).
- Season the steak on both sides with salt and pepper. Heat a cast-iron skillet over medium-high heat and add the butter and remaining 2 tablespoons olive oil. When it's melted and starting to brown, add a steak. Fry until medium rare, 3 to 4 minutes per side. Remove the steak and let it rest for 3 minutes. (If you're frying more steaks, just add a little more butter and oil to the pan as needed.)
- Slice the steak. Serve it with the chimichurri on the side.
ARGENTINIAN-STYLE BEEF WITH CHIMICHURRI SAUCE

Steps:
- Stir together all ingredients for beef with 1 1/2 teaspoons each of salt and pepper. Marinate, covered and chilled, 4 hours.
- Meanwhile, stir together all chimichurri ingredients with 3/4 teaspoon salt and 1/2 teaspoon pepper and let stand at least 2 hours.
- Prepare a grill for direct-heat cooking over medium-hot charcoal (medium-high heat for gas); see grilling procedure. Remove beef from marinade and rub off excess (discard marinade).
- Skewer beef, leaving about 1/2 inch between pieces. Oil grill rack, then grill (covered if using a gas grill), turning occasionally, 4 to 5 minutes for medium-rare. Serve beef with chimichurri sauce.
LATIN BEEF BRISKET WITH CHIMICHURRI
This comes from "Adventures in Jewish Cooking" and I haven't made it yet. This recipe is a lot more detailed than the other easy ones I have posted. I love the spices used. Note, this has a 24-48 hour marination and I didn't include it in the recipe time.

Steps:
- To make chimichurri: in a food processor, with the machine running, drop garlic, jalapenos and bay leaves through the feed tube to chop them.
- Add parsley, cilantro and oregano. Pulse to chop.
- Then, with the machine running, add the vinegar and oil, scraping down the sides of the bowl as needed, and blend until smooth.
- Season, to taste, with salt.
- Pour 1 cup of the chimichurri into a covered container and refrigerate.
- Mix the remaining chimichurri with the water in a large non-reactive (stainless steel, ceramic or glass) baking dish.
- Marinate the meat in this for 24 to 48 hours, covered with plastic wrap, in the refrigerator.
- When ready to cook, postition rack in center of Preheated 350 degree oven.
- Transfer brisket and marinade to a roasting pan or non-reactive dutch oven.
- Cover and bake until very tender; around 3 1/2 hours.
- Cool slightly before cutting on the diagonal.
- Serve with the heated cup of chimichurri sauce that was reserved.
MEXICAN BEEF BRISKET
Steps:
- Preheat oven to 325 degrees F. Sprinkle the brisket with the coarse salt and pepper. Dredge in flour to coat and shake off any excess. In a large Dutch oven heat oil over high heat. Sear the meat until browned on all sides. Set aside. Reduce heat to moderate and add the carrots and onions. Cook, stirring occasionally, until golden brown, 8 to 10 minutes. Add the garlic and saute 2 minutes longer. Return the meat to the pan along with all remaining ingredients except the salt and garnishes. Bring to a boil, cover the pot and transfer to the oven. Bake for 2 1/2 hours, or until the meat slips off a fork when pierced. Lift out the brisket and place on a cutting board. Cover with a damp towel. Pour the broth with vegetables into a tall container and skim off the layer of fat that rises. Remove and discard the bay leaves and chiles. Pour the broth and vegetables into a blender or a food processor fitted with the metal blade. Puree until smooth, add salt to taste and strain. Reheat the sauce. Slice the brisket against the grain and arrange on a platter. Pour the warm sauce over it, sprinkle with sliced scallions and serve.
STEAK WITH CHIMICHURRI SAUCE

- To make the chimichurri, blitz the parsley, oregano, garlic, shallot and chilli flakes in a food processor or chop very finely by hand. Add 2 tbsp of the olive oil, the lemon juice, vinegar and some seasoning, and pulse to combine everything to a saucy consistency.
- Rub the remaining oil and a little seasoning into the steaks. Heat a griddle or frying pan and cook the steaks for 2-3 mins on each side or until done to your liking. Rest for a few mins, then spoon over the sauce and serve with fries and salad.

- Combine all ingredients in a mixing bowl.
- Place brisket in a shallow roasting pan.
- Pour gravy mixture over brisket.
- Cover tightly with aluminum foil.
- Bake at 300 for 4 hours. Do not unwrap foil while baking!
- Remove from oven after 4 hours and allow to stand in pan while still covered with foil for 10-20 minutes.
- Slice across the grain of the meat and serve.
- This recipe may be halved for a smaller brisket.
