When we used to live in the boondocks of Michigan, my dad was a hunter and oh, did he hunt. Let's just say all that all that meat had to be eaten, and eaten by a very picky little girl. This was nearly the only dish made with his hunted goods that I would eat, so it's pretty good.

3 -4 lbs rabbit
6 potatoes, quartered
8 carrots, sliced
1 medium onion, chopped
1 teaspoon salt
1/4 cup beef consomme
3/4 cup beef broth
3/4 teaspoon pepper
1/4 teaspoon basil
2 bay leaves
1/4 teaspoon rosemary
1/4 teaspoon thyme

Steps:

  • Cut rabbit into pieces. Layer onion, potatoes, and carrots in bottom of a crock pot.
  • Add spices to the pot.
  • Add rabbit, salt, pepper, consommé, and about 3/4 cup beef broth.
  • Cover and cook on low for 8 hours. Thicken gravy as desired.

CROCK POT RABBIT STEW

Variant on a few other rabbit / crock pot recipes I've tried. It makes a hearty one-pot meal for two people. I always like to leave the vegetables nice and chunky. You could try a little less liquid and therefore less flour to thicken, however I found this works well and the additional liquid plays well with the vegetables during cooking.

1 rabbit
1/2 teaspoon ground black pepper
425 g diced tomatoes
1 cup red wine
1 cup water
100 g button mushrooms, sliced
125 g shortcut bacon, sliced
2 medium carrots, chopped
2 medium onions, chopped
2 stalks celery, chopped
1 bay leaf
1 teaspoon oregano
1/4 cup flour

Steps:

  • Grind pepper over the rabbit and place in the crock pot.
  • Combine all other ingredients EXCEPT FLOUR in a large bowl, mix well and pour over the rabbit.
  • Cover and cook on low for 6 hours for a small rabbit, or up to 8 hours for a large rabbit. Actually cook for half an hour less as below.
  • Thirty minutes before ready blend flour with 1/2 cup of water until it is a smooth paste, add to the pot and stir well to thicken and continue cooking covered for a further 30 minutes.
  • Give it a good stir and allow to rest 10-15 minutes before serving.
  • At this point the rabbit should be so tender that you can tear pieces off with a fork to serve rather than cut. Just scoop it all out onto a plate.
  • You'll end up with bones in the dish so eat much like you would a fish dish being careful for bones. Serve along with a nice crusty roll to soak up the juices.

This rustic rabbit stew is prepared in the style of that famous French classic, coq au vin. The braised vegetables become incredibly rich during the cooking process thanks to the bacon, bacon fat, rabbit juices, and wine. In an unusual twist, the rabbit meat actually lightens the rich vegetables, rather than the other way around.Wine Pairings: Aged Alsatian Reisling, Pinot Gris, or Hunter Valley Semillon from AustraliaThis recipe is provided courtesy of Marx Foods.

1/2 cup carrots, cut into 1/4-inch cubes
1/2 cup celery, cut into 1/4-inch cubes
1 cup onion, cut into 1/4-inch cubes
6 bone-in rabbit legs
1 1/2 cup heirloom potatoes (we recommend purple majesty potatoes, désirée potatoes, or all blue potatoes)
3/4 pound thick cut wild boar bacon or kurobuta pork bacon
2 cup white wine (we recommend alsatian wine, reisling or muscat)
3 tablespoon fresh marjoram, chopped off the stem
chicken stock to prevent liquid from simmering down too far (as needed)
salt and pepper, to taste

Steps:

  • Preheat your oven to 350 degrees.
  • Remove any visible silver skin or excess fat from the surface of the rabbit legs.
  • Cut the bacon into ½" slices and add to a dry skillet.
  • Cook the bacon over medium-low heat to render its fat out.
  • Once the bacon is crispy, but not crunchy, remove it from the pan and reserve, leaving the fat in the pan. Turn the heat up to medium and add the rabbit legs.
  • Brown (sear) the rabbit legs on each side.
  • Remove the rabbit. Add the carrot, onion, and celery to the skillet. Brown the vegetables, stirring occasionally.
  • Cut the potatoes into ½" cubes.
  • Deglaze the pan with the white wine and add the marjoram and potatoes.
  • Bring the stew base to a simmer and carefully nestle the rabbit legs in so they are partially covered by the liquid. Add any juices that have gathered on the resting plate and the reserved bacon.
  • Put the lid on the skillet and transfer it to the oven for 45 minutes to an hour (until the rabbit is cooked through).
  • Remove the skillet from the stove, and check the stew for consistency. If it looks a little dry, you can add chicken stock and simmer it briefly on the stove.
  • Taste the stew for seasoning, and add salt and pepper to taste. Serve.

I found this recipe years ago (don't remember where) and it's my favorite beef stew recipe. I use low sodium tomato juice because otherwise it's just too salty.

2 1/2 lbs boneless beef roast
10 ounces peas and pearl onions, frozen
4 carrots, quartered
4 -5 potatoes, chunked
6 ounces mushrooms, trimmed
3 large celery ribs
1 1/2 cups low-sodium tomato juice
1/4 cup quick-cooking tapioca
1 tablespoon sugar
2 teaspoons salt
2 small bay leaves
1 teaspoon dried basil
1/4 teaspoon pepper

Steps:

  • Heat oven to 300°.
  • Mix all ingredients (except peas and pearl onions) into a heavy 3 quart oven proof sauce pot.
  • Cover and bake, stirring 3 times, 3 hours or until meat is tender and sauce thickened.
  • Add peas and onions 1 hour before stew is done.
  • Discard bay leaves before stirring.

1 rabbit, cut into serving size pieces
8 ounces bacon, cut into strips
2 medium onions, thinly sliced
1 garlic clove, finely chopped
3 large carrots, peeled and thinly sliced
16 fluid ounces dry red wine
3 teaspoons vegetable oil
1 teaspoon salt
6 black peppercorns
2 sprigs parsley
2 garlic cloves, crushed
1 bay leaf
1/2 teaspoon dried thyme

Steps:

  • In a large shallow bowl, combine all the marinade ingredients together and stir to mix well.
  • Add rabbit pieces and baste them thoroughly.
  • Cover the dish and leave to marinate over-night or at least 12 hours.
  • Remove the rabbit from the marinade and dry on kitchen paper.
  • Strain the marinade into a jug and reserve. Preheat oven to 350°F.
  • In a flame-proof casserole, fry the bacon strips over moderate heat until they are quite crisp.
  • Set aside. Add the onions, garlic and carrots to the fat in the casserole and cook them 5 - 6 minutes, or until lightly colored red.
  • Add the rabbit pieces and turn frequently to brown them evenly and quickly.
  • Add the reserved marinade to the casserole and bring to the boil.
  • Remove casserole from the heat, add the bacon pieces and place in the oven.
  • Cook for 1 hour or until the thigh of the rabbit is tender when pierced with a fork.

3 slices bacon, cut in thirds
1 1/2 cups sliced onions
2 garlic cloves, minced

Steps:

  • In a large skillet or medium-sized Dutch oven, cook bacon until done; remove bacon with a slotted spoon and reserve for another use (for a salad, etc).
  • In the bacon drippings, cook the onion and garlic until transparent. A.
