FINNISH TURNIP CASSEROLE (LANTTULAATIKKO)

Finnish Turnip Casserole (Lanttulaatikko) image

My grandfather was born in Finland and came to Canada with his family when he was 2. Eventually he married an English-Canadian girl who learned to make this from his stepmother. I have no idea how close it is to the authentic dish but it is a Markanen family tradition for Christmas dinner.

Yield 8

Number Of Ingredients 7

1 (6") turnip peeled and cut in 3/4
1 large egg well-beaten
2 tablespoons white sugar more if needed
2 tablespoons butter
1/3 cup milk approximately
2 tablespoons butter
1/3 cup dry bread crumbs

Steps:

  • 1. Place turnip in a large pot with enough water to cover. 2. Bring to a boil and reduce heat. Cook turnip until it's very soft, 30 to 40 minutes. Drain well and return to pot. 3. Mash well. (My mother uses her electric mixer to beat it but I think it's better if it's not super smooth.) 4. Add the sugar one tablespoon at a time, stirring and tasting after each addition. The turnip should taste a little bit too sweet. 5. Stir in the butter until melted and well mixed then add the beaten egg and mix well. 6. Add milk gradually while stirring. Mixture should be relatively sloppy, so add more if necessary. 7. Spoon turnip into a shallow casserole. 8. Melt butter and stir in bread crumbs. Sprinkle mixture evenly on top of the turnip. 9. Bake in a 350(F) degree oven for about 45 minutes, until crumb topping starts to brown and a knife inserted in the center comes out cleanly.

Time 1h

Yield 1

Number Of Ingredients 8

2 md Turnips or rutabagas, peeled
1 ts Salt
1/2 ts Nutmeg
2 Eggs beaten
3 tb Butter
1/4 c Cream
2 tb Brown sugar (optional)
1/4 c Fine dry bread crumbs

Steps:

  • As requested here is the Finnish Turnip Casserole. You can use Turnips or Rutabagas. When we were children my mother started adding brown sugar to the beaten eggs, if you like, add 2 tablespoons of brown sugar to the beaten eggs before adding to the turnip mixture. It works well to halve or double the recipe, depending on how many people you are serving. -Leslie. Cook the turnips until soft (about 20 minutes) in salted water to cover. Drain and mash. Soak the bread crumbs in the cream and stir in nutmeg, salt and beaten eggs. Combine with the mashed turnips. Add the brown sugar (if using) to the beaten eggs before adding to turnips. Turn into a buttered casserole dish, dot the top with the butter, and bake in a moderate oven (350 F.) for 1 hour or until lightly browned on top. Serves 6-8. A Vegetarian Finnish Mashed Potato Casserole image

Categories     Potato

Time 1h30m

Yield 6-8 serving(s)

Number Of Ingredients 10

3/4 cup butter (at room temperature) or 3/4 cup margarine, plus extra for the dish (at room temperature)
7 cups vegetarian chicken broth, I use McKays Chicken Seasoning mixed with water
3 lbs russet potatoes, peeled and cut into 1 1/2 inch pieces
1 1/2 lbs rutabagas, peeled and cut into 1/2 inch pieces
1 1/2 lbs parsnips, peeled and cut into 1 1/2 inch pieces
8 garlic cloves
1 bay leaf
salt & pepper, to taste
1 teaspoon dried thyme
3 large onions, thinly sliced

Steps:

  • Preheat oven to 375F and butter a 9×13 inch glass baking dish.
  • Combine the broth, potatoes, rutabagas, parsnips, garlic, and bay leaf in a 4 quart soup pot, and bring the broth to a boil. Reduce the heat, cover partially, and simmer until the vegetables are very tender, about 30 minutes. Drain well. Remove the bay leaf.
  • Transfer the vegetables to a large bowl and add 1/2 cup of the butter or margarine. Using an electric mixer, beat the vegetables until mashed but still chunky.
  • Season with salt, pepper, and thyme and transfer the vegetables to the buttered baking dish.
  • Melt the remaining 1/4 cup butter or margarine in a large, heavy nonstick skillet over medium-high heat.
  • Add the sliced onions and sauté until beginning to brown, about 5 minutes.
  • Reduce the heat to medium-low and cook until the onions are tender and golden brown, about 15 minutes. Season the onions with salt and pepper and spread evenly over the mashed vegetables.
  • Bake uncovered, until heated through and the top begins to crisp, about 25 minutes.
