Steps:
- For the dressing: In a small mixing bowl whisk together lemon juice, red wine vinegar, extra virgin oil oil, honey, garlic, cilantro, parsley, oregano, and season with salt and pepper to taste.
- In a large bowl gently toss together cucumbers, tomatoes, red onion, and avocado with dressing.
- Serve shortly after preparing.

SIMPLE MEDITERRANEAN AVOCADO SALAD WITH HALLOUMI
Simple avocado salad, prepared Mediterranean-style with cucumbers, tomatoes, basil, and other Mediterranean favorites! Tossed in a tasty garlic vinaigrette with a generous pinch of Za'atar!

Steps:
- Prepare the vinaigrette. Place vinaigrette ingredients in a mason jar, cover tightly and shake until well-combined. Set aside for now (you'll want to give the vinaigrette another shake before using).
- In a salad bowl, add all the salad ingredients except the halloumi cheese and basil. Pour the vinaigrette and give the salad a gentle toss. Taste and adjust seasoning, add a sprinkle more of za'tar spice. Add the basil, and give one very quick and gentle toss.
- If adding halloumi cheese. Combine cheese cubes and about 1 to 2 tbsp or so extra virgin olive oil in a small bowl. Toss to coat the cheese with the EVOO. Heat an indoor griddle over medium heat. Add cheese cubes and grill for 2-3 minutes, turning over on all sides, until lightly browned and nice char marks appear (it should be crisp on the outside and nice and melty on the inside).
- Add the grilled Halloumi to the salad and serve immediately.

LANGOUSTINE AND ANGEL HAIR
Steps:
- In a large pot of salted water, cook the pasta until just al dente. Drain and return to the pot. Cover to keep warm.
- Meanwhile, in a large saute pan, heat the oil over medium-high heat. Add the pancetta and cook until golden brown, 3 to 4 minutes.
- To the oil in the pan, add the onions and cook, stirring, for 2 minutes. Add the garlic and cook, stirring, for 30 seconds. Add the wine, 3/4 teaspoon salt, red pepper, lemon juice, and langoustines and cook, stirring, until the shellfish are pink and cooked through, about 5 minutes. Add the parsley and stir to combine.
- Add the cooked pasta to the shellfish mixture and toss well to combine. Cook until the pasta is heated through, about 1 minute. Remove from the heat, add the lemon zest, and adjust the seasoning, to taste. Sprinkle with Parmesan. Spoon into individual pasta bowls or onto large plates, and serve immediately.

- Cook noodles according to package directions. Meanwhile, place broccoli in a steamer basket. Place in a large saucepan over 1 in. of water; bring to a boil. Cover and steam for 5-7 minutes or until crisp-tender., In a large bowl, combine the eggs, ricotta cheese and Italian seasoning; gently stir in tomatoes and broccoli. Set aside., Preheat oven to 350°. Drain noodles. Prepare two envelopes of Alfredo sauce mix according to package directions. Spread 1/4 cup sauce in each of two greased 13x9-in. baking dishes. Top each with three noodles, 1 cup ricotta mixture, 1 cup mozzarella cheese and 1/4 cup sauce. Repeat layers. Top with remaining noodles, sauce and mozzarella cheese., Bake lasagna, uncovered, 35-40 minutes or until bubbly and edges are lightly browned. Let stand 15 minutes before cutting. For each lasagna, prepare one envelope of sauce mix according to package directions; serve with lasagna. Freeze option: Cover and freeze lasagna up to 3 months. To use, thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, 50-60 minutes or until bubbly and edges are lightly browned. Let stand 15 minutes before cutting. Prepare an envelope of Alfredo sauce mix according to package directions; serve with lasagna.,
