STEWED YELLOW SUMMER SQUASH

Steps:
- Cut bacon into 1/4-inch thick strips (lardons). Slice squash and set aside.
- Cook bacon lardons in a saucepan over medium heat until crispy, 5 to 7 minutes.
- Add squash, onion, sugar, salt, and pepper to the bacon and bacon grease. Add enough water to cover and cook over medium-low heat for 45 minutes. Much of the water will evaporate; add more if needed.

YELLOW SQUASH FRITTERS
A tasty way to use up left-over stewed yellow squash. My family enjoys these so much that I usually purposely stew too much squash in order to have enough to make these fritters. I normally serve them with a baked or roasted meat, green beans and cole slaw.

- Preheat vegetable oil at one inch depth in a heavy skillet on medium heat.
- Combine cooked squash, beaten egg, flour, pepper and salt.
- Add Parmesan cheese.
- Drop squash mixture by tablespoonsful into the hot oil.
- Cook to a golden brown, turning once.
- Drain on a rack over paper towels.
- Serve immediately--fritters are also good served at room temperature.
STUFFED YELLOW SQUASH WITH STEWED TOMATOES

- SQUASH: Take 2 of the squash and cut lengthwise. Remove flesh using a teaspoon from each half of the squash. The hollowed shell should be approximately 1/8-inch thick. Chop flesh into small pieces. Take the third whole squash and chop into small pieces as well. Combine chopped whole squash and flesh and set aside. Add butter to saucepan on medium heat and add leeks. Cook for approximately three minutes or until tender. Add chopped garlic and chopped squash. Cook until tender, approximately 4 minutes. Add bread crumbs, Parmesan cheese and parsley. Stir mixture and remove from heat. Season with salt and pepper and allow the mixture to cool for about two minutes. Stuff each hollowed squash with vegetable mixture. Place them, stuffed side up in a casserole dish with 1/4 cup of water. Cover and bake in 350 degree oven for approximately 20 minutes or until squash is tender. Remove from oven and serve with stewed tomatoes.
- STEWED TOMATOES: Score bottom of each tomato making an 'X' mark. Place tomatoes in boiling water for 2 minutes. Remove tomatoes and shock them with ice cold water. Peel skin from tomatoes starting from the bottom using scored 'X' mark as a guideline. After removing skin, chop tomatoes and set aside. Add vegetable oil to saucepan on medium heat. Add chopped onions and cook for approximately 3 minutes. Stir occasionally, add garlic, celery, green peppers, chopped tomatoes, and sugar. Stir mixture and simmer for 10 minutes. Add parsley, thyme, and bay leaf and stir again. Simmer for approximately 10 to 15 minutes. Season with salt and pepper to taste.
GRILLED ZUCCHINI (AND OTHER VEGETABLES)
Quick, healthy side dish for those days your main course is on the grill! This works well for peppers, mushrooms, yellow squash, and any other vege you might want to try. The grilled zucchini tastes wonderful cooled and added to a salad!

- Slice zucchini lengthwise into planks.
- Place in bowl.
- Toss with dressing.
- Place on vegetable/fish grate.
- Grill on medium heat, turning several times for 8-10 minutes.

OMELET SUPREME
Fresh yellow squash, mushrooms and carmelized onions make this the most delicious omelet, even for those who don't like yellow squash!

- Cook bacon til crispy, remove from pan and put on papertowel. Save 2 T.bacon grease.
- Slice squash into 1/2" slices, then in quarters (pie pieces). Slice onions, chop garlic, slice mushrooms.
- Heat bacon grease and add above listed veggies. (Not the tomato) Cover with lid, and cook on medium low heat until squash is tender and onions and garlic begin to develop carmel color.
- Remove veggies from heat, and drain off fat.
- In medium bowl, scramble 4 eggs, add salt and pepper.
- Spray omelet pan with Pam, heat pan over medium low heat, evenly pour in 1/2 of egg mixture, coating the entire bottom of pan then cover pan with lid. When the top of omlette is no longer runny or wet looking, add 1/2 of the cheese, 1/2 of the veggie mixture and 2 slices of bacon. Quickly fold over omelet and cover another minute just long enough for cheese to melt. Place omlette on plate. Top with fresh slices of tomato. Repeat these directions to make the second one.
- (Note: The best omelet are neither undercooked or over cooked. The outside of the omelet should be tender, but not brown).
