LAMB AND RED WINE STEW

2 tablespoons olive oil
1 pound lamb stew meat, cut into 1-inch cubes
Kosher salt
3 carrots, peeled and diced
2 ribs celery, diced
2 cloves garlic, smashed and peeled
1 onion, diced
2 tablespoons all-purpose flour
2 tablespoons tomato paste
1 1/2 cups dry red wine
1 1/2 cups low-sodium beef broth
5 sprigs fresh thyme
1 bay leaf
1 cup green Cerignola olives, smashed and pits removed
2 tablespoons chopped fresh Italian parsley
Mashed potatoes or crusty bread, for serving

Steps:

  • Place a medium Dutch oven over medium-high heat. Add the oil and heat another 30 seconds. Dry the lamb meat well and sprinkle with 1 1/2 teaspoons salt. Place the meat in the pot and leave undisturbed for about 4 minutes. When the first side is deeply browned, use tongs to flip the meat. Continue to brown the meat for about 4 minutes on each side until the pieces are evenly browned on all sides, about 20 minutes total. Use a slotted spoon to remove the meat to a plate. Add the carrots, celery, garlic and onions. Season with 1/2 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 5 minutes. Stir in the flour and tomato paste and cook for 1 minute more. Deglaze with the red wine. Bring to a simmer and cook, stirring often to reduce slightly, about 5 minutes. Stir in the broth, thyme, bay leaf and reserved meat. Reduce the heat to medium-low to maintain a gentle simmer. Cover and simmer for 1 hour.
  • Stir in the olives. Partially cover the pot, leaving a small opening, and simmer until the meat is completely tender, about 30 minutes more. Stir in the parsley. Serve with mashed potatoes or crusty bread to sop up the juices.

Saddle of Lamb Stuffed with Spinach, Kidneys and Red Wine Jus image

4 lamb's kidneys
3 1/2 tablespoon unsalted butter
1 cup shiitake mushrooms
2 shallots, finely chopped
3 1/2 ounces Port
3 cups fresh spinach, cooked and wrung out
1 egg beaten
1 (5 pound) lamb saddle, boned
2 tablespoons Dijon mustard
3 1/2 ounces olive oil
Fresh chervil, to garnish
Red wine jus (recipe follows)
7 ounces Port
1 bottle red wine
1 clove garlic, cut in half
1 bunch fresh thyme
1 bunch parsley stems
4 tomatoes, chopped
3 black peppercorns

Steps:

  • Dice the kidneys, having removed the white core and sweat in the butter with the shiitake mushrooms. Add the shallots and allow to brown, then add the port. Boil fiercely for 1 minute and then add the kidney mixture. When the port has almost evaporated, tip into a bowl and toss with the spinach. Add the egg and combine. Season the saddle of lamb and spread the inside of the meat with the Dijon mustard, salt and pepper. Spread the stuffing around, reform the saddle and tie. Roast in a prheated 425 degree oven for 40 to 45 minutes. Remove from oven and allow to rest for 15 minutes before slicing. Carve and serve with the red wine sauce.;
  • Place all ingredients in a sauce pot and reduce until the sauce coats the back of a spoon. Strain the sauce and serve over the lamb.;

200g lamb's kidneys , halved
1 tbsp rapeseed oil
2 medium onions , chopped
2 bay leaves
4 thyme sprigs
600g lean stewing steak , cut into chunks
100ml red wine
2 tsp tomato purée
1 tsp English mustard powder
2 tbsp plain flour
1 large carrot , chopped
4 flat mushrooms , quartered or halved if small
3 tbsp chopped parsley
140g plain flour , plus extra for dusting
1 tsp thyme leaves (optional)
25g very cold (or frozen) butter
4 tbsp 2% fat Greek yogurt
2 tbsp extra-virgin olive oil

Steps:

  • Cut out and discard the thin tubes from the kidneys. Rinse the kidneys in cold water until the water runs clear, then chop them into small pieces. Heat the oil in a large saucepan or deep sauté pan. Add the onions, bay and thyme sprigs and fry over a medium heat for 8-10 mins until the onions are really golden, stirring often. Put the kettle on.
  • Add the steak and kidney to the pan and stir-fry briefly, just until it loses its pink colour. Turn up the heat, pour in the wine, stir to deglaze the bottom of the pan, then let it boil over a high heat for 2-3 mins until reduced and absorbed into the meat. Stir in the tomato purée and mustard powder. Sift in the flour, stirring, then stir for a couple of mins. Pour in 400ml boiling water and continue stirring until the mixture starts to boil and is thickened. Tip in the carrot and both mushrooms, reduce the heat, cover with a lid, then leave to simmer gently for about 1 hr, stirring occasionally. Remove the lid and simmer another 25-30 mins or until the meat is very tender and the gravy has thickened slightly.
  • Remove from the heat and remove the bay leaves and thyme sprigs. Stir in the parsley, season to taste, then transfer to a pie or ovenproof dish (22-23cm in diameter, 6cm deep, 1.7-litre capacity or similar), then leave to cool slightly. Heat oven to 200C/180C fan/gas 6.
  • While the meat is cooling, make the pastry. Put the flour, and thyme if using, into a bowl. Grate in the cold or frozen butter, make a well in the centre, then add the yogurt, olive oil, a pinch of salt and a good grinding of black pepper. Using a round-bladed knife, mix together with 2 tsp cold water, then gently gather together with your hands to form a dough. Remove from the bowl and knead briefly until smooth.
  • Roll out the pastry on a lightly floured surface so it's slightly bigger than the top of the pie dish. Lay the pastry over the meat and trim the edges with scissors so it slightly overhangs the edge of the dish. Make 2 small slits in the centre. Flute the edges, then roll out the trimmings and cut out 6 diamond-shaped leaves. Dampen one side and lay them on the pastry lid. Place the dish on a baking sheet, then bake in the oven for about 25 mins or until the pastry is golden.

1 lb lambs kidney
1/4 cup wine vinegar
2 tablespoons butter
2 tablespoons olive oil
1/2 medium onion, finely diced
1 cup mushroom, cleaned and sliced
1/4 cup red wine
salt and pepper

Steps:

  • Rinse and pat dry.
  • With a sharp knife, remove the outside membrane, cut in half, and remove any white fat and tubes from center.
  • Place in the bottom of a medium bowl, cover with cold water and ¼ cup of wine vinegar. Let soak for half and hour.
  • Remove from solution, rinse and pat dry. Set aside.
  • In a skillet, melt the butter and oil and lightly brown the kidneys. Remove and set aside.
  • Next, add the onion and mushrooms to the pan and cook, stirring frequently, until onion becomes near translucent.
  • Add the wine and cook for another minute or so.
  • Return kidneys to pan, heat through and serve immediately with mixed vegetables.
