2 tablespoons olive oil
2 pounds lamb stew meat (3/4-inch pieces)
1 large onion, chopped
1 garlic clove, minced
1/3 cup tomato paste
1/2 cup dry red wine
1-1/4 teaspoons salt, divided
1 teaspoon dried oregano
1/2 teaspoon dried basil
1 medium cucumber
1 cup plain yogurt
16 pita pocket halves, warmed
4 plum tomatoes, sliced

Steps:

  • In a large skillet, heat oil over medium-high heat; brown lamb in batches. Transfer lamb to a 3- or 4-qt. slow cooker, reserving drippings in skillet., In drippings, saute onion over medium heat until tender, 4-6 minutes. Add garlic and tomato paste; cook and stir 2 minutes. Stir in wine, 1 teaspoon salt, oregano and basil. Add to lamb. Cook, covered, on low until lamb is tender, 6-8 hours., To serve, dice enough cucumber to measure 1 cup; thinly slice remaining cucumber. Combine diced cucumber with yogurt and remaining salt. Fill pita halves with lamb mixture, tomatoes, sliced cucumbers and yogurt mixture. Freeze option: Freeze cooled lamb mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little broth or water if necessary.

SAUCE
1/3 c plain greek yogurt
1 Tbsp fresh mint, chopped
1 tsp grated lemon rind
1/8 tsp ground black pepper
salt, to taste
PITAS
6 oz ground lamb
1/4 c chopped red onion
1/2 tsp minced fresh oregano
1/8 tsp ground cumin
1/8 tsp salt
pinch crushed red pepper, to taste
1 clove garlic, minced
1/8 c minced fresh parsley
2 6-inch pita breads, cut in half
1/2 c thinly sliced cucumber (peeled and seeded)
8 cherry tomatoes, halved

Steps:

  • 1. To prepare sauce, combine sauce ingredients in a small bowl. Cover and chill until ready to use.
  • 2. To prepare pitas, heat a nonstick skillet over medium-high heat. Add lamb and cook 5 minutes, or until browned, stirring to crumble. Drain well, remove to plate and set aside.
  • 3. Lightly coat same pan with nonstick cooking spray and add onion. Saute 3 minutes or until softened.
  • 4. Stir in cooked lamb, oregano, cumin, salt, crushed red pepper and garlic. Reduce heat to low and cook 2 minutes, stirring occasionally. Remove from heat and stir in parsley.
  • 5. Open pita halves and divide meat mixture evenly among the 4 halves. Add cucumber slices and tomato halves evenly. Top each with some of the sauce and serve.

Add tomato paste; simmer, uncovered, until mixture is slightly thickened, 8-10 minutes, stirring occasionally. 2 cups plain nonfat yogurt
1/2 medium onion, chopped
1/2 cucumber, peeled, seeded, diced
1 tablespoon minced garlic
2 teaspoons fresh lemon juice
1 pound ground lamb
2/3 cup fresh white breadcrumbs
1/2 medium onion, chopped
2 tablespoons chopped fresh parsley
4 teaspoons minced garlic
1 1/4 teaspoons dried oregano
4 pita bread rounds, top 1/4 trimmed from each (tops reserved)
4 lettuce leaves

Steps:

  • Mix first 5 ingredients together in medium bowl. Season yogurt sauce to taste with salt and pepper.
  • Mix lamb and next 5 ingredients in large bowl until well blended. Season generously with salt and pepper. Shape mixture into four 3/4-inch-thick patties.
  • Preheat broiler. Place lamb patties on broiler rack and broil until cooked through, about 4 minutes per side.
  • Open pita bread rounds; line bottoms with trimmed tops, if desired. Place lettuce, burger, then large spoonful of yogurt sauce in each round. Serve, passing sauce separately.

Top each with the chicken and vegetables, the chopped romaine and then drizzle with the spicy yogurt.
  • For the spicy yogurt sauce: In a small bowl, stir the yogurt together with the hot sauce and mint. Season with salt and pepper and set aside. For the pita: In a small pot over low heat, combine the reserved chicken and vegetables and cook until warmed through. Place the pitas on 2 plates. Top each with the chicken and vegetables, the chopped romaine and then drizzle with the spicy yogurt.
  • In a large zip-top bag, mix together the flour, paprika, garlic powder and some salt and pepper. Add the chicken and toss to coat completely.
  • In a large saucepan over medium heat, heat the canola oil. Add the chicken and brown on all sides, 3 to 4 minutes per side. While the chicken is cooking, to a slow cooker add the tomatoes, peppers and onions. Top with the chicken thighs.
  • In same skillet used to brown the chicken, add the tomato paste and cook for 1 minute, stirring constantly. Add the chicken broth and bring to a simmer, stirring to scrape any browned bits off the bottom of the pan. Pour over top of the chicken in the slow cooker. Cook on low for 4 hours, or until the chicken is extremely tender.
  • In a medium pot, combine 2 cups water, the rice, red pepper flakes, lemon zest, juice of half the lemon and a pinch of salt. Bring to a boil, reduce to a simmer and cook, covered, until the rice is tender and has absorbed all the liquid.
  • To serve, spoon the rice onto a deep-sided platter and ladle the Spanish chicken and vegetables over top. Garnish with the olives and squeeze over the remaining lemon juice.

8 ounces boneless leg of lamb
1 tablespoon balsamic vinegar
1 teaspoon olive oil
1 large clove garlic
1 cup plain, nonfat yogurt
1 tablespoon lemon juice
1 or 2 sprigs fresh mint to yield 1 tablespoon minced
2 small Kirby cucumbers, about 6 ounces
2 small ripe tomatoes or 15 or 20 cherry tomatoes, depending on the size
4 ounces red onion
2 large or 4 small whole-wheat pitas

Steps:

  • Turn on toaster oven or oven. If using broiler, turn on and cover pan with aluminum foil.
  • Trim the lamb of fat, and marinate in a small bowl with a mixture of vinegar and oil until ready to cook.
  • Mince the garlic, and combine with the yogurt and lemon juice.
  • Wash, dry and mince the mint, and add to the yogurt.
  • Wash and trim the ends from the cucumbers, and slice very thinly. Wash, trim and slice the tomatoes; then, slice the onion thinly.
  • Prepare stove-top grill, if using. Broil or grill lamb 5 to 7 minutes, turning once, until it is rare.
  • Wrap pitas in foil and heat for about 3 minutes, until they are hot and soft.
  • Slice lamb.
  • Slice pitas open. If using large ones, cut in half; fill each half with sauce, lamb, cucumbers, tomatoes and onion, then serve. Keep remaining pitas hot. Repeat with remaining halves or whole small pitas.

Spiced Middle Eastern Lamb Patties with Pita and Yogurt image

Whether you spell it kefta or köfte or kufte or some other variation, you can find versions of these lamb or beef meatballs throughout the Middle East. The seasoning mixture here is simple, with spices you should already have on your shelf and you can play around, adding fresh or dried mint, grated onion, or a pinch of cinnamon. And if you like a garlicky yogurt sauce, by all means, add a minced clove.

Yogurt sauce:
1 cup plain full-fat or low-fat yogurt
2 tablespoons fresh lemon juice
2 tablespoons finely chopped herbs, such as mint, dill or cilantro, plus herb sprigs, for serving

Patties and pita:
1 1/2 pounds ground lamb or beef
1 tablespoon minced garlic (about 1 large clove)

Steps:

  • For the sauce:
  • In a small bow, whisk the yogurt with the lemon juice. Stir in the chopped herbs, season with salt and refrigerate until ready to use.
  • For the patties and pita:
  • In a bowl, use your hands to mix together all of the ingredients, except for the pita. Form the mixture into twelve 3-inch oval patties (about 1 inch thick). Arrange the patties on a plate and refrigerate for at least 30 minutes, until firm
  • Preheat a grill for at least 10 minutes and prepare it for grilling over moderately high heat. If you are using a charcoal grill, leave one area where you can grill the pita indirectly.
  • Oil the grill grates and grill the patties until dark brown grill marks form on the bottom, 5 to 6 minutes. Flip the patties and grill for 4 to 6 minutes longer, until just cooked through.
  • Meanwhile, wrap the pita in foil and set the package on the top shelf of a gas grill or in the cooler spot of a charcoal grill and allow them to warm through, 8 to 10 minutes.
  • Wrap 2 or 3 patties in each pita, spoon some of the yogurt sauce alongside and serve with herb sprigs, passing the remaining yogurt sauce at the table.
