Try these lamb steaks with a Moroccan flavour

100g basmati rice
½ stock cube or 1 tsp stock powder
4-6 lamb chops, depending on size, or 2 lamb leg steaks
1 tbsp olive oil
1 onion , chopped
1 garlic clove , chopped
1 tbsp pine nuts
1 tsp each ground cumin and coriander
4 dried apricots , chopped
chopped parsley or coriander
1 lemon , cut into wedges

Steps:

  • Put the rice in a pan with water to generously cover, and add the stock cube or powder. Bring to the boil, then simmer for 10-12 mins, until the rice is tender. Drain well.
  • Heat the grill and season the steaks or chops. Grill for 3-4 mins on each side until cooked to your liking.
  • Meanwhile, heat the oil in a pan, add the onion and fry gently for 5 mins until lightly coloured. Add the garlic and pine nuts, then fry until the nuts are lightly toasted. Stir in the spices, then add the apricots and rice and mix well, heating everything through. Stir through the parsley or coriander and serve with the steaks or chops, adding the lemon wedges for squeezing over.

I prepared this easy, tasty dish for dinner last night. I think it is the best Moroccan lamb chop recipe that I have tried to date. It is from the Williams-Sonoma "Food and Wine Pairing" book. They suggest serving this dish with a spicy Syrah blend or Zinfandel. Owing to the weather, I prepared this on my stove top over medium heat in a grill pan versus on the BBQ and it still turned out well, though I cooked it a few minutes longer than the recipe suggested. Prep time does not include the 2 hours the dish needs to stand at room temperature to marinate.

1/2 cup chopped of fresh mint
chopped of fresh mint, to garnish (optional)
1 tablespoon ground coriander
2 teaspoons minced garlic
1 teaspoon sweet paprika
1 teaspoon ground cumin
1 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
salt, to taste
1 lemon, juice of
2 tablespoons olive oil
8 lamb loin chops or 16 small lamb rib chops

Steps:

  • In a small bowl, stir together the 1/2 cup mint, coriander, garlic, paprika, cumin, black pepper, cayenne pepper, salt, lemon juice, and olive oil.
  • Rub the mixture into the chops, coating evenly, and place in a non-aluminum container. Cover and marinate at cool room temperature for 2 hours or up to overnight in the refrigerator.
  • Prepare a fire in a grill. If the chops are refrigerated, bring to room temperature.
  • Place the chops on an oiled grill rack and grill, turning once, for 4 minutes per side for medium-rare, or until done to your liking.
  • Transfer to a warmed platter or individual plates and sprinkle with mint, if using. Serve immediately.

This was the first recipe I made with lamb. I was a little nervous at first not knowing what to expect. I was very pleasantly surprised. This dish is very good, and I must give props to my cousin for giving me the recipe.

1 lb boneless lamb, cut into 1 inch pieces
1 small apple, shredded
1 (7 ounce) package chicken flavor rice and vermicelli mix
1 1/2 cups chicken broth
1 teaspoon curry powder
1/4 cup raisins
1/4 cup slivered almonds

Steps:

  • In 4 quart slow cooker, combine lamb, apple, seasoning packet from rice mix, broth and curry powder; mix well.
  • Cover; cook on low setting for 7 to 9 hours.
  • About 25 minutes before serving, add rice and raisins; mix well.
  • Cover; cook on high setting for an additional 20 minutes or until rice is tender.
  • Garnish with almonds.

1 teaspoon ground coriander seeds

two 3/4 inch-thick boneless sirloin steaks (about 1 pound total)
Accompaniment:Creamy mint-cilantro chutney

Steps:

  • Prepare grill.
  • In a shallow bowl stir together all ingredients except steaks. Add steaks and rub with spice mixture. Let steaks stand, covered, at room temperature 15 minutes.
  • Grill steaks on an oiled rack set 5 to 6 inches over glowing coals about 3 minutes on each side for medium-rare. (Alternatively, broil steaks under a preheated broiler 3 to 4 inches from heat.)
  • Serve steaks with chutney.
