A fairly standard jerky recipe but using lamb instead of beef and a few ideas I pinched from elsewhere. I thought it came out really well. Time to prepare does not include overnight marination. Makes around 250g of jerky and I put some in some Food Saver bags.

750 g lamb fillets
toothpick
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon celery seed

Steps:

  • Cut meat into thin slices cutting with the grain running length-wise. It's easier to cut if partially frozen, and easier to hang on the rack as below if you leave the lamb in relatively long strips (say 15cm / 6").
  • Combine all marinade ingredients in a bowl, mix well and add lamb.
  • Put on a plate or shallow dish, cover and marinate overnight in refrigerator. Turning once or twice to re-coat is a good idea.
  • Place foil on a lower rack in the oven to catch fat / marinade.
  • Put a toothpick through each end on the lamb and use it to hang the meat from the top rack without the meat touching the rack.
  • Cook for 6-8 hours at 60C (140F) with the oven door ajar until dried to desired taste. The door only has to been open a little to let out steam so just pry open a little with a fork or similar.

Jerked goat and chayote squash served over rice cooked in coconut milk. There is no shortage of flavor in this dish.

3 lbs goat stew meat (cubed)
1 cup onion (chopped)
1 tablespoon garlic (crushed)
2 tablespoons lemon juice
2 tablespoons dried thyme
2 tablespoons curry paste
1 teaspoon white pepper
1 teaspoon salt
3 teaspoons scotch bonnet peppers (minced)
3 tablespoons vegetable oil
1 cup chayote (cubed)
2 cups water
2 cups white rice
1 1/2 cups coconut milk

Steps:

  • Trim meat and cut into bite size cubes.
  • In a bowl, combine meat with lemon juice, stir, then add onions, garlic thyme, curry paste, pepper, salt, and minced scotch bonnet (habenaro).
  • Cover and let stand in the refrigerator over night.
  • Heat oil in skillet and brown the meat.
  • Add water and simmer for one hour.
  • Add cubed squash and more water if needed and simmer till squash is tender.
  • Cook rice in rice cooker using coconut milk instead of water.
  • Serve stew over cooked rice.

  • Toast the pickling spices, then combine with the remaining brine ingredients and bring to a simmer and cook for 5 minutes, stirring occasionally. Cool the brine to room temperature and reserve.
  • Make a cut down one side of each heart so they can be opened up like a book, many hearts will already come packed like this.
  • Put the hearts in the cooled brine, cover the container with plastic, or another weight to keep the hearts under the liquid as much as possible. Date the container, then refrigerate for 4 days, stirring once a day, or as often as you can remember.
  • After four days, remove the hearts from the brine and put into a pot with the 4 cups of water, the remaining heaping tablespoon of toasted pickling spice, the chopped carrot, onion and celery and ginger. Bring the mixture to a gentle simmer in a covered pan and cook for 2 hours or until the hearts are tender.
