1 1/4-1 1/2 lbs ground lamb
1 egg, lightly beaten
1/4 cup finely chopped onion
3 minced garlic cloves
1/2 cup breadcrumbs
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon lemon zest
2 tablespoons chopped fresh parsley
1/4 cup plain low-fat yogurt

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, combine all ingredients and mix very well. (Easiest to mix with clean hands).
  • Form by hand into 1 1 1/2 inch balls and place in a baking pan about 2 inches apart.
  • Bake @ 350 for about 25 minutes or until done.

1 slice, day old bread, cubed and soaked in milk (you can use pita bread, if you like)
1 lb lean ground beef
1/2 lb ground lamb or pork
1 large egg PLUS 1 egg yolk, divided
1/4 cup chopped fresh mint leaves
1 tbsp organic ground coriander
1 tsp dried oregano, preferably Greek oregano
1 tsp organic ground cumin
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Salt and pepper
3 lemons, zested and juiced
Flour for dredging
1 1/4 cup chicken broth
1 Greek salad recipe
1 Tzatziki Sauce Recipe
Pita Bread

Steps:

  • If serving in bowls as suggested in this post, first prepare the Greek salad according to this recipe (dress salad later, if you prefer) and Tzatziki sauce according to this recipe. Set aside or refrigerate for now.
  • In a large skillet like this one, heat 2 tbsp Private Reserve olive oil over medium heat. Add onions and garlic and cook until golden and translucent, stirring regularly. Transfer the onions and garlic mixture to a large mixing bowl to cool. Set skillet aside for later.
  • Wring the excess milk out of the soaked bread. Add the bread to the mixing bowl.
  • To the mixing bowl add the ground beef and lamb (or pork), 1 egg, fresh mint, spices, salt and pepper, and 1 tbsp lemon zest. Mix by hand until until mixture is fully incorporated.
  • Form the meat mixture into balls (each the size of a heaping tablespoon.) Roll meatballs into the flour to lightly coat and place them on a large tray for now.
  • In the large skillet you used earlier, add 1/4 cup Private Reserve olive oil. Heat over medium-high. Turn heat to medium and add the meatballs to cook (do this in batches if you need to.) Cook meatballs for 10 minutes or so, turning occasionally, until fully cooked and well-crusted on all sides.
  • With a slotted spoon, remove meatballs from skillet onto paper towels to drain any excess fat. Meanwhile, carefully discard most of the cooking fat from skillet (best to dump into a tin can until cooled). Return skillet to stove-top over medium heat.
  • Whisk the 1 egg yolk with the chicken broth and lemon juice. Add to cooking skillet with the remaining lemon zest, then add the meatballs back in. Cook over medium heat for another 5 minutes until the lemon sauce thickens.
  • Serve hot in bowls with pita bread, Greek salad and Tzatziki sauce. Or serve in pita pockets as sandwiches, if you prefer.

Lamb Meatballs
1 pound ground lamb
3 tablespoons red onion, finely chopped
1 small garlic clove, minced or crushed in a garlic press
1 egg, slightly beaten
2 tablespoons breadcrumbs
1 teaspoon cumin
1 tablespoon mayonnaise
1 cup fresh mint (loosely packed and finely chopped)
3/4 teaspoon kosher salt
2 tablespoons canola oil
1 fresh lemon for squeezing and garnish, cut into quarters
Optional: 1/8 teaspoon cayenne pepper
Tzatziki Sauce
1 large cucumber
1 tablespoon extra-virgin olive oil
1 tablespoon lemon juice
1 teaspoon lemon zest
1 teaspoon kosher salt
1 tablespoon fresh mint, finely chopped
1/4 cup fresh dill, finely chopped
2 cups Greek yogurt

Steps:

  • In the bowl with the lamb, add red onion, garlic, egg, bread crumbs, cumin, mayonnaise, fresh mint, and salt. Using your hands, mix thoroughly to distribute the ingredients evenly. With a teaspoon, form the mixture into 24 meatballs. Don't level the meat off or pack the meatballs too tightly.
  • Preheat the broiler.
  • Lightly spread canola oil on a baking sheet using a paper towel. Place the meatballs two inches apart on the baking sheet, and position the baking sheet 4 inches from the heat source.
  • Broil for about 5 minutes, turning once halfway through.
  • Arrange the meatballs on a serving platter, and squeeze fresh lemon juice over the top. Sprinkle the cayenne pepper over the meatballs at the last minute. Serve at once with tzatziki.
  • Place cucumber, olive oil, lemon juice, lemon zest, salt, mint, and dill in a bowl and mix well. Add the Greek yogurt and mix well.
  • Cover with plastic wrap or place in an airtight container, and chill in the refrigerator for at least 2 to 3 hours before serving.

MEATBALLS
3 Tbsp olive oil
4 clove garlic minced
1 large onion diced
1 tsp salt
1/2 tsp pepper
1 c matzo meal
2 large eggs
1 c water
1/2 c parsley finely chopped
1 lb each ground lamb and ground beef
SAUCE
1/2 c each olive oil lemon juice and honey
1/2 tsp each salt and turmeric
4 large egg yolks

Steps:

  • 1. For the meatballs. In a skillet add the oil and get it hot. Saute the onions and garlic until onions are translucent but not browned. Remove from heat and let cool a bit.
  • 2. In a bowl mix together matzo meal, eggs, water , parsley and black pepper to form a paste and let sit for about 15 minutes. Mix the paste with the onions and garlic. Add the ground lamb and beef and mix well. Shape into balls.
  • 3. Preheat oven 400 degrees. line baking sheet with parchment paper. Place meatballs on sheet and bake about 40 minutes.
  • 4. To make the sauce use a double boiler or metal bowl over boiling water and whisk the olive oil, lemon juice, honey, salt, turmeric and egg yolks together. Whisk until thickened about 7 minutes. Serve over meatballs

This recipe given to me by my mom over 20 years ago is not the usual cream-lemon sauce, but is a beef based sauce with a slight tangy flavor that compliments the meatballs and goes well with steamed white rice.

1 egg, beaten
1 1/2 lbs ground beef
1 cup fresh breadcrumb
1 1/2 teaspoons salt
1/4 teaspoon pepper
3 cups boiling beef broth (made from boullion cubes is acceptable)
3 tablespoons flour, blended with
1/2 cup water
1 tablespoon lemon juice

Steps:

  • Combine beaten egg, ground beef, bread crumbs, salt and pepper in a large bowl and form into 24 large meatballs.
  • Bring beef broth to a boil, then add meatballs. Lower heat and poach gently for 15 minutes.
  • Whisk to smooth 3 TBLS. flour and 1/2 cup of water.
  • Remove meatballs to a heated dish and skim any fat from broth.
  • Slowly stir flour mixture in to simmering broth and stir with a whisk until sauce thickens.(sauce will be thin).
  • Add lemon juice to sauce and return meatballs to the sauce. Simmer 5 minutes before serving.

  • Goes very well with a nice white rice.

2 celery ribs
2 potatoes
1 leeks or 1 onion, chopped
2 1/2 cups water
3/4 teaspoon salt
1 egg
1 cup breadcrumbs
1 onion, grated

1/3 cup fresh dill, chopped
3/4 teaspoon salt
1/2 teaspoon pepper
1 lb lean ground lamb
1/4 cup all-purpose flour, for rolling meatballs
1 tablespoon vegetable oil, for browning meatballs
2 eggs
3 tablespoons lemon juice
1/2 cup cooking liquid from vegetables or 1/2 cup chicken broth
parsley or dill sprigs, to garnish

Steps:

  • Cut carrots and celery into 1/2-inch thick slices. Peel and cut potatoes into 3/4-inch cubes.
  • Place in wide saucepan along with leek/onion, salt and water; bring to boil. Cover and reduce heat to medium; simmer for 10 minutes.
  • Meanwhile, in bowl, lightly beat egg; mix in bread crumbs, onion, garlic, parsley, dill, salt, pepper and cayenne. Add ground lamb and mix well. Form into 1-inch (2.5 cm) balls. Spread flour on plate; roll each ball in flour.
  • In nonstick skillet, heat oil over medium-high heat; brown meatballs.
  • Add meatballs to vegetables; simmer, covered, for 20 minutes. Remove with slotted spoon when cooked through.
  • Meanwhile - in bowl, whisk eggs with lemon juice; whisk in the cooking liquid. Pour back into saucepan; cook, stirring constantly and being careful not to boil, until thick enough to coat back of spoon, about 3 minutes.
  • To serve plate meatballs and vegetables, pour sauce over meatballs and serve with rice and perhaps a salad. Garnish with parsley or dill.

LAMB AND HONEY MEATBALLS



Lamb and Honey Meatballs image

My adaptation of a recipe from the Summer 2009 Coles magazine, where it's listed as costing $A1.75 per serve. I've added several herbs, an apple and walnuts to the original recipe. Apple in meatballs adds moistness and flavour. If you want to keep the price down, perhaps add some extra onion, some more apple (depending on the price of apples) and then some more breadcrumbs - and either omit or reduce the quantity of walnuts. Another way of stretching this recipe further would be to add a can of drained, processed butter beans in step one, before shaping the mixture into meatballs. I've added herbs I particularly like: please feel free to vary the herbs to meet your taste preferences and to vary the quantities. I've specified mincing the onion, garlic and apple as I process mine in a mini processor. All of these could, of course, also be finely chopped. And if you're not overly fond of lemon, do consider an alternative!

  • Heat a barbecue hotplate to medium and cook the meatballs for 10-12 minutes, turning occasionally or panfry in olive oil, preferably in a non-stick pan for about 10 minutes or until nicely browned and thoroughly cooked.
  • Place the meatballs on a serving platter, pour the lemon juice over the meatballs and drizzle them with the honey; serve over rice or pasta or with your favourite potato salad, salad greens or baby spinach leaves or other salads.

  • Start by prepping your ingredients. If you can, let the meat and egg sit out for about 30 minutes before starting, this will make everything mix together easier. Measure out all of your ingredients and mince your garlic.
  • In a large bowl, add the feta cheese to the ground lamb. Add in the water and lemon juice. Next, add in your almond flour, red pepper flakes, salt, pepper, and minced garlic.
  • In a small bowl, beat your eggs and then add them to the meat mixture. Mix meat mixture together well with your hands, and then roll into balls. These will make 24 large meatballs. You can always make them whatever size you want, but this will affect the cooking time.

They don’t need to be cooked all the way through, but they should be browned for juicy and moist meatballs. You might have to brown the meatballs in batches so there is enough room in your skillet, but we were able to manage doing this in one batch. You can definitely drain all the extra fat and liquid in the skillet, but we personally feel like it adds a lot of flavor, so we leave it in.
