PAN FRIED LAMB CHOPS RECIPE
Quick and easy, you'll have these pan fried lamb chops on the table in no time at all. There may not be a lot of meat on each one, but they sure are delicious. Plan accordingly per person.

Steps:
- Allow lamb chops to come up to room temperature before cooking.
- Add salt and pepper to both sides of the chops.
- Heat a skillet to Medium heat on your stove top.
- Stand the chops up, fat edge down, in the heated skillet.
- Let them cook for about 2 to 3 minutes.
- Lay chops down on the flat side, cook for 3 to 4 minutes.
- Flip chops over, continue to cook until done.
- Chops are done when internal temperature reaches 145F degrees.
- Remove from skillet when done. Place on plate and let rest for 5 minutes before serving.
- Enjoy!

Steps:
- In a small bowl combine the finely chopped garlic with the oil and rosemary.
- Coat the sides of the lamb chops with the garlic mixture. Cover with plastic wrap and let them marinate in the fridge for at least 30 minutes (up to 5 hours).
- Preheat your skillet on high heat. Remove all seasoning from the lamb chops and season them with salt and pepper. Cook them for about 4 minutes on each side, or until your preferred doneness.
- Remove from the skillet and garnish with rosemary. Serve them with your favorite sides.

FETA AND MINT LAMB BURGERS (PAN FRY OR BBQ)
Evelyn I hope that you like this recipe. I created it and I am dedicating it to Evelyn/Athens as a thank-you for your efforts in RSC7. The recipe suggests 6 oz burgers but make them smaller if you wish. You may either pan fry or BBQ the patties. The Feta needs to be pan fried along with the mushrooms. Butter your buns if you wish.

- Mix the mint, oregano,chili salt & pepper into the ground hamburger.
- Form into 4 patties.
- BBQ instructions:.
- Lightly grease your grill,.
- Cook over medium heat for 4 minutes, flip very carefully and finsh cooking the other side apprx 5 minutes.
- During the last 5 minutes cooking brown the feta in a lightly buttered fry pan over medium heat - cook the mushrooms in the same pan.
- Pan Fried Instructions:.
- With the heat on hi gh brown one side of the burgers, carefujlly flip, turn the heat to low medium, add mushrooms to the pan and cover. cook apprx 8 minutes.
- Flip the burgers once more and add the feta cheese to the pan, cover.
- Cook for just a minute or two until the feta starts to melt and is slightly brown.
- Build you burgers by putting the burger on the bun with the feta cheese, add the other condiments & serve.

- Pour red wine into the roasting pan in which the Lamb was cooked.
- Place over medium heat, and scrape up browned bits from bottom of pan.
- Add stock and salt; bring to a simmer. Cook, stirring, until liquid has reduced to 1 1/2 cups, about 10 minutes. Skim fat from surface, as needed.
- Strain sauce into a gravy boat, and serve hot with sliced lamb.

- Heat oven to 180C/160C fan/gas 4. Put the lamb in a casserole dish with a lid. Add remaining ingredients plus enough water to just cover. Cook with the lid on for 3 hrs until the meat is tender and the bones pull out easily. Allow to cool still covered in the cooking liquid with the lid on. You can do this 1-2 days in advance and let the lamb cool completely in the fridge. This will make the next step easier.
- When cold, lift the lamb out of the liquid and transfer to a baking tray. Skim fat from the sauce. Reserve half the sauce for the noodles (in 'Try' section, below) and bubble the rest, still in the pan, until thick and syrupy. Pour into a small serving bowl. Heat grill to medium and grill lamb until crisp and hot through, but not too dark.
- Shred the lamb, discarding most of the fat and all the bones, but keep the nice, crisp skin. You can cut the skin off first and leave it in a hot oven while you shred the rest of the meat. To serve, take everything to the table and eat the lamb rolled up in the lettuce leaves with the cucumber, spring onions and sauce, plus the noodles on the side.

- Get your brown rice into a saucepan of boiling water and cook as per package instructions. Use double the water to the amount of rice. Here, we are using 1 cup (185g) of rice and 2 cups (370ml) of boiling water. Once cooked, drain and fluff up with a fork.
