Lamb Chops with Thyme Honey and White Beans image

Provided by Brad Sorenson

Time 50m

Yield 4 servings

Number Of Ingredients 17

3/4 cup honey
2 sprigs fresh thyme
Kosher salt and freshly ground black pepper, to taste
1 tablespoon garlic powder
1 tablespoon dried fines herb
1 tablespoon finely chopped fresh parsley
1 rack of lamb, with about 8 to 9 bones, Frenched
2 slices bacon, diced small
1 large carrot, diced small
Kosher salt and freshly ground black pepper, to taste
1 yellow onion, diced small
2 stalks celery, diced small
1/4 cup white wine
1/4 cup chicken stock
1 (15.5-ounce) can white beans, drained
1 tablespoon unsalted butter
4 tablespoons chopped fresh parsley

Steps:

  • For the lamb:
  • In a small pot over low heat, combine the honey and thyme and bring to a slow simmer. Cook the honey low and slow.
  • Keep at a low simmer for 30 minutes then strain and season with salt, and pepper. Keep warm.
  • Meanwhile, preheat a grill or grill pan over high heat. Preheat the oven to 400 degrees F.
  • Combine the garlic powder, fines herb, and parsley in a bowl and mix to combine. Season the lamb with salt and pepper. Rub the outside of the lamb with the spices and place over a very hot grill, fat side down. Let the lamb sit for just 1 minute or until the fat chars a bit, turn and cook the other side for 2 minutes. Transfer the lamb to a baking sheet and finish in the oven for about 10 minutes. Remove the lamb from the oven and let rest for 5 minutes before slicing the chops.
  • For the beans:
  • In a medium saute pan, over medium heat, cook the bacon until most of the fat has been cooked out. Add the carrots and a pinch of salt. When the carrots just start to soften, add the onions and stir to mix well. Continue to cook for about 5 minutes, and then add the celery. Pour the wine and stock into the pan. Simmer until most of the liquid is gone. Turn the heat to high and add the beans and toss frequently to heat through. Add the butter and parsley and season with salt, and pepper, to taste.
  • On each plate, make a bed of beans, then 2 lamb chops on top and drizzle the lamb with the warm honey mixture.

MOROCCAN LAMB CHOPS WITH PRESERVED LEMON GREMOLATA

Moroccan Lamb Chops With Preserved Lemon Gremolata image

With the bone attached, these bite-sized lamb chops are a great finger-food/appetizer for a small crowd. Also, they can be made a day ahead, refrigerated, then served at room temperature. The gremolata topping adds some nice color and brightness but should be prepared on same day of your event. If you would like to prepare your own Ras el hanout, there are many blends, including my own, here on Food.com. If you are using a blend commercially prepared, the only one I can recommend is from Williams/Sonoma. I have tried another one that is popular and available in markets and online, but the Williams/Sonama blend is far better, JMHO. If you purchase preserved lemon, they are quite spendy. It is easy to make your own, but they need to be made a month ahead of time so they can ripen.

Provided by French Terrine

Categories     Lamb/Sheep

Time 2h

Yield 25 serving(s)

Number Of Ingredients 8

5 racks of lamb
4 tablespoons ras el hanout spice mix
1 bunch fresh cilantro, minced
2 1/3 tablespoons minced garlic
1/4 cup extra virgin olive oil
1 tablespoon lemon juice
2 preserved lemons
1 bunch fresh parsley leaves

Steps:

  • Rinse lamb and blot dry. Trim as much fat away from rack as possible. Slice between rib bones, all the way through, to yield eight chops per rack. Place in large container.
  • Combine Ras el hanout, 2 TBSPs of garlic, minced cilantro and olive oil. You might need more olive oil in order to obtain a smooth slather. Toss lamb chops in mixture and allow to stand at room temp for an hour or so.
  • Sprinkle coated lamb chops generously with salt and pepper. Grill over hot fire or broil to desired doneness, only a few minutes per side. When internal temp reaches 130 degrees F, they are medium.
  • After removing from cooking source and still hot, sprinkle with lemon juice. (You might get the same result with adding the lemon juice to the marinade mixture before the lamb is cooked).
  • Prepare gremolata topping on same day you are serving the lamb. Remove pulp from preserved lemons and discard, keeping the rind. Then thoroughly rinse in cold water and mince finely. Roughly chop parsley leaves. Combine preserved lemon, parsley leaves, and remaining tsp of minced garlic. Sprinkle over lamb chops before serving.
  • **************************************************.
  • Preserved lemon: I usually start with about 5 lbs of organic lemons, juicing enough of them to yield about a cup. Go for organic ones, otherwise they have a coating of wax on them to preserve shelf life in the supermarket. You will need a glass jar with an air-tight seal. Combine ~ a tablespoon of coriander seed with ~ a tablespoon of fennel seed. Place 1 bay leaf and 1 cinnamon stick in the bottom of glass jar. Have a small bowl of Kosher salt nearby. Slice lemons in quarters ALMOST down to stem end, but leave intact. Place coriander and fennel seed inside lemon and also fill with salt. Place cut side down into glass jar, squeezing as many into the jar as you can. As you squeeze them, some of the lemon juice is released, but not enough to fill the jar. Just continue packing in as many lemons as you can and add additional salt between layers of lemon. Top off with freshly squeezed lemon juice. Then refrigerate for a month before using. I think this is Jamie Oliver's technique, but there are many out there. He has also suggested doing this with other citrus, like limes and mandarin oranges. Meyer lemons work nicely. Some techniques suggest a layer of olive oil on top, and this works well, too. If refrigerated, they last indefinitely.

LAMB CHOPS WITH BEANS, CORN AND ZUCCHINI

Lamb Chops With Beans, Corn and Zucchini image

Lamb chops are always a treat, especially when marinated with lots of chopped rosemary, sage and garlic, then pan-fried slowly in extra-virgin olive oil. A delightful accompaniment is a seasonal vegetable stew of fresh green beans, corn and summer squash. For the best marriage of flavors, cook the vegetables until rather soft. The chops get no sauce; the vegetables are finished with a little gremolata, in this case a mixture of parsley, scallions and lemon zest.

Provided by David Tanis

Categories     dinner, meat, main course

Time 1h

Yield 4 servings

Number Of Ingredients 13

3 pounds lamb chops (you'll want 2 or 3 chops per person)
Kosher salt and black pepper
2 or 3 garlic cloves, peeled and sliced
1/4 cup roughly chopped rosemary
1/4 cup roughly chopped sage
Extra-virgin olive oil
1 large onion, diced (about 1 1/2 cups)
1 pound zucchini and summer squash, diced in large cubes
2 cups corn kernels (from 2 large ears)
1/2 pound green beans, or a mix of green beans and Romano beans, trimmed and cut into 2-inch lengths
3 scallions, finely sliced, both white and green parts
1/2 cup roughly chopped parsley, leaves and tender stems
Zest of 1 lemon

Steps:

  • Generously season lamb chops with salt and pepper, garlic, rosemary and sage. Let marinate for at least 1 hour.
  • In a large skillet over medium heat, gently pan-fry the chops in 1/4-inch olive oil, about 5 minutes per side, until lightly browned. For medium-rare, cook just until rising juices are visible on the surface of chops; for medium, cook for 2 minutes more. Remove chops and let rest on a warm platter.
  • Meanwhile, add 2 tablespoons olive oil to a Dutch oven over medium heat. Add onions and cook, stirring, until translucent, 5 to 8 minutes. Add zucchini and squash, and cook, covered, stirring occasionally until soft, 8 to 10 minutes. Season lightly with salt. (This may be done up to several hours in advance.)
  • To finish, raise heat to high. Add corn and beans and stir. Season with salt and pepper. Add about 1/2 cup water, cover, and cook for 5 minutes, until the mixture is soft and juicy. Taste and adjust seasoning. Sprinkle with the scallions, parsley and lemon zest.

LAMB AND WHITE BEANS WITH ROSEMARY

Lamb and White Beans with Rosemary image

This one-skillet meal is hearty and satisfying on a cold winter night.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Lamb Recipes

Time 45m

Number Of Ingredients 9

2 tablespoons olive oil
4 loin lamb chops, (each about 6 ounces and 1 1/4 inches thick)
Coarse salt and ground pepper
1 medium onion, finely chopped
4 cloves garlic, sliced
1 tablespoon chopped fresh rosemary, (or 1 teaspoon dried), plus more for serving (optional)
1/4 to 1/2 teaspoon red-pepper flakes
2 cans (15 ounces each) cannellini beans, drained and rinsed
1/2 cup sun-dried tomatoes, slivered

Steps:

  • In a large skillet with a lid, heat oil over medium-high. Season lamb generously on both sides with salt and pepper. Place in skillet; cook until browned, 3 to 4 minutes per side (lamb will finish cooking in step 4). Transfer chops to a plate (keep oil in skillet); loosely cover with aluminum foil, and set aside.
  • To skillet, add onion, garlic, rosemary, and red-pepper flakes; season with salt and pepper. Cook, stirring frequently, until onion has softened, 3 to 5 minutes.
  • Add beans, sun-dried tomatoes, and 1/2 cup water. Bring to a boil, then reduce heat to medium-low; cook until mixture is slightly thickened and saucy, 4 to 6 minutes.
  • Place chops on top of beans in skillet (adding any juices that have accumulated on plate). Cover skillet, and simmer until meat is medium-rare, 3 to 4 minutes. Serve chops with beans, and garnish with rosemary, if desired.

ROSEMARY-LEMON BROILED LAMB CHOPS WITH GREMOLATA AND WHITE BEANS, PROSCIUTTO, AND GREENS

Rosemary-Lemon Broiled Lamb Chops with Gremolata and White Beans, Prosciutto, and Greens image

Yield 4 servings

Number Of Ingredients 12

4 small sprigs or 1 long stem fresh rosemary, needles removed then finely chopped (3 tablespoons)
Zest and juice of 2 lemons
5 tablespoons extra-virgin olive oil (EVOO), divided
4 garlic cloves, chopped, divided
8 loin lamb chops
Salt and freshly ground black pepper
1/4 cup fresh flat-leaf parsley (a handful)
1 teaspoon crushed hot red pepper flakes
1 small yellow onion, chopped
1 can (15 ounces) cannellini beans, drained, well rinsed, and shaken dry
1 bunch arugula, washed and trimmed of thick stems
1/4 pound sliced prosciutto, cut into strips

Steps:

  • Preheat the broiler to high.
  • In a shallow dish combine the rosemary, lemon juice, about 3 tablespoons of the EVOO, and one quarter of the chopped garlic. Add the lamb chops and rub the mixture on to both sides of all the chops. Season the chops with salt and pepper and arrange the chops on a broiler pan. Place the chops about 6 to 8 inches from the broiler and cook for 5 minutes on each side. Remove the chops from the broiler and let rest for 5 minutes. While the chops are cooking, prepare the gremolata.
  • Make a pile on your cutting board of the lemon zest, one quarter of the chopped garlic, and parsley leaves. Run your knife through the pile until well combined and finely chopped; reserve.
  • After you prepare the gremolata, move on to the white beans, prosciutto, and greens. Preheat a large skillet with the remaining 2 tablespoons of EVOO (twice around the pan). Add the remaining chopped garlic, the red pepper flakes, and onion. Cook for 2 minutes, then add the cannellini beans, salt, and pepper. Stir to combine and continue to cook for 3 minutes. Turn the heat off and fold in the arugula and prosciutto.
  • To serve, divide the cannellini bean mixture among 4 plates, and top that with 2 chops on each portion. Top each chop with a sprinkle of the gremolata.

BRAISED LAMB WITH SPRING VEG & GREMOLATA

Braised lamb with spring veg & gremolata image

Treat your family to a Sunday roast of succulent lamb shanks and a tasty gremolata made with parsley, lemon zest and garlic cloves

Provided by Jane Hornby

Categories     Main course

Time 4h

Number Of Ingredients 11

4 lamb shanks
1 tbsp chopped rosemary
2 tbsp olive oil
400g carrots , scrubbed and halved lengthways
1 garlic bulb , broken into cloves
greens from 2 bunches salad onions, washed and shredded
150ml dry white wine
600ml chicken or lamb stock
140g frozen peas (or podded broad beans)
25g pack flat-leaf parsley , leaves finely chopped, stems reserved
1 lemon , zested then cut into wedges

Steps:

  • Make several slashes about 1cm deep in each shank, then put them in a large roasting tin. Rub the rosemary, oil and seasoning into the meat. Leave to marinate for 30 mins if you have time. Heat oven to 220C/fan 200C/gas 7.
  • Brown the lamb shanks in the oven for 20 mins, turning halfway. Add the carrots and all but one of the garlic cloves, turn them in some of the fat in the pan, then roast for 5 mins more. Pour in the wine and stock (make sure the carrots aren't too submerged), then cover the tin tightly with foil. Reduce the oven to 160C/140C fan/gas 3 and cook for 2½ hrs or until the shanks are meltingly tender.
  • Chop the parsley, lemon zest and the remaining garlic clove and mix to make the gremolata. Cover and chill until ready to serve.
  • Lift the shanks and carrots from their broth, cover and keep warm. Skim most of the fat from the sauce, then boil the sauce hard for 10 mins in a pan to reduce it by half. Check the seasoning and add the peas and the onion greens for the last few mins.
  • To serve, return the shanks and carrots to the tin, pour over the sauce, scatter with the gremolata and squeeze over some lemon juice, if you like.
