3/4 cup all-purpose flour
1/3 cup sweetened shredded coconut
3 tablespoons brown sugar
3 tablespoons cold reduced-fat butter
FILLING:
1/3 cup all-purpose flour
1/4 cup sugar
Sugar substitute equivalent to 1/4 cup sugar
1/4 teaspoon salt
2-1/2 cups fat-free milk
2 eggs, lightly beaten
1/2 cup sweetened shredded coconut
2 teaspoons coconut extract
1 can (20 ounces) reduced-sugar cherry pie filling

Steps:

  • In a small bowl, combine the flour, coconut and brown sugar; cut in butter until crumbly. Press into a 9-in. square baking pan coated with cooking spray. Bake at 400° for 7-10 minutes or until lightly browned. Cool on a wire rack., In a small saucepan, combine the flour, sugar, sugar substitute and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. , Stir a small amount of hot filling into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. , Gently stir in coconut and extract. Pour over crust. Refrigerate until set. Top with pie filling. Refrigerate for at least 2 hours before cutting.

1 cup all-purpose flour
3 tablespoons confectioners' sugar
1/2 cup cold butter, cubed
FILLING:
2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup quartered maraschino cherries
1/2 cup sweetened shredded coconut

Steps:

  • In a small bowl, combine flour and confectioners' sugar; cut in butter until crumbly. Press into a lightly greased 13x9-in. baking pan. Bake at 350° for 10-12 minutes or until lightly browned. Cool on wire rack. , For filling, in a small bowl, combine the eggs, sugar and vanilla. Combine flour, baking powder and salt; add to the egg mixture and mix well. Stir in walnuts, cherries and coconut. Spread over crust. Bake for 20-25 minutes or until firm. Cool on a wire rack. Cut into bars.

CRUST
3/4 c all purpose flour
1/3 c flaked coconut
3 Tbsp brown sugar
3 Tbsp cold butter
FILLING
1/3 c all purpose flour
1/4 c sugar
1/4 tsp salt
2 1/2 c milk
2 eggs, lightly beaten
1/2 c flaked coconut
2 tsp coconut extract
1 can(s) cherry pie filling

Steps:

  • 1. In a small bowl, combine flour, coconut and brown sugar; cut in butter until crumbly ( I do this in my food processor). Press into a 9 inch square baking pan coated with cooking spray. Bake at 400 for 7 - 10 minutes or until lightly browned. Cool on a wire rack.
  • 2. In a small saucepan, combine flour, sugar and salt. Stir in milk until smooth. Cook and stir over medium - high heat until thick and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from heat.
  • 3. Stir a small amount of hot filling into eggs; return all to pan; stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from heat

1/2 cup margarine
1/2 cup sugar
1 1/2 cups flour
1 3/4 cups coconut
1 (20 ounce) can cherry pie filling

Steps:

  • Blend margarine, sugar, and flour with pastry blender or fork in bowl until coarse crumbs form (like pie crust).
  • Add coconut.
  • Mix.
  • Place half of crumb mixture in 8" square pan.
  • Put filling on top.
  • Sprinkle with remaining crumbs.
  • Bake at 400 for 30 minutes.
  • Serve with whipped topping or ice cream.
  • Great served warm or cold.

1/2 cup butter or margarine, softened
3 tablespoons powdered sugar
2 eggs
1 cup granulated sugar
3/4 cup chopped nuts
1/2 cup flaked coconut
1/2 cup chopped maraschino cherries, drained
1/4 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Grease 8- or 9-inch square pan.
  • In medium bowl, mix 1 cup flour, the butter and powdered sugar with spoon until flour is moistened. Press mixture in pan. Bake 10 minutes.
  • In medium bowl, beat eggs. Stir in remaining ingredients. Spread over baked layer.
  • Bake 25 to 30 minutes or until golden brown. Cool completely, about 30 minutes. For bars, cut into 6 rows by 5 rows.

1 (520 g) package yellow cake mix
1/2 cup butter or 1/2 cup margarine, softened
1 egg
1 tablespoon water
1 cup flaked coconut (can use more if desired)
1 (8 ounce) package cream cheese, softened
2 cups icing sugar
3 eggs, slightly beaten
1 teaspoon vanilla

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch baking pan.
  • In a bowl, mix the cake mix, butter or margarine, 1 egg and 1 tbsp water.
  • Press the mixture into the bottom the prepared pan.
  • Sprinkle the coconut over the cake mixture; set aside.
  • In a bowl, mix the cream cheese, icing sugar, 3 eggs and vanilla.
  • Pour evenly over the coconut (do not mix).
  • Bake for 40-45 minutes.
  • Cool before cutting into slices.
