INDIAN LAMB CURRY

This authentic Indian lamb curry is made with lamb shoulder. It's simmered with fragrant spices, caramelized onions, and Greek yogurt until fork-tender. Served over Indian bread or rice, this is a meal on its own.

2 lb Lamb (leg or shoulder, cut into 2-inch pieces)
1 tbsp Oil (Cooking or Olive oil )
1 tbsp Ghee (or oil)
2 tbsp Garlic (4 large garlic cloves minced)
2 tbsp Ginger (3-inch fresh ginger grated)
3 cups Onions (red or brown finely chopped)
1 cup Tomatoes (chopped)
¾ cup Yogurt (Greek, plain)
1 tbsp Lemon juice
½ tsp Black pepper
1 tsp Kosher salt
2 Cinnamon stick
8 Cloves
8 Green cardamoms
2 Black cardamoms
3 Bay leaves
1 Mace ((optional))
2 tbsp Coriander powder
¾ tbsp Cumin powder
¼ tsp Turmeric powder
1 tbsp Cayenne (hot)
1 tbsp Paprika (sweet)
1 tbsp Fenugreek leaves ((optional))
½ tsp Garam masala powder

Steps:

  • In a Dutch oven or heavy bottom skillet, add the oil, ghee, and whole spices.Pro tip - if possible use a Dutch oven as it retains heat evenly and will cook without losing too much liquid. if not, use a heavy bottom skillet with a tight lid.
  • Then, add onions and saute until caramelized, almost brown - about 10 minutes (see video).Pro tip - depending on the heat it may take 10 to 15 minutes to caramelize the onions. Do not cook on high as it will burn the onions not caramelize.
  • Next, add the ginger and garlic - saute for another minute. Add the lamb pieces, saute for 2 to 3 minutes until the lamb is no longer pink.Pro tip - ginger and garlic can burn easily so keep the heat on medium. Then turn the heat a little higher to sear the lamb on all sides.
  • Then, add the ground spices and chopped tomatoes. Saute for 2 to 3 minutes until fragrant.
  • Next, add the yogurt. Combine it then add 1/2 cup water. Season with salt, pepper, and lemon juice. Bring to a boil on medium-high heat.Pro tip - stir the yogurt separately in a small bowl to ensure there are no lumps before you add it to the lamb otherwise you will have lumps in the curry.
  • Continue to simmer it on the stovetop on medium-low heat stirring frequently until meat is cooked through and becomes fork-tender - about 1 to 1 ½ hour adding water if necessary. Pro tip - Always ensure you have enough water so the meat has enough moisture to cook. If necessary add ¼ to ½ cup more.
  • When cooked to fork-tender, taste and adjust seasoning. Adjust gravy by adding a bit more water depending on how you going to serve it.Pro tip - If you serve it with chapati, naan, or roti - keep it thick. If you serve with rice, add a little water to make a gravy.
  • Garnish with fresh cilantro or parsley.

Recipe video above. An Indian lamb curry to die for! A heady combination of intense spices in a creamy tomato curry sauce, the lamb is fall apart tender and packs a serious flavour punch. While this recipe calls for a lengthy list of spices, you won't need to take a trip to an Indian store to get them - they're even sold at my local grocery store!

3.5 tbsp ghee (, substitute butter (Note 1))
1 cinnamon stick
6 green cardamom pods (, lightly bruised)
4 cloves
1 large onion (, finely chopped)
3 cloves garlic (, finely minced)
1 tbsp ginger (, finely grated)
5 tbsp tomato passata ((US: tomato puree/sauce, Note 5))
1 tsp salt
750g/1.5lb boneless lamb shoulder (, cut into 3cm/1.2" cubes (Note 6))
1.5 cups / 375ml chicken stock (, salt reduced (broth))
2 tbsp paprika (, normal or sweet)
3/4 tsp chilli powder ((or to taste, Note 2))
4 tsp ground coriander
4 tsp ground cumin
2 tsp turmeric powder
1/4 tsp nutmeg
1 tsp garam marsala ((Note 3))
1/2 tsp fennel powder ((Note 4))
1/2 tsp extra garam masala ((Note 3))
1/2 tsp extra fennel powder
1/2 cup / 125g plain yoghurt ((Greek yogurt fine))
Chopped coriander leaves, finely shredded ginger, yogurt
Basmati rice

Steps:

  • Melt ghee over medium heat in large heavy based pot. Add cinnamon, cardamom and cloves and cook for one minute.
  • Add onion and cook for 7 minutes, stirring frequently, until pieces are golden and starting the brown on the edges.
  • Add the garlic and ginger, cook for another minute.
  • Stir in the Spices, cook for 30 seconds.
  • Mix in the tomato puree and salt, then add stock and mix.
  • Add lamb, stir, bring to simmer.
  • Place lid on and adjust heat to low or medium low so it's simmering gently.
  • Cook 1 hour 45 minutes, giving it an occasional stir, until lamb is quite tender - use 2 forks to check, it should pry apart pretty easily.
  • Remove lid, and continue cooking for another 15 minutes (to reduce sauce slightly) - lamb should be very tender by this stage.
  • Stir in the Yogurt, the Extra garam marsala and fennel. Cook for another few minutes.
  • Serve with basmati rice, sprinkled with fresh coriander leaves and other garnishes if desired. More sides (pictured): Cucumber salad (Note 7) and Easy naan - No Yeast Flatbread

James Martin's easy Goan lamb curry is hot, sour and coconutty. Serve with an easy pilau rice.

1 tsp cumin seeds
1 tsp coriander seeds
1 stick cinnamon
1kg/2lb 2oz leg of lamb or mutton, boned and cut into 2.5cm/1in cubes
2 onions, finely sliced
2 garlic cloves, crushed
2.5cm/1in piece fresh root ginger, finely grated
2 long red chillies, sliced
3 tbsp tamarind paste
1 tsp amchoor (mango powder)
500ml/18fl oz beef stock
90g/3½oz desiccated coconut
1 x 400ml/14fl oz can coconut milk
2 tbsp fresh coriander leaves
2 tbsp vegetable oil
1 onion, finely diced
1 garlic clove, crushed
3 green cardamom pods, split
1 tsp ground coriander
1 tsp ground cumin
1 tsp turmeric
3 cloves
1 cinnamon stick
8 curry leaves
400g/14oz basmati rice
½ lemon, juice only
200g/7oz Greek-style yoghurt
200g/7oz mango chutney

Steps:

  • For the curry, heat a heavy-based frying pan until hot, add the cumin and coriander seeds and cinnamon and toast for a few seconds. Place the spices into a pestle and mortar or spice grinder and grind to a powder.
  • Heat a large heavy-based saucepan pan or casserole dish until hot, add the vegetable oil and the mutton and cook until golden-brown all over. Remove using a slotted spoon and set aside.
  • Add the onions and cook for 10 minutes, or until soft and golden-brown.
  • Add the garlic, ginger, chilli, toasted spices and remaining spices and cook for one minute.
  • Return the mutton to the pan then add the beef stock and bring to a simmer. Cover with a lid and cook over a gentle heat for one hour then remove the lid.
  • Add the desiccated coconut and the coconut milk and return to a simmer. Cook for another 30 minutes, or until just thickened and the meat is tender. Season, to taste, with salt and freshly ground black pepper.
  • For the rice, heat a saucepan until hot. Add the oil, onion, garlic and spices, and fry for two minutes.
  • Stir in the rice and add 600ml/1pint 1fl oz water. Bring to the boil, cover and reduce to a gentle simmer. Cook for 18-20 minutes until the rice is tender and all the liquid absorbed. Season with salt, freshly ground black pepper, lemon juice, then stir in the coriander leaves.
  • Spoon the mutton onto plates with a pile of rice alongside.Finish with a spoonful of yoghurt and mango chutney.

This Goan green lamb chop curry is so flavorful and delish, perfect with some turmeric spiced pilaf and a salad!

1.7 lbs / 780 grams rack of lamb/lamb chops, (or mutton chops)
1.5 tbsp ginger paste
1 tbsp garlic paste
1 tsp salt
1 bunch of cilantro leaves along with tender stems, (about 85 grams)
2 green chillies, (adjust as per desired heat)
1 tsp cumin seeds
1 tsp peppercorns
10 cloves
7 green cardamom
3 inch cinnamon stick
4 garlic cloves
2 inch ginger
walnut-sized ball of tamarind, (about 15 grams)
2 cups roughly chopped onion
1 cup sliced onions
1 tbsp oil

Steps:

  • Marinate the lamb chops with ginger and garlic paste along with salt. Rub the ginger garlic all over the chops, set aside for about 2 hours.
  • After the lamb chops have marinated, transfer them to a pressure cooker, add 1 cup of water and 1 cup of sliced onions, pressure cook on medium heat for 2 whistles. Switch off the heat and let the pressure settle down completely before opening the lid.
  • Meanwhile, grind the ingredients listed under "for the green spice paste" using water, as required. It should be a smooth paste. Green chillies not pictured below.
  • Heat oil in a heavy-bottomed pot, add roughly chopped onions, sauté until translucent.
  • Add the ground spice paste, stir-fry for 2-3 minutes, over medium heat.
  • Add the lamb chops, along with the contents of the pressure cooker, mix well. (Add more water, as needed for the desired curry consistency. The curry thickens on cooling). Bring to a boil, reduce the heat and simmer for another 10 minutes or until the lamb is cooked through. Serve this easy lamb chop curry hot with rice or any bread of your choice and some fresh salad.

GRILLED RED CURRY LAMB CHOPS

Red curry paste, available in a can or a jar, is a great ingredient because it's loaded with so many ingredients in itself. I love this pantry powerhouse because it packs a punch!

3 tablespoons red curry paste
1/2 cup coconut milk
Juice and zest of 1 lime, plus lime wedges for serving
12 lamb loin chops
Kosher salt and freshly ground black pepper
Flaky sea salt, for serving
Fresh cilantro leaves, for serving
Extra-virgin olive oil, for drizzling
Arugula, Fennel and Citrus Salad, recipe follows
4 cups loosely packed arugula
3 tablespoons chopped, toasted walnuts
1 orange, peel cut away from the flesh and the segments cut free from their membranes, plus the juice squeezed from the hull
Seeds from 1 pomegranate
1/2 red onion, thinly sliced
1 fennel bulb, thinly sliced, plus 1 tablespoon chopped fronds for garnish
1 tablespoon Dijon mustard
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • In a large bowl, whisk the curry paste, coconut milk, lime juice and zest. Add the lamb chops to the marinade and toss to coat. Cover and refrigerate for 1 hour. Bring to room temperature for 20 minutes, then remove the lamb from the marinade and pat dry with a paper towel. Generously sprinkle on each side with the kosher salt and pepper.
  • Preheat an outdoor grill or grill pan to medium-high.
  • Grill the lamb chops until slightly charred on one side, 3 to 4 minutes. Flip and cook for 2 to 3 minutes more for medium doneness. Remove to a platter. Sprinkle with flaky sea salt. Garnish with the lime wedges and cilantro leaves. Drizzle with olive oil and serve with the Salad.
  • Toss the arugula, walnuts, orange segments, pomegranate seeds, red onion, sliced fennel and half the fennel fronds together in a large bowl.
  • Whisk together the reserved orange juice and Dijon mustard in a small bowl. Stream in the oil and whisk until combined. Season with salt and pepper.
  • Drizzle the salad with the dressing and season with salt. Garnish with the remaining fennel fronds and serve immediately.

thumb-sized piece ginger, ½ cut into matchsticks, the rest left whole
2 onions, quartered
4 garlic cloves
2 tbsp rapeseed oil
1 cinnamon stick
1 tbsp ground coriander
1 tsp ground cumin
1 tsp ground turmeric
½ tsp fennel seeds
750g leg of lamb, diced
400g can chopped tomatoes
1 red chilli or green chilli, deseeded and sliced
small bunch coriander, stalks finely chopped, leaves roughly chopped
basmati rice and mango chutney or raita, to serve

Steps:

  • Put ½ the thumb-sized piece of ginger, 2 quartered onions and 4 garlic cloves in a food processor with 300ml water. Blitz to a smooth purée.
  • Scrape down the sides with a spoon and blitz again to make it as smooth as you can. Tip into a deep sauté pan, cover with a lid and simmer for 15 mins.
  • Remove the lid and cook for 5 mins more, stirring occasionally. By now the liquid should be all gone. If not, cook a little longer.
  • Add 2 tbsp rapeseed oil to the pan with the remaining piece of ginger, cut into matchsticks. Turn up the heat and fry, stirring, for 3-5 mins until it starts to colour.
  • Stir in 1 cinnamon stick, 1 tbsp ground coriander, 1 tsp ground cumin, 1 tsp ground turmeric and ½ tsp fennel seeds, then add 750g leg of lamb. Stir-fry until the lamb changes colour.
  • Tip in 400g can chopped tomatoes with a can of water and 1 deseeded and sliced red or green chilli, season well, cover and leave to simmer for 1 hr.
  • Stir in the finely chopped stalks from a small bunch coriander, re-cover and cook for a final 30 mins until the lamb is tender. Add a splash of water if necessary to loosen the consistency as it cooks.
  • Stir in the roughly chopped coriander leaves and serve with basmati rice and mango chutney or raita.
