Delicious spiced grilled lamb burgers topped with fresh fennel slaw, spicy green sauce, yogurt and feta cheese.

1 tablespoon ground cumin
1 tablespoon ground coriander
1 ½ teaspoons salt
1 teaspoon freshly ground black pepper
¼ teaspoon ground allspice
¼ teaspoon ground nutmeg
1 ½ pounds ground lamb
1 small onion
½ cup crumbled feta cheese
2 tablespoons Greek-style yogurt
1 small fennel bulb (halved and thinly sliced or shaved)
2 teaspoons fresh lemon juice
2 tablespoons extra virgin olive oil
4 burger buns or small pita (split and toasted)
Lettuce leaves and sprouts
Thinly sliced cucumber
Simple green sauce - recipe here (optional but delicious!)

Steps:

  • Stir the cumin, coriander, salt, pepper, allspice and nutmeg together in a small bowl to blend.
  • Put the lamb in a large bowl. Grate the onion on a box grater and add to the lamb. Add the spice mix. Blend well with your hands or a large fork and form into 4 patties.
  • Stir the feta and yogurt together in a bowl.
  • Toss the fennel in a bowl with the lemon juice, olive oil and ½ teaspoon salt.
  • Grill or broil the burgers until cooked to your liking. Serve the burgers on buns or pita, topped with some of the feta-yogurt sauce, fennel slaw, green sauce, lettuce, cucumber and sprouts.

1 bulb fennel (with fronds)
1/4 small red onion, thinly sliced
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
Kosher salt
6 tablespoons mayonnaise
2 hot pickled cherry peppers, stems removed
1 pound ground lamb
Freshly ground pepper
2 cups baby arugula
4 sesame hamburger buns, split and toasted
Potato chips, for serving

Steps:

  • Trim, core and quarter the fennel. Roughly chop 1/4 cup fronds. Thinly slice the fennel (use a mandoline if you have one) and combine with the red onion, fennel fronds, lemon juice and 1 tablespoon olive oil in a medium bowl. Toss and season with salt.
  • Combine the mayonnaise and cherry peppers in a mini food processor and puree until smooth. (Alternatively, finely mince the cherry peppers and stir into the mayonnaise.) Refrigerate until ready to serve.
  • Form the lamb into 4 thin patties, about 4 inches wide and 1/2 inch thick. Season on both sides with salt and pepper. Heat a large skillet over high heat until very hot and add the remaining 1 tablespoon olive oil. Add the burgers and cook until well browned, about 2 minutes per side for medium.
  • Add the arugula to the fennel salad and toss to combine. Serve the burgers on the buns; top with the mayonnaise mixture and fennel salad. Serve with potato chips.

For this lamb burgers recipe, you'll want to splurge on good sturdy bakery buns that can absorb the extra liquid from the slaw and burger without disintegrating.

Lemon-Caper Aioli:
1/4 cup rinsed salt-packed capers
1 cup mayonnaise
2 tablespoons olive oil
1 teaspoon finely grated lemon zest
3 tablespoons (or more) fresh lemon juice
1 teaspoon Dijon mustard
2 garlic cloves, finely grated
Kosher salt
Lamb burgers and assembly:
1 1/2 pounds ground lamb, preferably grass-fed
Kosher salt
4 tablespoons olive oil, divided
3 celery stalks, thinly sliced on the diagonal
1/2 fennel bulb, thinly sliced; plus 1/4 cup chopped fennel fronds (optional)
1/4 large sweet onion, thinly sliced
3 tablespoons fresh lemon juice
2 teaspoons crushed dried mint
Freshly ground black pepper
4 potato or ciabatta rolls, toasted
Boquerones (marinated white anchovies; for serving)

Steps:

  • Lemon-Caper Aioli:
  • Place capers in a small bowl and pour in warm water to cover. Let soak 20 minutes. Drain, rinse, and pat dry. Coarsely chop.
  • Whisk capers, mayonnaise, oil, lemon zest, lemon juice, mustard, and garlic in a medium bowl; taste and season with salt and more lemon juice, if desired.
  • Assembly:
  • Shape lamb into 4 patties about 1" thick, season with salt, and let sit at room temperature 30 minutes.
  • Heat 2 Tbsp. oil in a large skillet, ideally cast iron, over medium. Cook lamb patties, working in batches if needed, until browned (they won't take on as much color as a beef burger), 5-7 minutes. Turn and cook until browned on second side, about 5 minutes for medium-rare. Transfer patties to a plate and let rest 10 minutes.
  • Meanwhile, toss celery, fennel, fennel fronds (if using), onion, lemon juice, dried mint, and remaining 2 Tbsp. oil in a medium bowl. Season slaw with salt and pepper.
  • Generously spread aioli on cut sides of buns and build each burger with a lamb patty, 3 or 4 boquerones, and a mound of slaw. This is a messy burger, so the bib is not optional.
  • Do Ahead
  • Aioli can be made 1 day ahead. Cover and chill.

1 1/2 pounds ground lamb
2 to 3 tablespoons chopped fresh rosemary leaves
1 large navel orange, zested
1/4 red onion, finely chopped, plus 1/4 sliced
Salt and pepper
1 heart romaine lettuce, chopped
1 head radicchio, chopped
1 navel orange, peeled and sectioned or sliced into disks
1/4 cup chopped flat-leaf parsley
2 tablespoons red wine vinegar
1/4 cup plus 2 tablespoons extra-virgin olive oil

Steps:

  • Preheat a grill pan over medium high heat. Toss the quartered fennel in 2 tablespoons extra-virgin olive oil and season with salt and pepper. Put fennel on grill and grill on all sides, approximately 2 minutes. Remove from grill and cool. Once cooled, thinly slice and reserve.
  • Combine lamb, rosemary, orange zest, finely chopped red onion, salt and pepper. Make 12 balls and flatten them into 3 inch meat patties. Grill 2 to 3 minutes on each side.
  • Combine lettuces in a shallow bowl with sliced onion. Add sliced cooled fennel to salad. Scatter the oranges and parsley around the salad. Dress with vinegar, oil, salt and pepper, to your taste. Top portions of salad with 3 mini lamb patties and serve.

2 red bell peppers, diced
1/4 onion, diced
Olive oil
2 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon dry mustard
1/8 teaspoon cayenne pepper
2 cloves garlic
1 pound ground beef (20/10)
1 pound ground lamb
3 tablespoons diced red bell pepper
3 ounces fresh mint leaves, chopped
1 tablespoon minced onion
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon coriander
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper
Pinch cayenne pepper

Steps:

  • For the relish: Cook the peppers and onions in some olive oil in a skillet over medium heat until soft. Add the vinegar, sugar, dry mustard, cayenne pepper and garlic. Lower the heat and cook until all the ingredients are cooked down and thick enough to top the burgers, about 15 minutes.
  • For the burgers: Mix the beef, lamb, bell peppers, mint, onions, allspice, cloves, coriander, cumin, black pepper and cayenne pepper. Form into 4 patties.
  • Cook the burgers to your liking in a skillet or on a grill. Serve with the red pepper relish.

4 plum tomatoes, cored and halved lengthwise
2 tablespoons plus 1 teaspoon extra-virgin olive oil
Kosher salt and freshly ground pepper
2 cloves garlic, smashed
2 15-ounce cans cannellini or butter beans, drained and rinsed
2 tablespoons chopped fresh oregano or parsley
2 tablespoons grated parmesan cheese (optional)
4 5-ounce lamb chops, fat trimmed and bones frenched (ask your butcher to do this)

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Toss the fennel and tomatoes with 2 tablespoons olive oil and season with salt and pepper. Spread the vegetables on the baking sheet, with the tomatoes cut-side up. Roast until the tomatoes are soft and the fennel is golden, about 30 minutes, turning halfway through.
  • Meanwhile, cook the garlic in the remaining 1 teaspoon olive oil in a medium saucepan over medium heat until golden, about 3 minutes. Add the beans and 2 1/2 cups water and cook, stirring occasionally, until the liquid thickens, about 15 minutes. Stir in the oregano and parmesan, if desired.
  • Heat a grill pan over medium-high heat. Season the lamb with salt and pepper and grill until marked on the bottom, about 4 minutes. Flip and cook until just firm to the touch, 4 to 5 more minutes for medium-rare. Divide the beans among plates and top with the lamb and roasted vegetables.

Lamb sausage patties:
1 pound ground lamb
2 tablespoons ground fennel seed
2 tablespoons apple cider vinegar
2 tablespoons coconut aminos
1 teaspoon smoked sea salt
1 tablespoon ghee, divided
Salad:
2 handfuls of greens such as arugula, mizuna, baby kale, or baby spinach
2 tablespoons extra virgin olive oil
1 tablespoon freshly squeezed lemon juice
Dash of sea salt
Sides:
1 ripe avocado, peeled, pitted, and sliced
1 cup store- bought sauerkraut
1/2 cup fresh pomegranate seeds

Steps:

  • To make the patties, in a large bowl, knead together the lamb, fennel seed, apple cider vinegar, coconut aminos, and salt. Using your hands, form the mixture into twelve patties.
  • In a skillet over medium- high heat, heat 1 1/2 teaspoons ghee. Place six patties in the hot skillet and fry for 4 minutes or until brown. Flip and fry for 3 minutes. Set aside. Add the remaining ghee to the skillet and fry the remaining patties.
  • To make the salad, in a medium bowl, toss the greens with the olive oil, lemon, and salt until well coated. To serve, place half the salad on each plate and top with two patties and half the avocado, sauerkraut, and pomegranate seeds. Store the remaining patties for the next day's breakfast.

Kosher salt, freshly ground black pepper
6 garlic cloves, finely grated, plus 2 heads, halved crosswise
2 Tbsp. extra-virgin olive oil
1 tsp. crushed red pepper flakes
1 tsp. finely grated orange zest, plus one (3x1") strip zest
2 Tbsp. finely chopped rosemary, plus more for serving
1 cup dry white wine
6-8 mixed small oranges (such as blood, mandarin, and navel), peeled, halved, sliced or torn into small sections
1 large fennel bulb with fronds, thinly sliced
2 Tbsp. fresh lemon juice

Steps:

  • Preheat oven to 300°F. Using a sharp knife, score fat across the top of lamb shoulder to create a crosshatch pattern, cutting about 1/4" deep and spacing cuts about 3/4" apart. Season generously all over with salt and pepper.
  • Combine grated garlic, oil, red pepper flakes, grated zest, and 2 Tbsp. rosemary in a small bowl. Rub all over lamb, working into score marks and anywhere there is an opening. Place lamb in a large cast-iron skillet or baking dish. (At this point the lamb can be covered and chilled up to 1 day if you want to break up the prep.)
  • Arrange garlic heads, cut side down, around lamb and add strip of zest. Pour in wine and cover tightly with foil. Roast until meat is falling off the bone and fork-tender, 5-5 1/2 hours. Keep covered and let rest 30 minutes.
  • Gently toss orange pieces and fennel with lemon juice in a medium bowl; season lightly with salt.
  • Tear the meat off the bones in large pieces and mound on a platter. Arrange citrus and fennel salad next to meat. Top meat with more rosemary and drizzle pan juices over.
  • Do Ahead
  • Lamb can be roasted 1 day ahead. Let cool; cover and chill. Gently reheat, covered, in a 300°F oven until warmed all the way through, at least 1 hour, before serving.

1 4-inch sprig rosemary, chopped
4 sprigs thyme, chopped
1 tablespoon garlic powder
1 pinch salt

4 thick slices tomato
1 cup baby mixed salad greens

Steps:

  • Preheat grill for medium heat and lightly oil the grate.

  • Cook the burgers until they are beginning to firm and are hot and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Alternately, you can cook the burgers to your desired degree of doneness. Rest burgers while assembling toppings.
  • Mix mayonnaise and mustard together in a small bowl; spread 1 tablespoon of the mixture onto one side of each bun. Put a burger onto each bun and top with tomato and greens. Sandwich with remaining bun half to serve.
